Add a little water if the mixture feels too firm. Check the taste by test-frying one meatball. Then shape small meatballs with the aid of two spoons and place on water-rinsed plates. Brown a generous pat of butter in a frying pan, and when it “goes quiet” place the meatballs in the pan and let them brown on all sides. Shake the frying pan often. Serve with potato purée or boiled potatoes and raw stirred lingonberries.

Ingredients 2 cups water or orange juice

1 piece (3-inch size) orange rind2 sticks cinnamon6 whole cloves5 whole allspice2 cardamon pods -- bruised1 vanilla bean -- split1 bottle (750ml size) red wine -- such as burgundy1/2 cup sugar***Garnish***blanched almondgolden raisins

Preparation Combine first 9 ingredients in a pot over medium heat. Bring mixture to a simmer,

being careful not to boil. Reduce heat to low; cover and simmer for 15 minutes. Remove from heat, and stir in sugar. Stir until sugar dissolves.

Strain mixture, and serve immediately, or gently reheat before serving. (If you prefer a stronger flavor, steep spices longer before straining.) Garnish if desired.

Note: For a non-alcoholic version, use orange juice or water, and substitute 3 cups concord grape juice for the wine. Omit sugar, and follow glogg procedure.

TOURIST ATTRACTION IN SWEDEN

Ice Hotel The Ice Hotel, located 120 miles north of the Arctic

Circle, was first constructed in the 1980’s, and has to be built and rebuilt each winter and has a different design every time. It is built from more than 4,000 tons of blocks of ice from the Torne River, expanding up to 53,700 feet.

Furniture is made from slabs of ice, like beds and chairs. For some warmth and comfort they are draped in reindeer skin blankets.

The Ice Hotel has about 60 guest rooms, and features other kinds of rooms including: a sauna, reception hall, multimedia theatre room, and an ice chapel.

Guests of the hotel are given gear to protect them from the well below zero temperatures. Full beaver nylon jumpsuits and insulated body bags are a few things that are given to the guests.
