Tourist : There are many dishes to choose from the menu. I don ’t know. what to choose for the main

course.Guide : Well , we do not have the main course.Tourist : Really? And what does `kap-kao΄ really mean ?Guide : `kap-kao΄ may be literally translated as `with

the rice.΄ This is because a plate of rice must

be accompanied with at least a dish of `kap-kao΄.

Guide : It depends . In most Thai families two or

three dishes of `kap-kao΄ are served

with rice. The variety of dishes served

with the rice is limited only by the cook’s

time, patience, budget or imagination.

Tourist : There are many dishes of food. What do we eat first?Guide : When we have a Thai meal, everything is served at once and diners take this or that according to

individual taste, combining or tasting separately each dish with rice. Tourist : I see. But don ’t you use a knife and a fork?Guide : Modern Thais eat mostly with spoon and fork. But those who eat in the old-fashioned way eat with the

fingers.

Tourist : How do Thai people cook rice?Guide : There are two ways of cooking rice. You can cook by theabsorption method or you can steam it. Steaming takes muchlonger than cooking it directly in the water. Now most homesuse electric rice-cookers to cook the rice. However, rice must beserved directly it is ready because it will go hard and dry if left

to stand.

Tourist : Do you cook rice with salt?

Guide : Rice in Thailand is never cooked with salt. Most dishes are accompanied by seasoning

and sauces, which are already strong and salty.

Tourist : Do you need anything very special in the way of equipment to cook Thai food?Guide : You don ’t need anything very special. Thai

food uses ground spices and herbs for flavoring , so a mortar and pestle for pounding is needed . A wok is needed for

stir-frying technique that is used in many dishes.
