LOCAL RECIPE of The week - Ugali

Ugali is a meal I enjoy eating a lot. Most people do not know how it is done. As part of the recipe of the week, Ugali , this starchy, polenta-like side dish is the chosen one. Ugali is usually served as an accompaniment to meat or vegetable stews,

greens or soured milk.

I was taught that to eat ugali, pull off a small ball of mush with your fingers. Form an indentation with your thumb, and use it to scoop up accompanying stews and

other dishes.

Or you can form larger balls with your hands or an ice cream scoop, place them in individual serving bowls and spoon stew around them. Curious to taste the East African staple? Here’s how to cook ugali at home (serves 1):

Procedure

Heat half a liter of water until the water boils. Add a handful of maize flour to the boiling water. After the water reaches a

boil again, add more maize flour, stirring slowly. Pause the stir-ring for 10-20 seconds to allow the ugali to cook. Repeat stirring

and pausing until a thick consistent mixture is formed. Let the ugali rest on fire for about three minutes—or until the smell of baking ugali fills the air. Turn the ugali onto a serving plate. Serve the ugali while hot. Ugali is commonly eaten with stews of vegetables, fish, beef, or chicken.

Loanof 100 Million given to Tanzania to reach the 8 Million Visitors By 2025

The Tanzanian tourism sector has been recently awarded with a USD 100 million loan from the International De-velopment Association (IDA) from the World Bank (WB) group, for the implementation of the Tanzania Resilient Natural Resources Management for Growth Project that aims at strengthening the country’s tourism products and value chain.

The project is focused on four priority areas of the Ruaha National Park, Udzungwa Mountain National Park, Mikumi

National Park, Selous game reserve and includes communities around them than could benefit from tourism economic activities. The project is also part of WB’s plan to help Tanzania to reach the 8 million visitors a year by 2025 up from above 1 million in 2014 that is focused on diversifica-tion of geographic locations and tour-ism segments, integration of tourism activities at existing attractions and improvement in the quality of gover-nance in the tourism sector.

The project will also enable the govern-ment to work on the development of a new tourism circuit in the southern region and upgrade of the Tunduma-Sumbawanga-Mpanda road to allow visitors to visit more than one site con-nection the country’s southern and western regions, explain Mr. Makani.

Nails Long or Short

I personally get confused as to whether to keep long nails or short nails. I am sure some of you go through the same ordeal. To help my confusion, I have a couple of pros from each side that make me decide what to do. They are:

•Short Nails – Pros

1. Less polish used, less re mover, etc.2. I get "cleaning fever" when I have short nails.3. Typing on the phone and computer is easier.4. No visible nail line to contend with for sheer polishes.5. Easier to get product out of little pots - like cuticle balm, wrinkle cream, etc.

•Long Nails – Pros

Clean up. I have none with longer nails but it's hard not to get polish all over your fingers when they're short.Can get the backs on earrings, work clasps on necklaces.Can open soda cans.Much room for nail artEasier to wash my curly hair with long nails since I used them in place of a comb, which would just get stuck.

For me, I consider the season, my mood along with my pros guide to grow my nails. You can try it too.

Tarangire National Park is one of Africa's most underrated parks. Being close to Serengeti and Ngorongoro, Tarangire National Park is usually assigned only a day visit as part of a larger northern circuit safari. It's a place where elephants dot the

plains like cattle, and where lion roars and zebra barks fill the night, all set against a back-drop of constantly changing scenery.

Tarangire has the second-highest concentration of wildlife of any Tanzanian national park (after Serengeti) and reportedly the largest concentration of elephants in the world. The Tarangire ecosystem, with the park as its heart and soul, also has more than 700 resident lions and sightings are common.

With a range of environments and good game, Tarangire's birdlife is also varied – and over 500 species have been recorded here, including ashy starlings and large flocks of beauti-ful yellow-collared lovebirds, both of which are endemic to Tanzania.

Tarangire's vegetation comprises of mostly dry, open woodlands, which include thorny acacia thickets and lots of its signature baobab trees.
