This year’s Lenten Penance Service for both Saint Joseph and St. Peter the Apostle Parishes will be held on Monday, April 8 at 7:30 pm HERE at Saint Joseph Church. The clergy of both parishes will be available to hear confessions.

Somewhere in my file of cartoons I have one with an angry wife standing in back of her husband’s chair as he reads a newspaper after

just complaining about his poached breakfast eggs. She says to him, “That yellow scum on the top happens to be hollandaise sauce.” Mastering a classic hollandaise sauce, a traditional stage in the training of French chefs, requires an expert preparation using 32 egg yolks, which is why famed chef Eric Ripert, whose New York restaurant, Le Bernardin, has three Michelin stars, entitled his recent memoir 32 Yolks: From My Mother’s Table to Working the Line. Ripert had a very difficult boyhood when he grew up in France and Andorra, especially after his parents divorced, an event that shook him greatly, especially when arguments exploded along with his mother’s prized porcelain dishes as she smashed them against the wall. After his father died on a mountain-hiking trip when Eric was eleven, things got worse after his mother married a man who turned out to be a bullying stepfather. The man sometime poured Eric’s snack jam on the floor and made him clean it up. Ripert said that “Hugo was patient in his cruelty. He trained me to mistrust him and even hate him, the way one might train a dog to fight.” Eric’s relief from these trials was the food his mother and grandmother taught him to cook and visits to an excellent restaurant run by an eccentric former soldier of the French Foreign Legion, who had served in Algeria and Egypt and fought at the battle of Dien Bien Phu. The man, who delighted in refusing to seat even locally powerful people if he felt like it, took a liking to Eric and taught him many lessons about preparing food, including how to make a splendid chocolate mousse. Eric then set his eyes on becoming a chef himself. The demanding, and often harrowing, training he went through to rise to the pinnacle of his profession included working under renowned Paris chef Joël Rubuchon, a perfectionist who was impossible to please. Ripert writes that Rubuchon was his “first truly frightening boss” and, after a month, he was “completely terrorized.”

Every day we were required to make dinner for his French poodle … [Once] his dog didn’t finish his dinner because the meat was too tough. What kind of cooks were we that we couldn’t even make a meal that a dog would enjoy?

But Ripert learned his profession and succeeded in it to its most exquisite extent, becoming, along the way, the author of praised cookbooks and a TV star. I became interested in reading 32 Yolks after seeing a

There is a Japanese word, kintsukuroi, that means “golden repair.” It is the art of restoring broken pottery with gold so the fractures are literally illuminated—a kind of physical expression of its spirit. As a philosophy, kintsukuroi celebrated imperfection as an integral part of the story, not something to be disguised. The artists believe that when something has suffered damage and has a history, it becomes more beautiful.

I think this can be an intriguing comparison for the wonderful way God’s forgiveness can repair even lives most damaged by sin. This Monday, at 7:30 pm we will have our Lenten Penance service in our church. We have been cooperating with St. Peter’s in River Edge on these Lent and Advent celebrations of God’s mercy, and the priests of both parishes will be available to hear your confessions. As Holy Week and Easter draw near, it will be a perfect opportunity to get ready for their splendors.

ICON OF OUR LADY COMES TO SAINT JOSEPH

The beautiful image of Our Lady Help of Persecuted Christians can be seen on

our main altar in the upper church today. (The image in full view also appears on the cover of this bulletin.) It comes to us from the Knights of Columbus’ “Marian Prayer Program” whose purpose is to spread devotion to Our Lady and to encourage prayer for our brothers and sisters at risk around the world. The icon will remain with us through Thursday, April 11. That morning, immediately following the 8:30 am Mass, Fr. Anthony and the Legion of Mary wll conduct a special Rosary and prayer service to raise awareness of the plight of Christians persecuted for their faith and to stand in prayerful solidarity with them. We hope you will be able to join us. We thank parishioner and Knight Paul Noonan who arranged to bring this very special image of Our Lady to Saint Joseph Church.

VOLUNTEERS NEEDED FOR “MEALS WITH A MISSION”—MAY 2

Meals With A Mission is a volunteer organization which provides 20,000 meals
