MEET THE CHEF
COMFORT-DRIVEN,DELICIOUS FOOD
Chef Stephen Bucalo developed his skills
beginning with home cooking lessons from his mother
and family recipes entrusted to him, which he took west
as he sought out culinary direction. Bucalo graduated
from the Western Culinary Institute in Portland, Oregon in
2002. Upon finishing school he traveled the west coast,
developing his skills in an array of different kitchens,
while developing a deeper love and respect for food.
Hands-on experience with open-air farmers’ markets,
artisan cheeses, and fish freshly plucked from the sea
helped to grow Bucalo’s culinary skill and foreshadowed
what would eventually become his philosophy on food and
his own personal cooking style.
Today, Chef STEPHEN uses only the freshest ingredients and traditional southern-comfort, slow-cooking methods to delight your guests, and create memories that will last a lifetime.

ORDERING FOOD & BEVERAGE
To ensure the highest level of presentation, service
and quality, we ask that you contact our banquet
sales department at least two weeks prior to the
event. Food and beverage minimums will apply to all
banquet events, and are based on group size and
event date. To book an event, we require a signed
contract and 50% non-refundable deposit. All food
and beverage selections must be confirmed seven
business days prior to the event date. Payment in full
is due seven (7) business days prior to the event.
The Hub 30A is an indoor/outdoor venue, and as
such, is subject to the elements. All events are
guaranteed, rain or shine. Cancellation of your event
in the case of inclement weather is required no later than 12:00 PM on the
day of the event. Beverage and service charges will be refunded, however
food is non-refundable. Events cancelled after 12:00 PM on the day of the
event are not eligible for refunds.
Because The Hub 30A exclusively furnishes all food and beverage products
for the catering events, guests are prohibited from bringing personal food or
beverage without proper authorization.
ASSESSED CHARGES Please note that all food and beverage items are
subject to an 18% service charge plus applicable Florida state tax (7%).
BARTENDER $100.00 per bartender is recommended per 3 hours of service,
one (1) bartender for every 50 guests. Note: A Bartender is required for all
beverage packages containing alcohol.
