Citrus, Fennel, and Rosemary OlivesIngredients22 ounces (about 4 cups) assorted olives (such as niçoise, arbequina, kalamata, and picholine) 2 cups extra-virgin olive oil 1 cup finely chopped fennel bulb 1 tablespoon chopped fresh flat-leaf parsley 1 1/2 teaspoons chopped fresh rosemary 1 teaspoon grated lemon rind 3/4 teaspoon crushed red pepper 3 garlic cloves, minced Preparation1. Combine all ingredients in a large bowl; stir well to combine. Cover and refrigerate 48 hours. Serve at room temperature.

Spicy Squash PicklesIngredients3/4 pound zucchini, cut into 1/4-inch-thick slices 3/4 pound yellow squash, cut into 1/4-inch-thick slices 2 teaspoons kosher salt, divided 1/2 cup thinly sliced sweet onion (such as Vidalia) 1 cup water 1 cup cider vinegar 1/4 cup maple syrup 1/4 to 1/2 teaspoon crushed red pepper Preparation1. Place a wire rack on a baking sheet. Arrange zucchini and squash slices on rack; sprinkle with 1 teaspoon salt. Let stand 30 minutes. Rinse well under cold water; pat dry with paper towels. Place zucchini, squash, and onion in a medium glass bowl.2. Combine remaining 1 teaspoon salt, 1 cup water, and remaining ingredients in a small saucepan; bring to a boil, and pour over vegetables. Weigh down vegetables with a plate. Cover and refrigerate at least 2 hours or overnight. Drain or serve with a slotted spoon.

Garlic Tomato And Chickpea SaladIngredients

Serves 2 1 large tomato 100g fine green beans 1 garlic clove 200g chickpeas half a red pepper splash of balsamic vinegar drizzle of olive oil salt and pepper

MethodPut the beans on the boil while you chop the tomato, red pepper and garlic. Once the beans are cooked through, drain and rinse under the tap to cool them. Cut the green beans into thirds. Mix all the ingredients in a bowl and season with s&p to taste.

Spicy Fried CabbageIngredients

Finely chopped cabbage chopped red, green & yellow peppers 1 tablespoon of oil crushed/chopped pineapple chopped onion spice(optional) salt and pepper to taste

MethodHeat oil in a pan, add onion and peppers. Fry until soft. 2. Add cabbage, spice and salt, fry for few minutes at a low heat and don't over cook. 3. Add pepper to taste and allow it to cool. Then add pineapple, and serve.

Chunky Mango And Avocado SalsaIngredients

Serves 2 1 ripe mango, roughly chopped 1 ripe avocado, roughly chopped half red onion, finely chopped handful of fresh coriander about 15 cherry tomatoes, halved half a red chilli, finely chopped juice of half a lemon salt and pepper optional: drizzle of balsamic vinegar sprinkle of pine nuts

Method1. Mix all the ingredients in a bowl.2. That's it. It really is that simple.

Chicken BLT SaladIngredients

1 chicken breast 1 or 2 rashers of bacon lettuce tomatoes/cherry tomatoes optional: any other salad ingredients you like e.G. cucumber rocket sweetcorn onion red cabbage grated cheese to top salad dressing

MethodAdd a drizzle of olive oil/cooking spray to a frying pan and put on a medium heat. while this is heating chop your lettuce, tomatoes and any other ingredients you want to add into chunks/slices and place in a bowl. chop up your chicken breast (could also be chicken meat from thighs/legs) into small, bite-size chunks and add to the frying pan. Cook for around 5-6 minutes or until the chicken is just starting to turn golden (make sure it's cooked all the way through). remove your chicken from the pan into the salad bowl. cut up your bacon into small 1-inch slices and add to the frying pan. Cook for around 4 minutes or until fully cooked through. Remove from frying pan and add to the bowl. if you want you could sprinkle grated cheese over the top or add your favourite salad dressing.

Pinacolada SaladIngredients

6 fresh strawberries, sliced 1 peach, sliced 1 banana, sliced 1/2 cup watermelon chunks 1/2 cup fresh blueberries 1/2 cup fresh pineapple chunks 1/4 cup pina colada mix

MethodMix the strawberries, peach, banana, watermelon, blueberries, and pineapple together in a large bowl. Drizzle the pina colada mix over the fruit; stir until evenly coated.

Chicken SaladIngredients

1 diced chicken breast cous cous mixed leaf salad pomegranate seeds red onion peppers any vinaigrette or dressing

MethodCook chicken thoroughly. make cous cous according to packet instructions. finely slice the onion and dice the pepper. toss the chicken, cous cous, mixed leaves, pomegranate seeds and onion and peppers with the dressing - use as much of each as you wish

Sushi SaladIngredients

1/2 avoc ado 10-15 Imitation crab sticks (you can get these at lotte) 1/2 cucumber

MethodCut avocado into medium-thin, medium-long pieces. Then, break the imitation crab sticks into thin strips. (The strips will peel off easily) Then, cut the cucumber into thin strips. Mix all of the ingredients, and then it's done!

Meat Free Taco SaladIngredients

Kale (or any lettuce) vegetarian refried beans salsa plain greek yogurt corn avacado onions salsa olive oil

MethodSaute 1/4 onion and 1/4 cup of corn in 1 tbs of olive oil. While Place 1/2 refried beans in a large bowl and microwave for 1 minute. Layer lettuce over beans. Once done, later onions and corn over the lettuce. Pour desired amount of salsa (use as dressing) Cut up a 1/4 of an avocado and layer over salsa. Top everything off with a dollop of plain greek yogurt (a healthy alternative to sour cream).

MethodStart by making a regular salad... Take the tomatoes, cut them in little pieces to finally add them into the salad. Here is when the fun part start's: Take you're Feta cheese and a pan. Put it in wait for a bit and add on top of the melting cheese some honey. Let it "cook" for a bit and when it's seems enough add it to your salad.
