Q has everything you need this season for those wonderful days spent entertaining family and friends with the coast’s BEST in fresh food including the award winning meats at Bermuda Butchery and the freshest farm grown fruit and vegetables at Q Growers Market. We have showcased more home entertaining ideas and also the scrumptious choices our Q Dining has to offer inside this edition of Q News. There is always something new happening at Q and we love being able to share the exciting news with you all. At the end of 2010, stage one of our shade sail installation was completed in the southern carparks opposite JB Hi-Fi and Clive Anthonys Appliances Only and also the carpark adjacent to Supercentre News and Mermaid Junction Medical Centre. These shade sails have been of great benefit to the centre and to our customers by providing invaluable weather protection and even more convenience. We are very excited to announce that stage two of the shade sails are on their way with installation works underway in the western carpark adjacent to Bermuda Street opposite the Coles and Woolworth’s supermarket entrances. Most of these works will be happening at night to minimise any disruption during your shopping day and we anticipate that our brand new shade sails will be up and ready for you to park under by mid November – just in time for Christmas! Please note that height restriction bars will be installed at the entrance of the carparks, please be aware and take care when parking. We hope you are enjoying the new shade sails at Q and we would also like to take this opportunity to thank you for your patience during this process. We know you will love the new retailers we have welcomed recently to Q – Roses Jewellery and Repairs, The Shoe Bar and Don Pepe Spaghetti Factory. Roses Jewellery has opened in Shop B15 next to Soie Nails offering a gorgeous range of gold and silver jewellery, costume jewellery, watches, handbags and other accessory items that you are sure to love. Adding to the fashion mix, The Shoe Bar has joined forces with Urban Honey combining the latest fashion trends and fabulous shoes. Think stylish, sassy, mixed in with a little sparkle… and you have The Shoe Bar! Last but definitely not least... Don Pepe Spaghetti Factory has now opened serving up delicious pizza, pasta and other European specialties – read all about Don Pepe on page 5. In other retailer news, we were thrilled to welcome Masterchef’s 2010 winner, Adam Liaw to Noodle Box at Q for the official launch of Adam’s new Gourmet Range now available at Noodle Box – read more and check out the photo of Sue and I with Adam on page 4. We also welcome Shane, who is the new owner of Michel’s Patisserie. Shane has just completed a brand new refurbishment of the store and looks forward to meeting you all. There is no frozen dough or premixes, only real ingredients – flour, yeast and water and they bake from scratch! These ingredients are added one by one to create bread that is so much more than just toast and sandwiches, they are gourmet breads created for you to not just be an extra plate on the table, but to be an integral part of the meal. The ideas behind these delicious breads are limitless and you can use them to create an entire meal… try using slices of the Pasta Dura loaves, rubbed with garlic, brushed with oil and grilled until crisp and golden becoming the perfect finish to a Caesar Salad. Or spread some cream cheese onto a slice of Cape Seed Bread, add some baby spinach leaves, lashings of smoked salmon and a squeeze of lemon juice for the perfect lunchtime treat! And who can go past the old time sweet favourite Bread and Butter Pudding, made from our authentic Sourdough Vienna loaf served with fresh berries and cream. Spring is all about colour and what better way to introduce colour into your life than with bags of fresh fruit and vegetables. Supplying only the freshest and “just” picked produce, sourced and delivered directly from Australian farms. Q Growers Markets range of vegetables is full of nutrients and will literally put a spring in your step. A good rule of thumb is the more colour on your plate, the greater the variety of nutrients. If you’re going to try the delicious pizza recipe on this page, make sure you drop into Q Grower’s Market to grab the freshest start of season zucchini’s and there is always plenty of fresh parsley in our range of garden fresh herbs.

Ingredients

2 Bakers Delight pizza bases½ cup roasted red capsicum strips1 medium zucchini8 button mushrooms, sliced½ cup black olives150 grams feta, crumbled1 cup of tomato passata½ cup of shredded mozzarella ½ cup of fresh parsley leaves

VEGETARIAN PIZZAMakes 2 pizzas, serves 4 with salad

Instructions

Place 2 metal trays in the oven and pre-heat to 220°C.

Using a peeler, slice the zucchini lengthways to make

ribbons. Grill ribbons either side for 2 minutes in a grill

pan. Spread passata over bases, top with mozzarella,

mushrooms, olives, capsicum, zucchini and feta. Place on

a hot tray and bake in oven for 10 minutes. Remove from

oven and sprinkle over fresh parsley leaves.

As we all know in the fashion world, it’s all about the cut and in the Lamb Fashion Steak Collection, it couldn’t be more true. Cut influences a meal more than the average person realises… a little bit of fat from here or there and you have none of those unshapely fatty deposits to ruin the line and don’t we all love the leaner look.

A good cut nicely around the ribs leaves you with the perfect rack; the hard work is done for you. All that remains is to dress it up and put it on the table. Or, if the rack isn’t your style, there is always the option of a succulent juicy leg or sizzling shoulder but remember to take it slowly… the secret to a good leg, is not to rush it - around 4 hours and not too hot, around 140°C is ideal. When the leg is done, it will be meltingly tender and fall from the bone. Perfection!

If you’re still stuck on how to put your best foot forward, here are our top suggestions to keep you on trend this season.

Butter-flied Lamb Legs or Shoulders are an ideal cut for cooking on a covered barbecue grill plate. A fantastic choice for a roast lamb meal.

A Rolled Shoulder of Lamb suits slow roasting just beautifully. Cook at around 140°C for 4 hours or a little faster at 160°C for 2 – 3 hours.

Lamb Steaks are perfect for barbecuing, pan-frying, stir frying and even to be made into kebabs. No trimming, easy to prepare and simple to cook.

An Easy Carve Lamb Leg is partially boned and tied so it’s compact. Perfect for oven or barbecue roasting. You can slice it like a loaf of bread. Twist of lemon, thyme and rosemary are the perfect partners to Spring Lamb.

Loin Chops suits barbecuing, char grilling and pan frying. Cook lamb on one side until moisture rises. Turn lamb once only.

With technology and travel within our reach, we all are aware that our world is getting smaller. We are surrounded by cultures different to our own and we can experience firsthand what makes them different. For most of us food is the natural starting point of this experience but it can also be a little daunting. Let’s head to the al fresco dining precinct, Q Dining and take out some of the guess work!

Japanese cuisine is based on combining staple foods like rice or noodles served in a soup. Flavours are added by the addition of meat, fish etc. and then also a sauce such as soy sauce. Unlike western meals where a variety of techniques are used, Japanese meals usually centre on a cooking technique such as sashimi. The Japanese chefs at Tokyo Kitchen use traditional methods of food preparation that are able to give you a food experience just as good as you will find anywhere in Japan. It is also a favourite with the locals for the mouthwatering sushi that you can see on display. It is interesting to note that what is now the most well known Japanese dish was used in the 4th century BC as a way to preserve the food inside the rice. Only in the 8th century AD, did it become a staple of the Japanese diet.

Chinese cuisine is usually named after a particular region due to the vast size of the country e.g. Szechuan Chicken. Most meals comprise of a starchy dish such as rice or noodles - it is interesting to note that these noodles are the original form of spaghetti taken back to Italy by Marco Polo. To accompany this starchy dish there would be dishes of meat and vegetables with everyone helping themselves to pieces from the various dishes. The communal aspect of the cuisine also makes it easy to explain - it is a very “everyone” cuisine which means that there is a broad range of flavours from spicy hot to sweet and sour. At Fast Wok they also have a selection that will keep everyone happy and like the other restaurants at Q Dining you can choose to either eat in or take away.

Thai cooking is known for its subtle and delicate flavours. But don’t be mistaken into thinking that it is soft on you - we have all experienced the kick of a hot green curry. At 88 Thai you can experience the distinct layering of flavours that sets this style of cuisine apart from the others. It is based largely on coconut milk and basil with a sweet and spicy aroma. It is a marriage of centuries-old Eastern and Western influences harmoniously combined, with harmony being the guiding principle behind each dish.

If after all of this you would prefer to try making these for yourself, Q also has the solution for you with two specialty grocers, Exotic Asian Groceries and Sunmart Japanese Groceries. Sushi is a great place to start when it comes to making your own Japanese meal at home. With just a bamboo mat and a sheet of Nori (that’s the ‘wrapping’) - you are on your way. Now is not the time to stop though, take the plunge and try something new. Japan is famous for their soups so why not try making your own miso soup.
