Vitello tonnato

Veal with tuna sauce

Recipe:

(for about 6 people)

Ingredients:

• 800 g veal loin (the eye-round)

• 3 tins of tuna packed in oil

• 3 boiled eggs

• a spoon of olives

• a spoon of capers

• an anchovy

• a mayonnaise jar

Method:

1) simmer the meat in a pressure cooker for about an hour

2) chill the meat then slice it

3) lay the slices of meat on a serving dish

4) to prepare the sauce: mix the ingredients in a blender till you get a smooth sauce;

5) spread the sauce on the meat and garnish as you like.

Potato gateau

The potato gateau comes from France but is a traditional recipe in Calabria .

I have chosen it because it’s one of my favourite recipes and because it is easy to cook.

Ingredients

• Ten boiled potatoes

• Grated Parmesan cheese

• Two eggs

• Some breadcrumbs

• 30 g Butter

• 200 g Ham

• 250 g Milk

• 250 g of diced mozzarella cheese

Utensils

• 1 bowl

• 1 baking pan

• 1 potato masher

• 1 knife

• 1 pot

Method

1. Boil the potatoes and peel them

2. Mash the potatoes with a potato masher

3. Put the potatoes in a bowl and mix them with two eggs some milk and some Parmesan cheese

4. Grease the baking pan with butter, make a layer of dough and put diced mozzarella cheese with some slices of ham

5. Coat with the remaining dough

6. Sprinkle with breadcrumbs and butter flakes

7. Bake for 30 minutes at 180 ° degrees.

Pizza

Maybe pizza is the most famous Italian food. This dish comes from Naples. Naples is a beautiful city in the South of Italy. You can eat pizza in “pizzerias”, but also in restaurants and at the baker's. Cooks, bakers, but also mothers cook pizza. I ate pizza for the first time when I was a child at my sister Valentina's birthday party. I like pizza or, better, I love pizza. I usually eat it on Saturday evening with my family.

Ingredients:

• 250 g of flour

• 1dl of water

• 15 g of yeast

• salt

• 1 kg of ripe tomatoes

• 250 – 300 g of mozzarella cheese

• oil

• basil

• salt

Method:

• dissolve the yeast in warm water, add 50 grams of flour, stir while adding the necessary water, knead the ingredients and let rise for 15 minutes

• pour the remaining flour on a surface and add a pinch of salt

• place the yeast preparation and knead the mixture to make a soft dough then let it rise until doubled in volume

• divide the dough into two parts, roll them out to form two disks

• spoon on the tomatoes

• sprinkle with mozzarella cheese, basil leaves and pour a drizzle of olive oil

• bake in preheated oven at 250° C for about 15 minutes

Gnocchi alla Romana

This dish comes from Rome, Italy. We usually eat it all the weeks, on Saturday with our family and

relatives. I, Alexandra, ate” Gnocchi alla Romana “ for the first time when I was 6 years old, at

my grandparents’ house. It’s a good dish that can be cooked very quickly.

Ingredients:

250 g of semolina

1 litre of milk

100 g of grated Parmesan cheese

100 g of butter

2 egg yolks

Salt

Method:

• Place the milk with a pinch of salt in a pan on the stove.

• When it boils pour the semolina.

• Cook on a medium flame.

• Stir vigorously with a whisk to avoid lumps.

• Cook the mixture for a few minutes.

• Remove the pan from the heat; add 70 g of butter, 30 g of grated Parmesan cheese and 2

eggs yolks.

• Pour the mixture into a tray and spread with a spatula.

• Take another pan and butter it. It will be used to cook the “gnocchi ”.

• Turn the oven to 200 degrees C.

• With the help of a cup, cut the previously prepared mixture into lots of disks of

approximately 3 cm of diameter.

• Arrange the disks into the buttered pan, sprinkle the remained Parmesan cheese.

• Place the “gnocchi alla romana” in the oven for about 20-25 minutes until a golden crust is

formed.

Spaghetti carbonara

I like this dish because I love eggs and bacon.

Ingredients:

Spaghetti: 350 g

Bacon: 150 g

5 eggs: 4 yolks + 1 egg

Parmesan cheese: 100 g.

Method:

• Brown the bacon in the pan without oil.

• Break the eggs in a bowl, grate the Parmesan cheese and stir.

• After a while turn off the heat under the bacon.

• Pour the bacon into the bowl and stir.

• Boil the water in the pot and put in the spaghetti.

• Cook the spaghetti then drain and put them into the bowl and stir.

Penne alla papalina

I have chosen this recipe because this is a dish that I really like. You can serve it as a first course and it is easy and quick to cook.

Ingredients : Utensils:

400 g of pasta a small saucepan

30 g butter a pot

A tablespoon of oil a bowl.

Half an onion

25 g of dried mushrooms

50 g of bacon

2 egg yolks

3 tablespoons of cream

4 tablespoons of grated Parmesan cheese

Salt

Pepper.

Method:

• Soften the mushrooms in warm water.

• Heat the oil and the butter in a small saucepan.

• Add the chopped onion, fry it then add the diced bacon, and, when browned, add the mushrooms drained and coarsely chopped.

• Add salt and pepper; cook on a low flame for about 15 minutes.

• In the meantime, boil the pasta in plenty boiling salted water.

• Pour the egg yolks into a bowl, add the cream and the Parmesan cheese and beat them lightly with a fork.

• Drain the pasta and season with the sauce first, then with the beaten eggs.

I have chosen this recipe because I really like meat, above all when it’s covered or grilled, in fact this recipe tells how to cook breaded veal cutlets, a typical

MILANESE DISH.

Ingredients

• 4 veal loin chops

• 70 g butter

• 1 egg

• ½ bowl of flour

• ½ bowl of breadcrumbs

Method

• Beat the veal loin chops with a meat tenderizer

• Coat them with flour

• Beat the egg in a bowl and dip the veal loin chops in there

• After that coat the meat with breadcrumbs

• Melt the butter in a frying pan till it foams and then put the veal loin chops and cook them on a low flame

• Finally sprinkle with salt and serve!

We often make a cup of hot chocolate when we are with our friends.

It is an easy and quick recipe: it is perfect for a break with friends.

Ingredients

Milk

sugar

bitter cocoa powder

dark chocolate

20 g flour

Preparation

1. pour the cold milk into a pan

2. incorporate the flour and sieve the cocoa over it

3. stir the mixture with a whisk to eliminate lumps and cook on a low flame

4. break the chocolate bar and melt it in the microwave oven

5. when the milk starts boiling add the chocolate

6. whisk to blend till it thickens

7. add sugar to taste

APPLE UPSIDE-DOWN CAKE

Ingredients:

-190 g of sugar

-150 g of butter

-2 eggs

-180 g of flour

-2 teaspoons of baking powder

-3 apple

Method:

1)let the butter soften removing it from the fridge an hour before preparing the cake.

2)put 110g of butter in a bowl, add 140g of sugar and mix until soft.

3)break and mix the eggs in the bowl

4)add the flour, the baking powder, a pinch of salt and blend.

5)melt the remaining butter in a pan, sprinkle with the remaining sugar and caramelize it .

6)pour the caramelized sugar into a baking mould

7)lay sliced apples then pour the dough and bake in a preheated oven(180°) for

30/40 minutes .

Chocolate Salami

Ingredients Utensils

150 g butter saucepan

200 g dark chocolate spoon

150 g sugar fork

180 g tea biscuits blender or meat tenderizer

2 eggs 3 bowls

parchment paper

aluminium foil

Method:

1. Melt the butter in a bowl placed on top of a pan of simmering water (you can also safely use the microwave, but pay attention to time! ) . Add broken pieces of dark chocolate and stir until melted. Then remove from the heat and let the mixture cool for a few minutes.

2. Make biscuits crumbs using a blender or crushing them in a bowl with a meat tenderizer

3. In a bowl whip the eggs with two tablespoons of sugar. Then incorporate the mixture and the remaining sugar . Continue to whisk till you get a foamy cream.

4. Incorporate the biscuit crumbs to the mixture using a spoon and stir until the crumbs are completely blended . The dough is now ready: you can choose to prepare a big salami or split in two.

5. Put the dough onto a sheet of parchment paper and roll it up to give it the typical salami shape. Then wrap the salami in aluminum foil and place it in the fridge to harden for two hours.

6. Slice the salami and serve it as a dessert .
