SAFETY
Awoodevaporatorcanbeadangerouspieceofequipment.Alwayswearheatresistantglovesandclothingwhenyoufireanevaporator.Often,visitorscanbeinthesugarhouse.Makesuretheystayatasafedistancefromtheevaporator,especiallychildren.
Awoodevaporatorworkswithsolidmaterial(wood)andproducesintenseheatinfrontofthearchandaroundthesmokestack.Theevaporatorshouldbesetuponaconcreteorceramicfloor strong enough to support the weight of the evaporator and its contents, all walls andraftersshouldbeatleast24”fromallpointsofthesmokestack.Ifyouneedtoputitclosertothewall,aheatbarrier(ceramicblanketforexample)shouldbeinstalled.Also,makesurethatyoursteamandsmokestackshaveaclearpathtotheroofofthebuilding(avoidrafters).Yourceilingshouldbehighenoughforyoutoraisethehoodssafelywithacableandpulleysystem.
IMPORTANT: Make sure to contact your insurance company in order to verify their safetystandards,andrequirementforcoverage.
Ifyourbuildingisnotinsulated,youwillhavebettercombustionandbettersteamevacuation.If it is insulated, you will need to have an air intake inside your building (air trap, openwindowetc.)

INSTALLATION OF THE ARCH
Ifyourbuildingisnotinsulated,youwillhavegoodcombustionandabetterevacuationofthesteam.However,ifit’swellinsulated,makesureyouhaveenoughfreshairintaketohaveagoodcombustionandenoughdraft.
1. Removethewheelsundertheevaporator.
2. Removethepans.Levelthearchusingtheadjustablelegs.
3. Whentheevaporatorisleveled,tightenthenutsonthelegs.
4. The2’wideVenturievaporatorhasafixedVenturisystemonthesmokestack. Itonlyrequiresa110voltplugin.
5. All theVenturievaporators,2-1/2’andwiderhaveaVenturisystemthatcanbe installedremotelytolowerthenoiselevel. Youjusthavetoinstallanadaptorandenoughpipetohookuptheblowertothesmokestack.Trytominimizeairflowrestrictionbyinstallingtheblowerascloseaspossibletotheevaporatorandbyusinglongradiuselbowsifnecessary.
6. TheVenturisystemmustbehookedupinthefirstsectionofsmokestakeontopofthebasestack.

BRICKING
TheVenturievaporatorisdeliveredwiththeceramicwoolalreadyinstalled.Allyouhavetodoistobrickthecombustionchamber.
Follow these steps.CallyourCDLsalesrepresentativeifyouneedfurtherassistance.
1. Startwiththebottombetweenthegratesandthefront,sidesandbackofthearch.Leave3/16”betweenthegratesandthebricksforexpansion.
2. Buildthesidewalls,onerowatthetime.Makesuretoleanthebrickagainstthewooloneachsideofthearch.
Here’swhatthefinalproductshouldlooklike:
3. Letthecementdryfor24hours.
4. It’snowtimetocurethecementandthebricks.Fillthepanswithwaterasifyouweregoingtoboilsap. Startafireandbring the temperature inside theburningchamberbetween400°Fand500°Fforanhour.DonotstarttheVenturisystemduringthisoperation.Also,donotexceed500°Fandmakesurethepansdon’trunoutofwater.Keepatleast2”ofwaterineachsyruppanandatleast2”ofwaterabovethefluesatalltime.
5. Lettheevaporatorcooldownfor24hours.

ASSEMBLY
Theinsulationandbrickingarecompleted.Here’showtoputtogetherthepansandstack.
1. Setthepansontheevaporatorstartingwiththefluepan.Makesurethebackofthepantouchesthebackplate(orthereheatpanifyouhaveone).Then,installthesyruppansinthefront.Makesuretheevaporatorandthepanareleveled.Finally,tightenthepanstogetherusingthepantightener.
2. Installthefloatboxes,alltheconnectionsandthelevel(s).Hookthesap/concentratelinefromthetanktothebackoftherearfloatbox.Thebottomofthetankneedstobeatleast12”higherthanthemaximumlevelintheevaporator.Don’tforgettoputTeflontapeonthethreadedpartstoavoidleaks.
3. Installthebasestackonthebackoftheevaporator.
4. Installthefirstsectionofsmokestack(theonewiththeVenturisystem),ontopofthebasestack.
5. Installtheroofjacksontheroof.Makesureyousealtheinstallationproperlytoavoidleaksinsidethesugarhouse.

6. Installtheremainingsmokestackandthesteamstacks(ifyouhavehoods).Theninstallthecollarsaroundthestacks,abovetheroofjacks.
7. Install theChinesehatsor/andtheropeoperatedstackcovers. In thecaseof thestackcovers,makesurethedominantwindswillclosethem.
8. Thelaststepistoinstallthesteelwiresholdingthestackinplace.Makesurenottotightentoomuch.Thechimneywillexpandsignificantlywiththeheat.
INSTRUCTIONS
Onlyusedrywood,withoutpaintorotherchemicals(notreatedwood).Neveruseanyproductsmadeofplastic, tires,coaloranyothercombustiblematerial. Theuseofanyunauthorizedcombustiblewillvoidthewarranty.
Tooptimizecombustion,thebestlengthforthewoodusedintheVenturievaporatoris20”.Thegratesinsidetheburningchamberare20”long.Sowith20”logs,wegetthemaximumbenefitoftheairdrawnintheburningchamber.
Thequalityofthewoodthatwillbeburnedisanimportantfactor intheperformanceoftheevaporator. Poorqualitywoodwillreducetheboilingrate,youwillfilltheburningchambermore frequentlyand themaplesyrupproducedwillbedarker. See table 1 tofind theheatpotentialforeachtypeofwood.

OPERATION OF THE EVAPORATOR
Before firing the evaporator
1. Makesuretheoutletofthetankfeedingtheevaporatorisatleast12”higherthanthesaplevelinthefluepanandthatthetankishookedupproperlytothebackoftherearfloatbox.
2. Installasyrupthermometeroneachsyruppan.Makesuretheyarecalibratedbydippingtheminboilingwaterandadjustingthetemperatureat0degree.
3. Opentheropeoperatedstackcovers.
4. Openthesapvalvefromthesaptanktotheevaporator.Fillthefluepan2”abovetheflues.
5. Openthefrontfloatboxvalveandfillthesyruppans2”deepbyadjustingthefloatinthefrontfloatbox.
6. Afterthestartoftheevaporator,usingthefloatboxes,stabilizethelevelineachpan.Werecommend1”inthefluepanandbetween1½”and2”inthesyruppans.
Light the evaporator
1. LightingtheevaporatorisdonewiththeVenturishutoff.
2. Completelyopenthefrontgrill.
3. Usingsmalldrywoodandpaper,lighttheevaporator.
4. Waituntilyougetagoodburn.
5. Fillthecombustionchamber(1”fromthepans).
6. StarttheVenturisystem.
7. LeavetheVenturisystemrunningatalltime,evenwhenyoufillthechamberwithwood.
8. Adjustthedraftwiththefrontgrill.Trytomaintainabasestacktemperatureof750°F.

Operation during the boiling process
1. Using defoamer is necessary to the good operation of the evaporator. When the syrupgeneratestoomuchfoam,thefloatboxeswillhavedifficultymaintainingaproperlevelinthepansandyoumightrunthepansdry.RUNNING THE EVAPORATOR WITH NOT ENOUGH LIQUID IN THE PANS COULD RESULT IN PERMANENT DAMAGE TO THE EQUIPMENT.Also,thedefoamerhelpsavoidingthefoamfromoverflowingabovethepanwalls,preventingahugemess.
2. ALWAYSpayattentiontotheliquidlevelinallthepans.Adjustthefloatsinnecessary.
3. Maplesyrupisreadywhenthetemperaturehits7degreesabovetheboilingpointofwater.Openthedraw-offvalvewhenthesyrupreachesthislevelandcloseitwhenthetemperaturecomesbackbelowthisvalue.Anautomaticdraw-offvalveisaveryusefuloptiontoimproveconsistencyofthemaplesyrup.Don’taddwoodifthesyrupisalmostready.Thetemperatureunderthesyruppanswillbecometoohighandyoumightburnyoursyrup.Waitafteryoudraw-off.
4. Repeatdrawing-offsyrupeverytimethetemperaturegetsto7degreesabovetheboilingpoint. It’spossiblethatthedraw-offtemperaturemayvaryovertime. This iscausedbyvariations in the atmospheric pressure. Verify regularly your syrup using hydrometer, adensimeterorarefractometertomakesureyouhavetherightsugarcontent.
5. Asyourconfidencelevelincreases,youcanlowertheliquidlevelinthepans.Theideallevelinthefluepanis1”abovethefluesand1½”to2”inthesyruppans.Lowerthelevelsinthepansboilsfasterandhelpsmakinglightersyrup.Don’tgolowerthanthoselevels.Goingtoolowincreasestheriskofburningthepans.
6. Aftereachdayofboiling,itisrecommendedtodrainthesapinbothfloatboxes.
7. Whenyouarealmostdonefortheday,makesureyouhaveenoughsapleftinyourtanktofillallthepans2”higherthanthenormalsaplevel.Itwillcompensatefortheevaporationthatwillkeeponhappeningbecauseoftheheataccumulatedintheevaporatoruntilitcoolsdown.

IMPORTANT SAFETY NOTE:
THE HEAT IN FRONT OF THE EVAPORATOR WHEN THE DOOR IS OPEN IS INTENSE. ALWAYS WEAR GLOVES, SAFETY GLASSES AND HEAT RESISTANT CLOTHING WHEN FIRING THE EVAPORATOR.

TROUBLESHOOTING GUIDE
Can’t keep a constant liquid level in the pans:
• Usemoredefoamer.(careful,tomuchdefoamercouldaltersyrupflavor).
• Thesiliconepartinthefloatboxarmisworneddownormisplaced.
• Thefloatboxarmneedstoberealigned.
• Thereisaleakinthefloat,it’sfillingwithsap.Repairorreplacethefloat.
• Thesaptankistoohigh,thereistoomuchpressureonthefloatbox.Movethetankorinstallapressurecontrolfloatbox.
Sap turns to syrup in the 1st syrup pan:
• Itcanhappenwhenyoustarttheevaporator.Draw-offenoughsyruptogetittothefrontanddistributewhatwasdrawn-offinthefluepan.Thiswillgetthemovementforwardgoing.
The heat in the chimney is too hot; the base stack turned red or the evaporator doesn’t boil much:
• Toomuchdraft,graduallyclosedthefrontgrilluntiltheproblemisfixed.

MAINTENANCE
Pan cleaning
1. Fillthepans(evenwiththeseparation)withpermeateorcleanwater.
2. AddaCDLrecommendedpancleaningproduct(readtheproductlabelfortherightdosage).Heattheliquidto90°C(195°F),extinguishthefireandletitsitovernight.
3. Drainandrinsethoroughlyallthepanswithwater.Makesurethereisnotraceofacidleftinthepans.
4. Fillthepansagainandaddsodiumbicarbonatetoneutralizeanyacidresidue.Leavefor15minutes.Drainandrinsewithwateronelasttime.
5. Never use abrasive products, metal brushes, steel wool or any products with chlorine ormuriaticacid.
6. If there isburnedsyrupontheoutsidewallsof thepan,youcanuseacommercialovencleaningproduct(coldoven).Itwilldissolvethesyrupwithoutdamagingthepans.Tobringbacktheshinyfinish,useanindustrialglassfoamingcleaningproduct.
IMPORTANT: Between seasons, if there is ANY trace of acid left in a pan, it will be filled with pin holes at the beginning of the next season.

When to clean you pans
Pancleaningdependsonevaporatorsizeandtheamountofscaledepositproducedbyyourevaporator.Frontpanshavetobecheckedeveryhourtopreventoverheating.Iftoomuchscaledepositinyourpan,youcouldburnit.Somakesurethatyoucheckyourfluepanattheendofeveryday,especiallyinthecornersattheendofeachflue.Toomuchniterdepositscancauseapantooverheat.Underthepanandbetweentheflues,useafluebrushtoremoveasmuchsootaspossible.
In between season storage
1. Putallyourpansonwoodblockstoletaircirculateinthearchandunderthepans.Toomuchhumiditycancausedamage.
2. Removeanydepositsinsidethepanwithagoodacidwash.Ifnecessary,brushallthefluesinsideandoutsidewiththeappropriatebrushandapressurewasher.Alwaysmakesurethefluesofthepanareclean.
3. Neverleaveanykindofcleaningproductinthepans,itwilldamagethemandit’snotcoveredbythewarranty;
4. O-ringsmustbegreasedwithfoodgradegrease(topreventshrinkinganddrying)

EVAPORATOR WARRANTY
Yourevaporator iscoveredbyatwoyearlimitedwarranty. Fortwoyearsfromyouroriginaldateofpurchase,LesÉquipementsd’ÉrablièreCDL(CDL),willreplaceorreplaceanypartsofthisevaporatorthatprovetobedefectiveinmaterialsorworkmanshipwhensuchevaporatorisinstalled,usedandmaintainedinaccordancewiththeprovidedinstructions.
ExclusionsThiswarrantydoesnotcoverthefollowing:
1. Productswithoriginalserialnumberthathavebeenremoved,alteredorcannotbereadilydetermined.
2. Product that has been transferred from its original owner to another party or removedoutsidetheUSAorCanada.
3. Productionlossduetoanykindoffailureoftheevaporator.
4. Revenuelossesduetosyrupquality.
5. Servicecallswhichdonot involvemalfunctionordefect inmaterialsorworkmanship,orusedotherthaninaccordancewiththeprovidedinstructions.
6. Servicecallstocorrecttheinstallationofyourevaporatorortoinstructyouhowtouseyourevaporator.
7. Expenses formaking theevaporatoraccessible forservicing,suchas theremovalofwall,shelvesetc.
8. Servicecallstorepairinsulationorthebrickingjob.
9. Crackcastironpartsifablowerwasusedintheevaporator.
10.Anyservicebeyondthefirsttwoyears.
11.Damagescausedby:servicesperformedbyunauthorizedservicecompanies;useofpartsotherthangenuineCDLpartsorpartsobtainedfrompersonsotherthanauthorizedservicecompanies;orexternalcausessuchasabuse,misuse,inadequatepowersupply,accidents,fires,oractsofGod.
12.Itdoesn’tcovertheconsumableproductsoraccessories.

13.Iftheproductwasdamagedbyabusiveuse,negligence,accidentcausedbythecustomer,modificationmadebythecustomer,variationintheelectricpower.
14.Damagecausebytheuseofproductsthatarenotmeantforusewithourequipmentorabaduseofaproductasacids,cleaningproducts.
15.Useofpaintedwoodoranywoodcontainingchemicals,glueoranyotheraddedagent.
16.Useofanyotherburningagentthanwood.
Disclaimer of implied warranties; limitation of remedies
Customer’ssoleandexclusiveremedyunderthislimitedwarrantyshallberepairorreplacementasprovidedherein.Claimsbasedonimpliedwarranties,includingwarrantiesofmerchantabilityorfitnessforaparticularpurpose,arelimitedtotwoyearsortheshortestperiodallowedbylaw,butnotlessthantwoyears.CDLshallnotbeliableforconsequentialorincidentaldamagessuchaspropertydamagesandincidentalexpensesorlossorrevenuescausedbyanyeventcoveredbythiswarranty.Somestatesandprovincesdonotallowtheexclusionorlimitationofincidentalorconsequentialdamages,orlimitationsonthedurationofimpliedwarranties,sotheselimitationsorexclusionsmaynotapplytoyou.Thiswrittenwarrantygivesyouspecificlegalrights.Youmayalsohaveotherrightsthatvaryfromstatestostates.
If you need service
Keep your receipt, delivery slip or some other appropriate payment record to establish thewarrantyperiodshouldserviceberequired.Ifserviceisperformed,itisinyourbestinteresttoobtainandkeepallreceipts.ServiceunderthiswarrantymustbeobtainedbycontactingCDLattheaddressesorphonenumbersbelow.
Obligations for service and parts under this warranty will be performed by CDL in Canada.Productsfeaturesorspecificationsasdescribedorillustratedaresubjecttochangewithoutnotice.
