Este ano está a passar muito depressa, devido às muitas e variadas actividades realizadas no nosso Resort. Gostaria de aproveitar esta oportunidade para agradecer aos nossos Hóspedes, Membros e Proprietários a valiosa colaboração ao longo dos anos.2014 caracteriza-se por uma dinâmica activa para o Sheraton Algarve e Pine Cliffs Resort. O ano começou com a 3ª Edição do “Pine Cliffs Golf and Tennis Winners’ Cup”, realizado a 22 e 23 de Fevereiro, em que demos as boas vindas aos campeões de golfe e ténis das competições semanais, oriundos dos quatro cantos do mundo. Os vencedores foram Adriano Lage, no golfe e Paul Gerla, no ténis.Na primeira semana de Março, patrocinámos o “Pine Cliffs Grand Prix”, no evento de Saltos Equestres do Atlantic Tour de Vilamoura, cujo vencedor foi Dermott Lennon. Também em Março, organizámos o “Pine Cliffs Goes Active Ultimate Challenge”, um evento de saúde e bem-estar, cujos fundos angariados reverteram na sua totalidade a favor da Santa Casa da Misericórdia de Albufeira. No final de Março, apresentámos a nossa 4ª Edição de “Cooking through Generations”, com a participação do Chef Marc Fosh, galardoado com uma estrela Michelin e proprietário do Restaurante “Simply Fosh”, em Maiorca. Todos os hóspedes que participaram nesta viagem gastronómica ficaram positivamente impressionados com a criatividade e equilíbrio dos sabores e aromas do menu apresentado por Marc. Em Abril, implementámos o Passeio Botânico auto-guiado, o qual foi desenvolvido em conjunto com a “Mediterranean Garden Society” e que está disponível no Concierge, em formato papel e digital, e que permite, a todos os interessados nesta matéria, admirar o nosso resort através de uma outra perspectiva. Também em Abril, organizámos a abertura oficial da Academia de Ténis Annabel Croft, no Pine Cliffs, que contou com a presença de Annabel Croft, ex-profissional de ténis Britânica Nº 1, em que os hóspedes foram convidados a participar numa experiência de ténis exclusiva, tomando contacto com os seus métodos especiais de ensino. Em Maio, o Hotel participou na quarta edição do “Algarve Chefs’ Week”, com a apresentação de um menu verdadeiramente indígeno, com inspiração no barrocal algarvio.Em relação aos tempos vindouros, salientamos a Gala de Verão Pine Cliffs, que retoma o formato do ano transacto, a ter lugar na área da Academia de Golfe, permitindo receber a audiência que apenas quer assistir ao concerto, para além da que pretende assistir ao evento, enquanto aprecia o requintado Jantar, tradicionalmente servido. É com o maior agrado que anunciamos que a artista deste ano é a Britânica Leona Lewis, vencedora da série do Factor X em 2006, em Inglaterra.Esperamos por si na nossa Gala de Verão, a 8 de Agosto.

Dear Guest,

Due to many exciting activities held at our resort, the year is already passing very quickly. I would like to take this opportunity to thank all of our Guests, Members and Property Owners for their continuous support throughout the years.2014 is a very active year for the Sheraton Algarve and Pine Cliffs Resort. We started the year with the 3rd. Edition of the Pine Cliffs Golf and Tennis Winners’ Cup held on February 22nd and 23rd, and welcomed our weekly golf and tennis champions from around the world. The winners were, for golf, Adriano Lage and Paul Gerla triumphed for tennis. In the first week of March we sponsored the Pine Cliffs Grand Prix at the Vilamoura Atlantic Tour Equestrian Showjumping event which was won by Dermott Lennon. Also in March we organized the Pine Cliffs Goes Active Ultimate Challenge which was a fundraising fitness event with the proceeds being fully donated to Santa Casa Misecordia in Albufeira. At the end of March, we held our fourth “Cooking through Generations” event, with the participation of the Michelin Star Chef Marc Fosh who is the owner of Simply Fosh restaurant in Majorca. Guests who embarked on this remarkable and refined culinary journey were thrilled by the creative and balanced menu produced by Marc. In April we launched the Sheraton Algarve self-guided Botanic Tour which was developed in conjunction with the Mediterranean Garden Society and is available in both printed and digital format from the Concierge and is great way to see our resort from a different perspective. Also in April, we have hosted the official launch of Annabel Croft Tennis Academy at Pine Cliffs, with the presence of the former British No.1 tennis professional Annabel Croft, our guests were invited to take part on an exclusive tennis clinic and experience in first-hand, the academy leading training methods .In May the hotel participated in the fourth edition of the Algarve Chefs week where we featured a menu with dishes inspired by Barrocal, the indigenous Algarve

Now to the future, and the changes that were made to the Summer Gala format last year when we developed a new venue at the Golf Academy area so that we could host a concert-only audience in addition to our traditional dining set will remain and we are delighted to announce that the artist this year will be Leona Lewis who won the X Factor in 2006.We look forward to welcoming all of you to our Summer Gala on 8 August.

Como que milagrosamente, o re-sort desenvolveu-se segundo os planos. Começá-mos a fazer férias no nosso apartamento como uma família de 3 pessoas, que agora aumentou para 7. Uma família, actualmente, de 3 gerações. A mesma família que agora possui, não só o mes-mo apartamento, como também uma townhouse de 4 quartos. Sendo americanos, passámos muito tempo à procura de uma experiência “Pine Cliffs” mais perto de casa. Procurámos por todo o lado, descobrindo que nada era tão bonito ou com as mesmas regalias oferecidas pelo Pine Cliffs. A beleza natural, a comida, o vinho, as piscinas, o golfe, o tempo e uma equipa atenciosa e amigá-vel que se torna a sua família são apenas algu-mas características que tornam este resort único. Um benefício inesperado - dá aos nossos netos a oportunidade de conhecerem e de se torna-rem amigos de outras crianças de todo o mundo. A Special Message from our valued Owners Mr. and Mrs. WoltersWe purchased a two bedroom apartment 25 years ago. Even the hotel wasn’t begun at that time. In a leap of faith that the resort would develop according to plans, we began vacationing in our apartment as a 3 person family. We have now grown to a 7 person, three generation family, and now own that same apartment and a 4 bedroom townhouse. We are Americans and spent a lot of time looking for a “Pine Cliffs experience” closer to home. We looked everywhere, discovering that nothing was as beautiful or offered amenities as did Pine Cliffs. The natural beauty, food and wine!, pools, golf, weather, and a caring and friendly staff that becomes your family are only a few features that make this resort like no other. An unanticipated benefit--It gives our grandchildren a chance to meet and become friends with other children from around the world. Now, not only our three generations of family are coming to Pine Cliffs, but friends of all three generations are coming with us. They, too, love it like us. Thank you for creating this paradise.

Annabel Croft Tennis Academy at Pine Cliffs Resort“The Annabel Croft Tennis Academy at Pine Cliffs has been open for business now for two months and I am delighted that we have already had so many positive experiences at the tennis courts already. Our head coach Paulo Machado has had a wonderful initiation by spending time meeting players of all standards and ages and helping them to work on their game. We have also started to encourage players to try our dynamic junior group coaching methods, with Paulo and the team working closely with Porto Pirata to get some budding young stars of the future on court. I would encourage everyone to keep working on their tennis and to still think to drop by to the tennis academy. Our team will still be available for lessons and tennis is just as much fun in the cooler climate and a great way to stay fit in the fresh air”. Tuna “Tataki” vs “Xerém of clams”ENTRY - TUNA “TATAKI” ~ Tuna tataki - 180 grs ~ Extra virgin olive oil - qs ~ Flor salt - qs ~ Pepper - qs ~ Lemon juice - 1 und.

Preparation: Cut the tuna into small cubes, season and sauté in a pan.

MEATFARCE ~ Shallots - 15 grs ~ Garlic - 5 grs ~ Leeks - 100 grs ~ Pineapple - 50 grs ~ Banana - 50 grs ~ Papaya - 50 grs ~ Fish broth - 0, 25l ~ Coconut milk - 1 dl ~ Cream - 1 dl ~ Salt - q.s. ~ Olive oil - qs ~ Safflower - qs ~ Liquor Lava Lands 2003 - 1dl

Preparation: Blanch garlic, leek and shallots separately in salted boiling water.Heat oil and add the boiled vegetables and stir until lightly brown. Add white wine. Add fish stock, safflower and fruits and let it simmer. Add the coconut milk mixed with the cream already. Bring it to a light simmer. Strain and season with salt and pepper.

XERÉM OF CLAMS ~ 1 kg of clams ~ 100 grs smoked bacon ~ 100 grs chorizo ~ 100 grs of ham ~ 200 grs of corn flour ~ 1 dl of white wine ~ Salt - qs ~ Pepper - qs

Preparation: Rinse the clams with cold water in a bowl. Cover them for 4-5 hours with seawater . Slice the bacon, ham and chorizo into small stripes. Fry all together over low heat in a frying pan. Remove clams from the water. Heat oil and fry the clams for the 5-8 minutes in a saucepan with little water. When all clams opened, strain remaining liquid through a strainer. Remove the meat from the clam shells.Reheat the liquid with white wine and let it simmer a while. Add sieved flower into the pan. Reduce the heat in order to avoid lumps. Add the meat of clams and reheat without letting it boil. Serve and enjoy.

Atum “Tataki” vs Xerém de amêijoasENTRADA - ATUM “TATAKI” ~ Atum tataki - 180 grs ~ Flôr de sal - q.b. ~ Azeite extra virgem - q.b. ~ Pimenta - q.b. ~ Sumo de limão - 1 und.

Confecção: Cortar o atum em doses, temperar e cozinhá-lo no sauté. AGRIDOCE DE FRUTAS ~ Echalotes - 15 grs ~ Alho - 5 grs ~ Alho francês - 100 grs ~ Ananás - 50 grs ~ Banana - 50 grs ~ Papaia - 50 grs ~ Caldo de peixe - 0,25 l ~ Leite de côco - 1 dl ~ Natas - 1 dl ~ Sal - q.b. ~ Azeite - q.b. ~ Açafrão - q.b. ~ Vinho branco Terras de Lava 2003 - 1 dl

Confecção: Branquear o alho, alho francês e as echalotes em 2 águas. Aquecer o azeite e adicionar o preparado anterior, deixar alourar e refrescar com o vinho branco. Colocar o caldo de peixe, açafroa e as frutas, deixar cozinhar. Adicionar o leite de côco já envolvido nas natas. Passar tudo pela varinha e chinês fino. Rec-tificar temperos.

XERÉM DE AMÊIJOAS ~ 1 kg amêijoas ~ 100grs chouriço ~ 100grs presunto ~ 200grs farinha de milho ~ 1 dl vinho branco ~ 100grs toucinho fumado ~ Sal - q.b. ~ Pimenta - q.b.

Confecção: Numa tigela lave as amêijoas, de preferência médias, em água fria, a fim de as libertar de impurezas que possam conter. Em seguida, cubra-as com água do mar, cerca de 4 a 5 horas. Corte o toucinho e o presunto em tiras pequenas e o chouriço ás rodelas. Frite-os numa frigideira, em lume brando. Retire as amêijoas da água. Coza-as num tacho, cobertas de água, cerca de 8 a 10 minu-tos. Escorra o líquido onde as cozeu, tendo o cuidado de o passar por um passador fino. Tire o miolo das amêijoas. Deite este num tacho, junte o caldo da cozedura, adicione o vinho e leve ao lume, deixando ferver um pouco. Peneire a farinha com a ajuda duma peneira. Retire o tacho e, fora do lume, adicione a farinha para não encaroçar. Leve novamente ao lume e deixe cozer, mexendo de vez em quando. Junte as carnes e sirva bem quente.
