Hello, Everyone! Hope you had a wonderful summer and a great start to the fall season. We have had a great start to our year, including our first member meeting and member social! Thank you to everyone who came out to these events! October’s events included the RD/Student mentorship program on October 19th at CHS Pineville which was a great success and the October Journal Club on October 25th. Other exciting things coming up in the next few weeks:
- Volunteer with Second Harvest Food Bank of Metrolina - November 2
- CDA Member Meeting on Food Allergies - November 14 at CHS Pineville

Volunteer Activities and Opportunities with CDA
The first volunteer opportunity of the 2017-2018 membership year was a great success. Four CDA members participated in the gleaning event with the Society of St. Andrews in September.
Volunteers gleaned nearly 600 pounds of muscadine grapes. The grapes were distributed to several low-income communities throughout Charlotte including a senior nutrition site in
Shamrock.

Upcoming Opportunity to Volunteer
Volunteers will be inspecting and sorting product during this event. It will be an excellent opportunity to network for dietitians, interns, and students.
Date: November 2
Time: 6-8 PM (Volunteers need to arrive 15 minutes early to sign in and attend a brief training.)
Registration will be capped at 12 volunteers. Location: Second Harvest Food Bank of Metrolina (500 Spratt St B, Charlotte, NC 28206)

Taylor Soloff Scholarship
The Charlotte Dietetic Association is thrilled to announce the Taylor Soloff Scholarship.
Taylor was an integral member of the Charlotte Dietetic Association, with whom she selflessly volunteered her time and energy to serve on the board and contribute to advancing the
profession of dietetics. Through her position as Volunteer Events Coordinator, she gave back to the community and our profession in many more ways than can be counted.
After a long and hard fought battle with cancer, Taylor was taken from us too soon in November 2016.
By creating this scholarship, we want to honor Taylor and ensure that her legacy will not be forgotten. This scholarship will continue to pay it forward by supporting five dietetic students
through funding for the Charlotte Regional Meeting.

Volunteer Events Coordinator: Courtney Lenhart
Courtney Lenhart, MS, RD, LDN has served as the CDA Co-Webmaster for the past 2 years and will be serving her first year as Volunteer Coordinator. She is employed by Mecklenburg County Public Health providing MNT and nutrition education to K-12 students in Charlotte-Mecklenburg Schools. Courtney also works clinically one weekend a month. In her spare-time she enjoys trying new recipes, running, yoga, cycling, and spending time with friends, family, and her dog.
Membership & Awards Chair: Chantal Otelsberg
Chantal Otelsberg, MS, RDN, LDN is a Corporate Wellness Dietitian with
private practice Transcend Nutrition Counseling, out of Charlotte, NC. She is a graduate of
Winthrop University’s Master of Science Human Nutrition program. She completed her Dietetic
Internship through Lenoir-Rhyne University Solmaz-Institute in 2016 and very much
enjoys clinical nutrition and general nutrition education. She became a dietitian to help others
make the best nutrition decisions for themselves and their loved ones. Her favorite quote is “Let food be thy
medicine and medicine be thy food” -Hippocrates. "Preventative healthcare is critical in saving our current
population and those in front of us. Knowledge is power. The more you know the better choices you can make."
Nutrition fascinates her and she is dedicating her career to educating and counseling others in proper nutrition.
Welcome Committee Chair: Kerry Barbera
Kerry Barbera, RDN, LDN completed her degree in nutrition and dietetics from the University of Alabama. She is originally from Boston, but has been living in Charlotte since 2006 with her husband and 2 dogs, Carley and Simon. She is currently working in the wellness setting at Medi-Weightloss. When not surfing Pinterest for new recipes, you can find her in the kitchen cooking. She loves trying out or creating new recipes. Her other
hobbies includes tending to her organic garden, visiting the local farmers market, and working out at Orange Theory.

Fall Recipe Pumpkin Oatmeal Smoothies
Taryn Burke, Dietetic Intern, WU and CDA Student Representative
Yields: 2 servings
Ingredients:
1/2 cup old fashion oats
1 cup almond milk
6 oz. Greek yogurt
2 bananas
½ cup pumpkin puree
1 tsp. pumpkin pie spice
1-2 tsp. honey, depending on sweetness preference
4-6 ice cubes Preparation:
1. In a blender, add the oats and blend until oats are a fine powder 2. Add the rest of the ingredients, starting with the milk and finishing with the ice cubes 3. If you are using frozen bananas, you can omit the ice cubes 4. Blend until smooth and serve immediately
Analysis: With sweetened almond milk: 335 kcals, 14 g Pro, 63 gm CHO, 8 g fiber, 5 g total fat, 2 g saturated fat, 205 mg Na; With unsweetened almond milk: 307 kcals, 14 g Pro, 56 g CHO, 8 g fiber, 5 g total fat, 2 g saturated fat, 205 mg Na
