Thiercelin is the spice of lifeDerived from the dried stamen of a particular variety of crocus flower, saffron is the defining ingredient in some of the world’s greatest dishes. It is also the most expensive spice in the world – saffron stamen can only be picked by hand and 250,000 are needed to make just half a kilo. Fortunately, a little saffron goes a long way and, it has kept French spice supplier Thiercelin – who set up the first laboratory for saffron quality control – in business since 1809. Drawing on a host of unique saffron-infused recipes, the company has an international reputation for this much-loved golden yellow delicacy, as well as many other spices and condiments, including yuzu syrup and green apple mustard.

Sweet little somethingsWhen the French town of Nancy’s Benedictine nuns hit hard times during the French Revolution they saw the light in macaroons, selling their secret recipe perfected over many years to support themselves through their shop Maison des Sœurs Macarons. Still famous for its mouthwatering macaroons, this old-world confectioner also specialises in bergamots, which are homemade, traditional hard candies that taste tantalisingly of Earl Grey tea. Both bring to life a 200-year-old Nancy heritage that attracts sweet-toothed aficionados from miles (and even countries) around.

Smart French cookiesThe fact that members of 18th-century royal courts such as Louis XVI enjoyed dipping the Pink Biscuit of Reims in Champagne might seem surprising, but French gourmets of all standing have long been fans of the humble teatime accompaniment.
