Over $15,000 went directly to agencies to support their programs. And in the coming weeks, the remainder of the funds raised will go to agencies through Pancake Day grants. Penny’s Healthy Oatmeal Pancakes1 1/2 cups ground oats (grind in food processor)

1/2 cup flour of choice (pastry is best, gluten free is ok)

Pinch salt

1 teaspoon baking soda

2 teaspoons baking powder

2 cups milk of choice (soy, almond, coconut, lactose-free), room temperature

1 egg, if desired, also room temperature

1/4 cup oil of choice (Penny likes sunflower oil)

2 teaspoons vanilla extract

In a small bowl, combine all dry ingredients and stir very well. In a separate bowl, whisk together all liquid ingredients. Pour dry into wet, and stir together to form a batter. (Note: if the batter is too thin – which might be the case especially if using cup measurements of ww pastry flour – just add a little more flour until you get a pancake-esque batter.) Lightly grease a medium skillet, then place over medium heat. When pan is hot (see TIP 2), drop ladelfuls of batter onto the skillet. Flip pancakes, using a spatula, when the edges begin to look dry and bubbles are all over the pancake. Allow to cook one minute longer, then remove from heat. Serve with your favorite pancake toppings.

TIP 1: Penny likes to use a cast iron skillet for pancakes. She gets a perfect result every time!

TIP 2: Test the heat of your skillet by throwing a few drops of water onto the surface. When the water sizzles, the pan is ready for the pancake batter. Recipe makes 8-10 large pancakes.
