MAKES 8 ROLLS

1 (¼-ounce) package rapid-rise yeast

1 tablespoon sugar

1 cup warm water

2 tablespoons vegetable oil

1 teaspoon salt

2¼ cups all-purpose flour, plus more if needed

6 cups plus 1 tablespoon water1⁄3 cup baking soda

1 large egg yolk

Coarse sea salt

I just love a good warm pretzel, and these little fellers have all the classic pretzel pluses—a chewy center and salty pretzel- dough flavor. They are formed into a pretzel shape, and as they bake, they rise to look like a twisted roll. The trick to getting that chewy texture is to boil them in baking soda water first and fin-ish them off in the oven sprinkled with coarse sea salt.

d1. In a large bowl, dissolve the yeast and sugar in the warm water. Let sit for 10 minutes, or until it begins to froth.

2. Stir in the oil and salt. Stir in 1 cup of the flour until com-bined, then stir in the remaining 11/4 cups flour. With your hands, knead the dough for a few minutes. If it’s too sticky, add a little flour while kneading. Cover and let rest in a warm spot for about 45 minutes, until nearly doubled in size.

3. Meanwhile, butter a baking sheet and preheat the oven to 425°F with a rack in the middle.

4. Turn the dough out onto a lightly floured surface. Gently punch the dough and divide into 8 pieces. Roll 1 piece out into a long, thin rope. Hold the rope to form a U shape. Cross the two ends over each other, then fold the twisted ends down to the bottom of the U and press to seal. Repeat with the remaining dough.

5. Bring the 6 cups water and the baking soda to a low boil in a large pot. Add a few of the pretzel rolls at a time and boil for about 15 seconds on each side. Remove with a slotted spoon and drain well on paper towels. Place on the baking sheet.

6. In a small bowl, whisk together the egg yolk and 1 table- spoon water. Brush over the rolls and sprinkle with sea salt.Bake for about 10 minutes, or until golden brown.

TIP If the water begins frothing heavily while you’re boiling the pretzels, reduce the heat slightly.
