CORN DOG MUFFINS
Makes 20 muffins Ingredients
2 (8.5 ounce) packages cornbread mix 2 tablespoons brown sugar 1 1/2 cups milk 2 eggs 1 1/2 cups grated cheddar cheese 10 hot dogs, cut into bite-sized slices
Directions Preheat oven to 400° F. Lightly grease muffin tins for 20 muffins.
In a large bowl, stir together the cornbread mix and brown sugar.
In a separate bowl, whisk together the milk and eggs until smooth; stir in the cheddar cheese. Add the wet mixture to the dry ingredients and stir until thoroughly combined.
Spoon the batter into muffin cups until each is 2/3 full. Divide the hot dog slices evenly between each muffin cup, pushing the slices down into the batter.
Bake 14 to 18 minutes or until golden brown. Serve warm with honey mustard for dipping!

Directions:
Preheat oven to 350º F.
In a large skillet over medium high heat, sauté onion and garlic in oil until onion is translucent. Add chicken and cook until no longer pink inside. Add taco seasoning, green chiles, beans, corn, salsa, and chipotle sauce. Cover skillet and simmer over medium low heat for 10 minutes.
Transfer chicken mixture to a 9x13-inch baking dish. Top with 1/2 cup cheese and crumbled tortilla chips.
Bake in preheated oven for 15 minutes. Add remaining 1/2 cup cheese and bake until cheese is melted and bubbly.

The call of the wild echoes through the cool pines of the Bradshaw Mountains
just outside Prescott, drawing women (18 years and older) who seek to challenge themselves physically and mentally. The Arizona Wildlife Federation conducts their three-day workshop, Becoming an Outdoors Woman, beginning at noon on Friday, September 9, until 1:00 p.m. Sunday, September 11, at Friendly Pines Camp.
During this jam-packed weekend, expert instructors introduce women to outdoor skills in a relaxed, informal atmosphere. With 36 different classes offered, participants have the opportunity to learn about hunting, fishing, shooting and gun safety, archery, camping, map and compass reading, and much more. New friendships are often made.
Evenings are filled with fun and entertainment, which includes hawk talks, nature hikes, fashion shows, and wild game tasting. The $250 registration fee covers equipment, food, and lodging in a rustic cabin. Though simple, each cabin has showers and bathrooms.

CORN DOG MUFFINS
Makes 20 muffins Ingredients
2 (8.5 ounce) packages cornbread mix 2 tablespoons brown sugar 1 1/2 cups milk 2 eggs 1 1/2 cups grated cheddar cheese 10 hot dogs, cut into bite-sized slices
Directions Preheat oven to 400° F. Lightly grease muffin tins for 20 muffins.
In a large bowl, stir together the cornbread mix and brown sugar.
In a separate bowl, whisk together the milk and eggs until smooth; stir in the cheddar cheese. Add the wet mixture to the dry ingredients and stir until thoroughly combined.
Spoon the batter into muffin cups until each is 2/3 full. Divide the hot dog slices evenly between each muffin cup, pushing the slices down into the batter.
Bake 14 to 18 minutes or until golden brown. Serve warm with honey mustard for dipping!
