    In consideration of my voluntary participation in the activities relating to the “Salsa Showdown” at the Holland Farmers Market on August 16, 2014 (the “Event”), I assume the inherent risks (potentially resulting in injury or death) related to the Event. I, for myself, my heirs, personal representatives waive any and all claims, actions, or rights I have or may have against the City of Holland, the Downtown Holland Principal Shopping District, the Holland Mainstreet Downtown Development Authority, the Holland Farmers Market, their officials, employees, volunteers, and agents (collectively referred to as the “Governmental Entities”) that may arise as a result of my participation in the Event. I give permission to the Governmental Entities to use, without charge, all or a portion my likeness (and make any editorial changes) in promoting the Event and the Governmental Entities. I waive any claims, actions, or rights I have or may have against the Governmental Entities arising from the use, publication, and changes in the content. I agree to indemnify and hold harmless the Governmental Entities for all claims, actions, or liabilities (including reasonable attorney fees and costs) from any claim, action, or liability arising out of or relating to my participation in the Event.     DIVISIONS (SELECT ONE):Amateur Division • $20This division is for individuals or teams from the community.

    Professional Division • $30This division is for restaurants, catering companies, food service providers and chefs only.

    (Entry fees are not refundable.)

    SALSA PREPARATION AND COMPETITION RULES:• Only one entry allowed per

    individual/team.• All ingredients must be prepped

    and mixed together on-site at the event. The preparation area is located inside the Civic Center (150 West 8th Street) at the Eighth Street Market Place.

    • Contestants MUST use tomatoes, onions, peppers, and cilantro provided by the Holland Farmers Market. These will be provided according to quantities indicated on your registration form.

    • Any produce, spices, or other food items (canned tomatoes, garlic, salt/pepper, fruit, etc.) that are not being provided by the Farmers Market must be purchased from an approved source, such as a grocery store. At check-in, you are required to show your purchase receipt for each item. No homemade, home-prepared, or pre-opened items are allowed.

    • No cooking or heating of any kind is allowed.

    • No meat of any kind can be used in your salsa.

    • All produce must be washed on-site under running water.

    Washing stations will be available. Market-provided produce will be washed prior to start of event.

    • Gloves and hairnets will be provided and must be worn during salsa preparation and serving. You may bring a hat to wear in place of hairnet. Bare hand contact with ready-to-eat foods is not permitted.

    • All cutting boards, containers, utensils, appliances, etc. that you bring must be washed on-site prior to use. Washing stations will be available. It is highly recommended that you bring an unused cutting board. Tables are not suitable for use as a cutting surface.

    • Hand washing stations will be accessible for use during the salsa preparation and tasting.

    • You must keep your salsa on ice after preparation. Ice is not provided. Salsa must maintain a temperature of 41°F or below at all times.

    • Salsa must be transported from preparation to serving area in a covered container that you must provide.

    • There shall be no eating, drinking or smoking in the food preparation area.

    • Each contestant must prepare a minimum of 4 gallons of salsa on-site with one pint set aside for judging (this container will be provided).

    • There will be a mandatory contestant meeting at 8:30 am.

    • There will be no salsa allowed for sale.

    • You will be notified of table placement for preparation and the tasting at check-in.

    SALSA MAKER MUST PROVIDE:• Salsa made on-site at event

    (approximately 4 gallons)• Extension cords/power strip• Cutting boards• Utensils (cutting & mixing)• Miscellaneous kitchen appliances

    such as blenders or processors• Container to transport salsa with

    lid or cover• Bowl and scoop for serving salsa• Cooler with ice to keep salsa

    refrigerated• Table decorations/theme for

    the tasting are optional, but are highly encouraged!

    WHAT THE SALSA SHOWDOWN WILL PROVIDE:• Tomatoes, onions, peppers, and

    cilantro • Tables• Chairs• Salsa Sampling Cups• Chips & Chip Trays• Gloves & Hairnets • Judging Container

    SALSA TASTING:The cost for the public salsa tasting is $3, which includes unlimited tortilla chips and a salsa voting ticket for the People’s Choice Award. The pubic tasting will take place outdoors under a tent at the Eighth Street Market Place. The public will walk through the tent between 11 am - 1 pm tasting each salsa, then cast a vote for their favorite. At 11 am the official judges will begin the tasting of each salsa then cast their votes.
