During his time as head chef at award winning Margan Restaurant; Michael focused his food style on working closely with local farmers, producers and estate grown produce. Michael has always taken an interest in working with meat, so when the opportunity was presented 4 years ago to run his own butcher shop in Branxton it was a very easy decision. The name Hungerford Meat Co. is a homage to the original butcher in town, Claude Hungerford. Today, Michael continues this tradition of smoking meats, out

the back in the old smoking room that Claude Hungerford himself once used. It’s all part of Robinson’s grand plan to get people to re-engage with the meat we eat in a more perceptive and meaningful way. The butcher specialises in using the whole animal, with very little waste. Michael’s ambition for the future is to take the retail shop to 100% locally sourced meat from the surrounding small farms, with full traceability of where the meat came from and what the animals are being fed. “Branxton is a great little town with so much potential” Michael says. “It presents a great opportunity to build on the food and wine aspect of the Hunter Valley by modernising the offerings that are available yet retaining the towns sense of history. “
