technology field. Due to resounding positive feedback from the schools we will once again be holding a session on resume writing and a speed networking session.

The resume writing session will be held from 3:00 - 4:00PM and the speed networking will immediately follow the resume writing from 4:00-5:00PM. Students in attendance are encouraged to meet, speak, and interact with some of our section members on a more personal and one on one basis. We will need your help to make this event a success!

You can help a student in 1 and/or 2 of the following ways:

Be a part of the Speed Networking Team: You will be paired with a few students at a time for 5 minute intervals and will answer their questions. We are in need of volunteers from all the segments of the food industry from R & D, Quality Control, Technical Sales, and any other sector you may work with. Student Meal Sponsor: Purchase a dinner for a student so that he or she does not have to incur this expense. The cost of the student meal is $25.00. Message from the Chair

Dear CSIFT Members,

You should have received an email with voting instructions for the ELECTION of the section's officers and executive committee members on February 8, 2012 from our business office. The virtual voting booth is now open and I want to make sure that you take action and cast your vote to boost this year's participation rate. It will make feel all of the many volunteers and candidates more valued and appreciated if our membership takes an active role in the election process. So let's make it a record turn-out this time! Don't delay - vote now!

My second request is about your section's awards program. This year we are asking you to submit nominations for the CHICAGO SECTION IFT CHAIR'S ACHIEVEMENT AWARD. This award is presented every other year to recognize an outstanding achievement in Food Science. The individual needs to be a member of the Chicago Section IFT to be eligible. The award consists of a $250 honorarium, an inscribed plaque, and expenses. In addition we are recognizing an outstanding CSIFT Member who has distinguished himself or herself in the service of the Chicago Section IFT with the ELLERY H. HARVEY SERVICE AWARD. This award is presented every year and consists of a $200 honorarium, a scroll, and expenses. All Chicago Section members are eligible, excluding elected officers for the year. Nominations for both awards are to be submitted to the immediate past-chair Pam Vaillancourt by 30 March 2012. Nomination forms can be found here: Chair's Achievement Award & Ellery H. Please take note that we have changed our STUDENT NIGHT event to the month of March this year. As in the past our Hospitality and Student Night committee is organizing an event that helps current students from the University of Illinois, Purdue University, Dominican University and the Illinois Institute of Technology to connect with professionals in the field, while at the same time helping our members to identify future talent. There are several ways in which you can support the event:

* Volunteer for speed networking or resume building sessions * Sponsor a student with a dinner when you register for the event * Have your company donate for the "goodie bags" given to the students, and get recognized * Interact with the students at the event and answer their questions about the profession

Responsibilities include product development for customers, ingredient interaction studies, as well as documentation and systems management. Chicago suburban location. Travel up to 10%.

C. PRINCIPAL NUTRITION SCIENTIST: Provide leadership in ICD on nutrition science and regulatory and will collaborate on teams that will include nutrition science, regulatory, quality, product development, marketing and food science.

D. PLANT MANAGER: New state of the art retort beverages processing facility is seeking an experienced plant manager to develop and lead operations for an east coast location. Responsibilities include; provide leadership and direction to all factory operations and performance, manage plant resources including assets, inventory, etc., ensure compliance with all industry, Federal, State and local regulations. Requirements; Associates degree (Bachelor’s degree preferred), 5+ years food/beverage production/plant management, SQF level 2 facility management, manufacturing/plant start up experience, P&L responsibility.

E. QC TECHNICIAN: Ensure that product packaged will meet customer specifications. Responsibilities include referencing production schedule as a source document, understanding all information on specification sheet, knowledgeable of the quality characteristics of the product packaged, accurately document quality characteristics on the QC Hourly Checklist, understand, perform and monitor sample collection, metal detection, allergens, HACCP, GMP, etc. Requirements; HS Diploma, some college with emphasis in food science/biology a plus. One year of food industry experience is preferred and knowledge of organic processes a plus.

F: FOOD SCIENCE TECHNICIAN: A fast growing food ingredient company is looking to add an experienced Food Science Technician to its Applications team. Responsibilities include developing key applications for Meat & Dairy Industries, foster technical to technical relationships with customers and maintain up to date technical knowledge with regard to new technologies and ingredients. KNOW YOUR EMERITUS MEMBERS... Richard I. Mateles

Current: Emeritus Member

I graduated in 1956 from MIT with a bachelor's degree in food technology and went on to receive my master's and doctor of science degrees. I joined IFT around 1956 and have been a member ever since. My career has been partly in academe and partly in industry. In 1959-60, I spent a post-doctoral year at the Laboratory for Microbiology at the Technical University in Delft, The Netherlands, and managed to visit many industry and academic labs in Denmark, Sweden, France, The Netherlands, and Italy engaged in biotechnology, industrial microbiology, and applied microbiology.

Following the post-doc, I was recruited by MIT to lead the biochemical engineering program, which I did until 1968. During this period, my students and I were active in research with numerous publications dealing with aflatoxin, continuous culture, tryptophan production by fermentation, oxygen transfer and heat transfer in fermentation, and single-cell protein. The program expanded with the addition of Arnold Demain, Daniel Wang, and Charles Cooney.

In 1968, I accepted a two year appointment to set up an applied microbiology department at the Hebrew University of Jerusalem, Israel; and this was eventually extended to twelve years. I taught quite a bit including courses in food microbiology, biochemical engineering, elementary chemical engineering, industrial microbiology; and participated in courses such as microbial physiology. My research and that of my students expanded to look at mycotoxins other than aflatoxin, metabolites of actinomyces, plant cell culture, and continuous culture. I also was instrumental in forming a company, Makor Chemicals, to produce research chemicals and biochemicals, (among the first of which was aflatoxin), and ran a small unit affiliated with the university that carried out contract R & D in fermentation development for local industry.

In 1980, I returned to the U.S. I sought an academic position unsuccessfully since the time constant for action at Universities was too large. However, I was presented with a choice between a wonderful process development position at Merck and a broader position at Stauffer Chemical in which I would

be responsible for directing R & D in many areas. I chose the latter and did not regret it! Stauffer was a major producer of pesticides; food ingredients including MSG, phosphates for cheese emulsifiers, polishing agents, leavening agents; seeds; specialty chemicals such as flame retardants, catalysts, synthetic lubricants, and Crystex; and commodity products such as phosphorus, chlorine, and regenerated sulfuric acid. When I joined, I knew little or nothing about some of these technologies, but I learned that the basic questions apply regardless of product or technology: What is the goal of the R & D? When can it bear fruit? What resources are required? Who are our competitors and where do they stand?

In 1988, Stauffer was terminally dismembered and divided among ICI, Akzo, and Rhône-Poulenc. I secured a position at IIT Research Institute running their Applied Sciences businesses and moved to Chicago. In 1990, a new president arrived at IITRI, and a year and a half later, I departed. As an academic, I had always had a considerable consulting activity, and I now devoted full-time to it. Most of my assignments dealt with helping companies improve their fermentation processes, evaluating R & D programs or projects in connection with acquisitions or investments, and providing expert testimony in patent or tort litigation.

My activity in the Chicago section of the IFT has been limited to attendance at section meetings, service for several years as a member and as chairman of the Tanner Award Committee, and a term or two as an Alternate Councilor.
