The story of the school and how it came to be the online Academy that is it today is a sweet one. Our founder, Meghan Telpner, had never considered herself much of a nutrition enthusiast, let alone a culinary queen. It was her own poor health that led her into the kitchen when in 2006, she was diagnosed with what she was told was an incurable, autoimmune inflammatory bowel disease.

Learning to cook one healing ingredient at a time, Meghan effectively healed herself and remains symptom-free from this disease she was told was incurable.

Her experience was the inspiration to leave her career in advertising to

pursue her new culinary nutrition passions. After graduating from one of Canada’s leading holistic nutrition schools, she realized there was still something missing, and that missing component was how

to apply science-based nutrition information to beautiful, creative,

simple and delicious breakfasts, lunches, dinners, snacks, and sweets.

There was no one teaching courses on culinary nutrition—the therapeutic, healing and balancing benefits of eating real food.

The seed for the Academy of Culinary Nutrition was planted. Meghan began offering cooking classes in her home kitchen, a 650-square-foot loft in Toronto’s west-end Parkdale neighbourhood. In their first year, the classes only had a capacity of six people, but a dedicated and passionate community began to form. Meghan’s class offerings soon expanded to include other expert teachers. In the spring of 2011, Meghan moved her tiny bedroom out from the corner of her loft to dedicate the entire space to teaching hands-on classes and demonstration-style workshops.

By the spring of 2011, students had begun asking if they could register for the full season’s worth of classes. Meghan took it all the way and created a full curriculum that included the classes, home study assignments and event participation requirements. This program eventually grew into the Academy’s flagship course, the Culinary Nutrition Expert Program.

TAKING IT ONLINEAs demand for this knowledge expanded beyond what could be contained in the loft, Meghan and her team hired a crew to help convert what were her in-person classes into video-based workshops that could be available globally online.

After running the program for three seasons, with a maximum capacity in the kitchen of 12, the fall of 2013 saw the first online run of the Culinary Nutrition Expert program with 97 students registered from 6 countries.

With encouragement and support from our first batch of graduates, we put into motion the plan to launch the full school as the Academy of Culinary Nutrition. The school officially launched in the spring of 2014 during our second run of the program.

100 students graduated in June of 2014 and another 190 completed the program in fall 2014, with a student body that extended across 18 countries and 6 continents.

We are teaching culinary nutrition, but our goal is not to remain the teachers. Our program is designed to cultivate community leaders. We are teaching the teachers! We work to develop our students’ critical thinking skills so that they can truly become their own best health experts, as well as the health leaders in their own communities.

THEY ARE THE INFLUENCERS IN THIS FIELD. THIS IS NUTRITION TRAINING FOR LIFE.
