Cut each grapefruit in half and remove sections, placingthem in a large non-metal mixing bowl. scrape out 6 ofthe grapefruit halves and set them aside.

2 egg whites
1 cup sliced almonds
1/2 cup whole wheat bread crumbs or whole wheat cracker crumbs
1/4 cup chopped fresh basil
3 tablespoons olive oil
2 tablespoons ground flax meal
2 teaspoons Dijon mustard
1 teaspoon salt, divided
1/4 teaspoon freshly ground black pepper

Preheat oven to 425°f. Coat a large baking sheet with cooking spray; set aside.
Place almonds, flax meal and salt on a large piece of wax paper or aluminum foil. mix with fingertips until the flax iswell combined; reserve.

Peel, then slice grapefruit and oranges into 1/4-inch thickrounds. arrange citrus slices, overlapping slightly, in a deepplatter. in a skillet, cook sugar over medium heat for about10 minutes; swirling sugar in skillet when it begins to melt.Continue cooking and swirling until sugar melts completelyand becomes deep amber in color. remove skillet from heatand drizzle caramelized sugar over fruit.
