RECIPE THAI BEEF SALADA fresh, healthy salad packed with flavour and high in folate and iron. This recipe is super quick and easy to prepare. Serves up to 4.Ingredients:500g rump steak, trimmed of all visible fat200g rocket or mixed lettuce leaves, 2 Lebanese cucumbers, thinly sliced1 punnet cherry tomatoes2 tablespoons mint leaves, finely sliced½ pkt of bean sproutsThai-style dressing:2 cloves garlic, crushed1/4 cup coriander leaves1 small red chilli, seeds removed and chopped, (use 2 chillies for extra heat)2 tablespoons lime or lemon juice1 tablespoon fish sauce1 level tablespoon palm or brown sugar6 spring onions, slicedMethod:1. Season the meat well with pepper and seal in a non-stick pan over a high heat until well browned on both sides but rare inside. (Depending on the pan used, you may need to brush the meat (not the pan) lightly with oil to prevent it from sticking). Transfer the meat to a plate and allow it to rest for 4 to 5 minutes to help keep the meat juicy.2. Slice the meat thinly across the grain and place in a bowl. Add the rocket (or mixed lettuce leaves), cucumber, cherry tomatoes, bean sprouts and mint.

3. To make the dressing, place the garlic, coriander, chillies, lime juice, fish sauce and spring onions in a food processor and process until well blended, for about 1 minute.4. Toss the beef and salad vegetables with the dressing and serve at once.(Source: Lifetrack (1999), Eat! Enjoy! The Lifetrack cookbook, Melbourne.)

FOLLOW THE LEADERMarking the launch of Revolution Health & Fitness at seagulls the new centre has awarded brain cancer survivor, Peter McLaughlin, with the inaugural members’ Inspiration Leader Award. He was officially presented with his award at the Revolution Fit & Fun Open Day on Sunday May 15th.

Group Fitness Manager, Carly Busseler, said that Peter was chosen not only because he had overcome a life-threatening illness, but because he was drawing on his own traumatic experiences to help others and was committed to physical fitness and maintaining a healthy lifestyle.

At 34 years old, Peter has survived amazing odds. Being diagnosed with an ‘inoperable’ brain tumour in Australia in 2001 he then went to England to seek a second opinion. Peter was successfully operated on in England in 2003, however, still suffers from blindness in one eye as well as memory and concentration issues as a result of the tumour.

In spite of the debilitating side-effects, Peter has been dedicated to his fitness regime including daily swims, gym classes 2-3 times a week and walking. Peter has also initiated the United Brain Tumour Support group in 2007 which is promoted through Cancer Council Queensland. As part of his generous efforts he holds monthly meetings for his support group, has been involved in volunteer work for the Cancer Council and addressed groups as a motivational speaker.

“Peter is genuinely an inspirational guy. He puts his heart and soul into supporting other brain cancer sufferers and their families and despite some serious personal health challenges you’ll regularly see him in the gym working hard to stay strong and fit,” said Carly.

“We’re quite honoured to have Peter using our health facilities and when we were looking for a person who could inspire the rest of us, he was an ideal choice.”
