(808) 218-5546 ikaikacomm@gmail.com HONOLULU, HI – The Hawaii Professional Firefighters Foundation (HPFF) has released its very first cookbook featuring recipes from Hawaii firefighters, titled “Recipes from Hawaii’s Firehouse Kitchens.” Initial copies were offered for sale to firefighters first, and are now available to the general public for $18.95 each. Proceeds will fund the mission of HPFF, the nonprofit organization of the Hawaii Fire Fighters Association (HFFA), which supports firefighters and community projects statewide. To order your cookbook, please contact the HFFA office at (808) 949-1566 or email us at cookbook@hawaiifirefightersfoundation.org. Cash, checks and credit cards accepted. Book(s) are available at the HFFA office at 1018 Palm Drive, Honolulu, Hawaii 96814 in Makiki (next street Diamond Head of Zippy’s Makiki, going one-way from Young Street). We can also ship via USPS Priority Mail for an additional $6.95 S+H per book, to anywhere in the U.S. Although not credited in the cookbook, Daisy Canite and a cookbook committee comprised of volunteers, worked tirelessly with our firefighters, recipe tester and photographer Maryellen Markley, who also serves as HPFF Board President, and publisher Mutual Publishing to create a colorful recipe book that reflects Hawaii’s unique local flavors, as well as our firefighters’ personalities. Canite called it a “labor of love,” and is looking forward to a Volume II! One of Canite’s favorite recipes was sent in by retired Honolulu Fire Department firefighter Renny Tsark, as follows, and perfectly reflects the cookbook’s “personality.”

Rookie Pork Butt Renny Tsark, Retiree Honolulu Fire Department This is the dish I made the first time I had to cook as a rookie at HFD Station 2 in 1977. This was the test as to whether I would stay or be transferred…I passed! 1 can Campbells® tomato soup 1 can (same can) filled with shoyu 1 can (same can) filled with sugar 1 lrg. pork butt Mix the tomato soup, shoyu, and sugar well in a large pot. Place the pork in the sauce and simmer uncovered for 3 hours, turning the meat occasionally. When cooked, the meat should be soft and break apart easily. Shred the meat with a fork and place on a platter with steamed cabbage wedges. Pour the sauce through a strainer and put it back in the pot. Bring to a boil and thicken the sauce slightly with water and cornstarch. Pour the sauce over the pork and cabbage and serve. --------------------------- HPFF encourages the public to purchase “Recipes from Hawaii’s Firehouse Kitchens” directly through their office, as all of those funds raised will go directly to the organization.
