T he kitchen has always been the heart of the home, the place where everyone gathers. The current interest in cooking plus the boom in new construction have engendered a focus on intel-

“I always tell my clients to price appliances and that will give them an idea of the cost entailed,” she said. “The other major cost con-siderations are how much architectural change is involved, cabinets and labor.”

Claudon works for high-end clientele who expect to spend a mini-mum of $50,000 for a remodel, and $100,000 is not an atypical proj-ect. She charges $150 per hour for kitchen design.

Claudon recommends pulling the entire construction team together at the earliest possible stage and scheduling weekly meetings. Some teams will consist of just the owner(s) and the contractor. “The team can grow,” she said. “The main thing is to get cross fertilization of ideas.”

ers — that are either self-filling or adaptable to using bottled water. Do you want to use hermetically sealed coffee capsules for a single cup, or use ground coffee that would entail more maintenance?

Steam ovens are seen as the new alternative to mi-crowaves. The advantage is retention of moisture. The $4,000 Gaggenau version includes a traditional con-vention capability but requires direct plumbing plus a drain. The $2,300 Miele is all steam and is self-con-tained.

Ventilation assumes new proportions as stove tops become more powerful. “Down vents are not as ef-fective,” Zolezzi said. The trend is towards custom-designed hoods that hide all the commercial-grade machinery. Seller recommends turning them on low for 10 minutes before cooking to achieve best results.

“The commercial gas ovens take up a lot of space and you have to bend over to open them,” Zolezzi said. Many opt for gas cooktops — there is now a burner designated for simmering — and a double electric oven.

Induction cook tops have the response time of gas, but the initial cost is double. The advantage is that they use magnetic energy to generate the heat source, so the surface doesn’t get hot. Special ferrous imbedded cookware (Viking) now makes the technology practi-cal.

Since many modern kitchens are part of a “great room,” quiet appliances are a real boon. Dishwashers are rising to the challenge. However, Zolezzi said that all of the current electric ovens make noise because a fan comes on automatically at a certain temperature to cool the electronics.

Refrigerator drawers and dishwasher drawers that fit under islands can offer great convenience and flexibil-ity. The trick is to clearly assess your needs.

“Almost all refrigerators are built in now,” Zolezzi

said. If space is tight a model with French doors can cut down on “swing-open” area required.

“Stainless steel is neutral and timeless,” Seller said. “It will probably fare better than harvest gold or avo-cado.” Restoration kits have made it practical as well. “White is the most difficult color to match and most manufacturers are discontinuing it,” he added.

Seller prefers a single sink because it offers so much flexibility. He advises that if you have your heart set on a double make sure that each is large enough to be useful. A slight incline in the dish drain area encour-ages gravity.

Sponge trays that open out from under the sink seem like a good idea, but Zolezzi says to beware. “They can get dirty and scummy and be difficult to clean.”

Natural stone is still the most popular choice for counter tops. However, Claudon suggests honing it for a softer look and mixing it with wood or tile backs-plashes for variation. Zolezzi advises sealing the stone every couple of years, and recommends a poultice to draw out stains.

Both Zolezzi and Claudon acknowledge that concrete is now a contender for kitchen surfaces. “But I worry about concrete cracking in earthquakes,” Claudon said. She recommends DuPont’s Corian or Zodiac — both manmade materials, the latter with imbedded quartz — for those who want a more homogeneous look than natural stone.

Zolezzi says that he uses a variety of woods, every-thing from maple, cherry and walnut to the more exot-ic, like bubinga and anegre. “I’m seeing lots of bamboo for floors, and it’s very durable,” he said, adding that tiles are also popular for flooring, but are very hard. As for cork floors, Claudon said, “I like the look, but the jury’s still out on wear.”

Claudon has a response for those who are not inter-ested in gourmet kitchens. She takes the trend towards flush appliances faced to match adjoining rooms to another level and envisions the “invisible kitchen,” complete with a cover to hide the sink. ■
