The menu’s best se l lers inc lude: The Athinaiki , a “ forgot ten-by-many” recipe that is nonetheless an emblematic dish of the urban c lassic cuisine enters Reeza’s menu in a del icate and exot ic version. The Crab vs Dolmas, an appetizer that encloses land and sea in a “bi te” and should not be missed by any table .

The Greek ‘summer ’ salad combines aromas and f lavours f rom the chef ’s memories , and brings to mind our own summers in the vi l lage. The Iberic pork and Beera is an ode to Mykonos ’ land, as the is land’s pigst ies and local breweries jo in forces to create a top-notch dish. I t is worth not ing that this year ’s menu also features vegan choices. The sour yogurt wi th cherry and chocolate and the peach carpaccio round of f your cul inary experience at Reeza in the best way. Sauté the rooster over medium heat unt i l caramel ized and remove f rom heat . Sauté the onions over low heat unt i l golden, add the gar l ic and cook for 2 more minutes to re lease their oi ls . Add the tomatoes and set aside for 10 minutes to lose some moisture . Add spices, sal t and pepper, and some sugar. P lace the rooster in the pot and then in the oven at 180 for 1 hour or unt i l cooked. When cooked, a l low i t to reach a warm temperature and then shred the rooster, drain any excess ju ice and mix the rooster wi th the sauce, parmesan, t ruf f le oi l and pars ley . Season to

taste .

Add al l the ingredients in a mixer and mix at a low speed. Remove and knead the dough with your hands unt i l i t is f i rm and shiny . A l -low to rest for 4 hours . Rol l out the pasta into thin sheets using a pasta-maker and cut i t wi th a r ing mould to make the tor te l l ini . P lace

the f i l l ing in the middle of the pasta, egg wash the edges and fo ld i t to into tor te l l ini or ravio l i . Let the tor te l l ini dry for 10 minutes .

G R U Y E R E F OA M

Heat the heavy cream over medium heat unt i l i t reduces in hal f. Add the grated Gruyere cheese and st i r the whole t ime so that i t doesn’ t s t ick to the bot tom of the pot . When complete ly combined, mix with a hand mixer, add sal t and pepper and pass through a

sieve, just in case any lumps were formed.Place in a s iphon with two chargers of N2O.

ARCHAEOLOGICAL MUSEUM OF DELOSIt is considered one of the most important museums, especial ly for the history of ancient Greek sculpture , and i t is located on the sacred is land of Delos . The present exhibi t ion inc ludes nine hal ls , s ix of them exhibi t s tatues and re l iefs found in Delos , const i tut ing one of the most important archaeological co l lect ions in the wor ld .
