On the rst day of the Julian calendar (11 January), the residents build a clavie, a barrel that is lled with tar and wood, and attached to a carrying post by a special nail. The clavie is then lit and carried clockwise through the town by a procession of about 15 people, mostly shermen. As they pass through the town, they offer burning embers to certain households and pubs to bring good luck for the new year. Once the tour is complete, the procession continues to a stone altar on nearby Doorie Hill, where more fuel is added to the ames, and it is left to burn out overnight. The origins of this tradition are not entirely clear they could be Pictish, Celtic, Viking or even Roman but one thing is certain: the Burning of the Clavie is the most spectacular re festival in Scotland. It was a Wednesday when I decided I wanted to go, and I was on a plane out of Norway on the Friday. I had never been to Croatia before and it was just gorgeous. They have the most beautiful beaches there. I havent spent as much time in the other Scandinavian countries as Id like. Stockholm is really beautiful architecturally, and its great for shopping and getting a good cup of coffee. I love Copenhagen because the Danish are good people and really know how to do a big breakfast, with meat, cheese and sh. Id love to play at the Roskilde Festival there one year. Ive still never even been to it. As a singer Ive noticed big differences between audiences in different countries. In Norway the crowd are relaxed and dont tend to go wild at a live show, although when I DJ I find that the club audiences are amazing and really out to have fun. A London crowd can be either great or quite tough, it really seems to depend on what venue you play. I love Shepherds Bush Empire, where I recently played a gig with Saint Etienne its beautiful and ornate. One of my favourite things about being in London is that you can get such great Asian food there. I always eat a lot of sushi and Thai food when Im in the city.Ive just moved to Berlin and have a great apartment my only problem is that I dont actually spend much time there because I travel so much. But when Im home I always head to this cool store called Oye Records (4 Oderberger Strasse, tel: +49 (0)30 6664 7821). I shop for music wherever I travel. London is perfect for that, with incredible record shops. I buy MP3s too, but theres something special about being in the environment of a record store and icking through stacks of vinyl, looking at the sleeve artwork. You can forget dusty old churches or crumbling historical ruins: these wondrous cathedrals of consumerist worship are the real cultural attractions of any holiday abroad. At least theyre the rst places I seek out as soon as Ive got to my holiday retreat, unpacked my bags and spent an hour or so working out how to put the hire car into gear. The moment I park up outside one of these foreign grocery stores and get behind the wheel of one of their authentically derelict old shopping trolleys, an exciting tingle skips down my spine; I am truly immersed in a strange and exotic world. The weird misshapen vegetables, the 800 different types of olive oil, the rows of inatable pool toys, those chocolate bars with names like Twat. These arent just convenient, theyre educational too. You could walk around a rubbishy castle or dreary old museum for days and not really learn as much about a foreign land as you can in 10 minutes at the grocers. And just as walking around a branch of Asda in the UK will lend accurate insight into the earthy, unpretentious and morbidly obese nature of the indigenous people, so walking around the Spanish equivalent shows us that the locals are passionate, demanding shoppers (who are also addicted to extra-high-tar fags).Once inside, my modus operandiis always the same. First I like to grab a bottle or two of pot-luck booze you know, the sort of blue- or green-coloured local hooch you never quite realise the power of until later when youre spewing into the bidet? Then its off to the delicatessen where you tear off a ticket and wait your turn to be abused and humiliated by an intolerant counter girl. You ask her for a tub of stuffed olives; she tuts and serves you 18 slices of smoked goats tongue. You try your best to pronounce the word mozzarella; she rolls her eyes and hands you a tub of tripe in garlic. Oh well, its quite good fun to try a few local delicacies, you think to yourself as you smile and wheel your trolley to the checkout. Still, cultural acclimatisation can only go so far and, thankfully for Englishmen like me, most European supermarkets stock English breakfast tea. The bad news for Spanish tourists in the UK, however, is that our cigarettes are very expensive and girlishly low in tar. However, this theory is never tested, because all the establishments in which you might see a person working at the supermarket or, if you prefer, the opera are closed. Christmas travel, especially, is mainly the inside of a car, with your fella sitting next to you, sighing. Flying, of course, is the exception. Because planes are larger than trains no, wait, thats not right. Because planes have a more modern outlook than trains and buses, commemorating the birth of Christ is deemed an insufficiently good reason to disrupt all the services. And there is nothing, nope, not an open-topped tourist-bus, not even a Wurlitzer, that is more fun than getting on an aeroplane on Christmas Eve.As soon as you step into the airport, you notice that everyone is smiling at one another. This goes beyond the regular Must remember to smile; have smiling on my to-do list smile, often into the territory of genuine friendliness and/or affection. Sure, sure, its Christmas: if people dont smile, they will get ceaseless Cheer up, love, its Christmas remarks, and then theyll have to laugh, which is much more effort than smiling. But I see something deeper in the gesture, some meaningful gratitude in the glint of every tooth, something along the lines of: I love you, stranger. I love you because you are not my weird cousin. They smile, I smile back; they move into a grin, perhaps I start to laugh at the incongruity of all this enthusiasm; soon they are laughing. Youll be drunk in a minute anyway, so you may as well start acting like it.The good cheer accelerates as you board your aircraft, then when you take off it, er, takes off. I went to Cape Town at Christmas in 2004 and people were literally cheering the pilot for getting us into the sky. I mean, dont get me wrong, it beats singing O Little Town of Bethlehem, but if youre excited that he knows how to take off, what on earth possessed you to get on this vehicle in the first place? We ate turkey and it seemed curiously delicious. We drank drinks. We communed with our fellow passengers, but we definitely werent enjoying ourselves as much as the hosties, who were practically hoola-ing about the place.Its all a lie, in other words: people love working at Christmas. Even if you have nowhere to go, you should fly just to see the excitement. Or I guess you could always go to A&E. Thats the only other place I can think of where they work all-year round. Weve only been here eight hours and already weve seen Mozart mugs, hats, umbrellas, T-shirts, tablecloths and more for sale.Salzburg is understandably very proud of its famous composer, but can boast many other renowned faces from history too. One Salzburger I walked around town with just after arriving dropped so many names that the town sweepers had to follow after us to clean up the mess. And this is the Marionettentheater, where James Joyce lodged during his time in Salzburg, he began. Ofcial Mozart balls are only available at Frsts various outlets, including Caf Frst (20 on map) by the Alter Markt. On the Alter Markt you also nd what is paradoxically described as Austrias oldest Viennese-style coffee house, Caf Tomaselli (18 on map). Opened in 1703, it serves the fantastic Tomaselliums Caf a mocha, Mozart liqueur and whipped cream cuppa. Then theres the Alte f. e. Hofapotheke (15 on map), a charming pharmacy with perfectly preserved Peter (7 on map). Dating back to 803AD, its the oldest restaurant in central Europe, and utterly essential to complete your Salzburg experience. The ancient walls of the venue have been hewn into the hillside, and you can see the exquisitely preserved dcor in the many rooms of the main restaurant. But for a singular experience, book a table for the Mozart Dinner, which takes place every evening at 8pm. In the baroque hall, lit almost exclusively by candlelight, a night out in Mozarts time is recreated, as a string quintet and opera singers in full 18th-century regalia serenade you. A menu comprising 18th-century recipes is also laid out before you as the musicians play movements from Don Giovanni and The Marriage of Figaro, accompanied by the breathless silence of stunned guests. If you are sceptical about Mozart, or about classical music in general, experiencing this will dispel all doubts. Dotted around town are a number of sculptures and artworks, organised and installed by the Salzburg Foundation (www.salzburgfoundation.at) with the goal of supplementing the citys long-standing cultural tradition by contemporary artistic statements. Marina Abramovics Spirit of Mozart shows a number of metal frame chairs, one of which towers 10 metres above the others; Stephan Balkenhols Sphaera sculpture on Kapitelplatz depicts a man standing atop a large golden sphere staring out to space; and Anthony Craggs amorphous statues are dotted around town, with a number of them residing in the gardens of the Museum der Moderne (13 on map), Salzburgs haven for modern art that overlooks the city on Mnchsberg.But when Salzburg does trade on its history, it does so with rare class and tact. Prices per head at the time of writing are 48, excluding wine. So to answer Roland Neulingers question about all the Mozart stuff, yes, we have noticed it, and its wonderful. His restaurant, Carpe Diem Finest Fingerfood (6 on map), has an interesting trick up its own sleeve. Aside from the hearty menu of mains (including the most tender venison weve ever tasted), the Cone Variations are possibly unique. Presented on a custom rack, these Cornetto-style appetisers take the classic ice-cream template and fill the top with savouries: chicken wings, steak tartare and even burgers. You may raise a dubious eyebrow, but the Cone Variations are an unexpected delight. After dinner, head downstairs to the bar for cocktails and the occasional live band.Alternatively, just around the corner is the colourful quirkiness of Afro Caf (16 on map), in which vibrant African furniture props up talkative students and nighthawks. Grab an Afro Caf product from their shop; they sell branded T-shirts, coffee and bags. Nearby Republic Caf (17 on map) plays electronica, hip-hop and dance late into the night. Carpe Diem is part of the Red Bull empire, another famous name associated with Salzburg. Founder Dieterich Mateschitz lives in Salzburg, and has bestowed upon the city a magnicent bar/restaurant/art gallery complex called Hangar-7 (11 on map, closed 23 December4 January). As the name suggests, its a futuristic aircraft hangar adjacent to Salzburg Airport, and upon entering you are surrounded by Mateschitzs aircraft collection: a B-25 Mitchell, a Douglas DC-6B and even a recreation of one of Leonardo da Vincis ingenious designs. At the restaurant, Ikarus (9 on map), a new head chef is drafted in to take over the kitchen for a month at a time. December sees Paul Pairet ofFrench restaurant Mr & Mrs Bund in Shanghai, and the new year welcomes Stefano Baiocco of Grand Hotel a Villa Feltrinelli at Gargnano, Italy. If youre thirsty rather than hungry, the Threesixty Bar is positioned dizzyingly high above the action, attached to the ceiling of the dome.Easier to access is the Mayday Bar, whose nifty touchscreen bar top allows tech-savvy drinkers to place orders, and even send flirtatious messages to that mysterious girl on the other side of the bar. Being situated near the airport, visiting Hangar-7 may be either the first or last thing you do in Salzburg.
