The historic garden of Wyatt Heritage Properties in Summerside comes alive on Wednesday evenings throughout July and August with the sounds of local musicians in concert. The audience is invited to bring a chair or blanket and nestle beneath the canopy of trees to partake in the entertainment. Admission is by donation. The break is highly anticipated for it brings the special treat of Wyatt Heritage Properties’ ice cream made daily on site using rich Island cream and milk. Cost: Vanilla Ice Cream $3.00 per dish $3.50 with topping (Strawberry or Rhubarb).

Well, the esteemed Island shellfish doesn’t actually wear socks. But as they grow, they are suspended in socks (mesh sleeves) in the water. This process keeps them far away from the bottom dwelling predators, allows them to have greater access to food, and ensures cleaner shells. The result is a high quality mussel, internationally renowned for its superior flavour.

Marinated Mussel Salad (Serves 4 as a main dish, 8 as an appetizer)

INGREDIENTS½ cup (125 mL) sliced white onion¼ cup (60 mL) minced garlic2 tbsp (30 mL) olive oil½ cup (125 mL) dry white wine5 lb (2.2 kg) mussels (cleaned)½ cup (125 mL) thinly sliced fennel

½ cup (125 mL) thinly sliced carrots½ cup (125 mL) thinly sliced red bell pepper½ cup (125 mL) thinly sliced green bell pepper½ cup (125 mL) thinly sliced yellow bell pepper¼ cup (60 mL) thinly sliced green onions¼ cup (60 mL) chopped fresh basil

DIRECTIONS• Sauté the white onion and garlic in the olive

oil over medium heat for 3 minutes.

• Add the white wine and mussels, cover and cook on high until the shells open, 5 to 7 minutes. Remove the mussels from the pot, allow them to cool and remove from the shells.

• Reduce the juice that is left in the pot by half.

• Cool and reserve. Toss the mussel meat, vegetables, herbs and lemon zest with 1 cup (250 ml) of the cooled cooking liquid.

• Add the citrus vinaigrette and season to taste with salt and pepper.

PEI Potato Chocolate Cake (Serves 12-16)

INGREDIENTS1 cup (250 ml) PEI Yukon Gold Potatoes, mashed & hot1 cup (250 ml) Water, lukewarm2/3 cup (150 ml) Butter, softened2 cups (500 ml) Brown Sugar1 tsp (5 ml) Vanilla Extract

4 Eggs2 cups (500 ml) All Purpose Flour¾ cup (188 ml) Cocoa2 ¼ tsp (11 ml ) Baking Powder½ tsp (2 ml) Baking Sodapinch Salt¾ cup (188 ml) Semi-Sweet Chocolate Chips

METHOD• Preheat oven to 350oF. Lightly grease 9x13

baking pan and dust with cocoa powder. Remove excess cocoa powder and set aside.

• Whisk water into mashed potatoes until a smooth mixture is formed.

• Beat butter, brown sugar and vanilla for 4-5 minutes with an electric mixer until light and fluffy.

• Add 2 eggs and mix until blended, scrape down sides of bowl; add remaining eggs and continue mixing until well blended.

• Sift together flour, cocoa, baking powder, baking soda and salt; stir to combine.

• At low speed, alternate adding the sifted dry ingredients with the potato mixture until incorporated. Fold in chocolate chips.

• Place batter into the prepared pan; smooth out top. Bake for 30 minutes, until cake springs back when pressed lightly and begins to move away from the sides of the pan.

• Cool in the pan on a cooling rack. Sift confectioners’ sugar over the cake or an icing of your choice.

• Store at room temperature for up to 3 days in an airtight container. Cake also freezes well.

PEI Barbeque Pulled Pork Sandwich

INGREDIENTS (Sauce)6 cups (1.5 L) Ketchup2 cups (500 mL) balsamic vinegar2 cups (500 mL) brown sugar (packed)1 cup (250 mL) diced onion¼ cup (60 mL) hickory smoke seasoning2 tbsp (30 mL) minced garlic

1 tbsp (15 mL) Worcestershire sauce2 tsp (10 mL) Tabasco sauceSalt and pepper

INGREDIENTS (Pork)3 lb (1.4 kg) boneless pork shoulderSalt and pepperTwo large Spanish onions (medium slices)One head of garlic (chopped)

DIRECTIONS• Preheat the oven to 400˚F (200˚C).

• Season the pork shoulder with salt and pepper.

• Place the onions and garlic in a roasting pan and sit the pork shoulder on top. Roast in the oven for 30 minutes to brown the pork and vegetables.

• Meanwhile, mix all the sauce ingredients in a large mixing bowl together. Adjust the seasoning to taste. Keep refrigerated until needed.

• Reduce the oven temperature to 300˚F (150˚C).

• Pour the barbeque sauce over the browned pork shoulder, cover tightly with foil and return to the oven for 2 hours to slowly braise in the sauce. The roast is finished when it is tender and reaches an internal temperature of 180˚F (80˚C).

(Use meat thermometer to check.) The meat should pull apart with little or no resistance.

• Allow the pork to cool, still covered in foil, in the sauce so that you can handle it comfortably. When the pork is cool, remove it from the sauce and pull it apart into pieces. Mix the pork pieces back into the sauce and gently reheat in the oven.

• To serve, place the pulled meat mixture on a fresh baguette or toasted kaiser, or roll in a soft tortilla wrap. If you don’t want it as a sandwich, it is great with some mashed potatoes and grilled vegetables.

• You may need to remove any excess sauce.

PEI Potato Soda Bread

INGREDIENTS½ cup (125 ml) PEI Yukon Gold Potatoes, mashed & hot ½ cup (125 ml) Raisins1 cup (250 ml) Buttermilk2 cups (500 ml) All Purpose Flour

¼ tsp (1 ml) Salt½ tsp (2 ml) Baking Soda2 tsp (10 ml) Baking Powder2 tbsp (30 ml) Sugar¼ cup (50 ml) Butter, softened½ tsp (2 ml) Caraway Seeds

METHOD• Preheat oven to 4000 F.

• Soak raisins in warm water for 5 minutes; set aside.

• Whip mashed potatoes and buttermilk together until no lumps remain using an electric mixer.

• Combine flour, salt, baking soda, baking powder and sugar.

• Cut in butter until the mixture has the consistency of cornmeal.

• Stir in raisins and caraway seeds.

• Make a well in the center of the dry ingredients; add the potato-buttermilk mixture and stir gently with a fork.

• Turn dough onto lightly floured board and knead gently 8-10 times.

• Pat into a loaf shape and place in a lightly greased bread pan.

• Score top of bread with a knife; bake for 28-32 minutes, until golden. Remove from oven and serve warm or cold.

Chef’s Tip: To make buttermilk: add 1 tbsp (15 ml) vinegar to 1 cup (250 ml) milk44

On Prince Edward Island, generations of Islanders grew up on the family farm, passing its traditions down through the years. It’s not uncommon to see two or three generations of the same family working together growing crops or raising livestock.

And we’re proud of our roots.

Warm Blueberry Brown Butter Cake

INGREDIENTS½ lb butter, browned1 ½ cups sugar4 eggs1 tsp pure vanilla extract¾ cup flour2 cups fresh blueberries1 tsp cardamom⅓⅓ cup pecans, choppedpinch of salt

METHODPreheat oven to 350˚F (180˚C). In a large bowl combine the cooled brown butter and sugar. Add eggs and vanilla and mix until well combined. Fold in flour, blueberries, cardamom, pecans and salt.

In well greased 3oz ceramic ramekins, pour in batter until ¾ full and place on a cookie sheet. Place in preheated oven and cook for 25 minutes. A toothpick should come out clean when these cakes are done.

Give a quick once around with a paring knife to ensure they pop out. Turn out on a wire rack and allow to cool slightly. This individually served cake is best served warm with a generous dollop of whipped cream, doused with maple syrup.

PEI Lobster-Stuffed Spuds (6 servings of 2 stuffed halves each)

INGREDIENTS½ cup lobster meat, drained and diced6 PEI baked potatoes, hot2 tbsp ADL butter½ cup ADL sour cream¼ cup green onion, diced small¼ tsp fresh cracked pepper¼ tsp cooked bacon1 cup Cheese Lady’s gouda, grated

METHOD Preheat oven to 400˚F (200˚C).

Cut baked potatoes in half lengthwise and scoop out the flesh; set the skins aside. In a bowl, mash the potato with the butter, sour cream, green onion, and half of the cheese. Beat until smooth. Fold in lobster meat and bacon, and season with salt and pepper. Spoon mixture back into the potato skins. Cover with remaining cheese and bake for about 15 minutes.
