Aminah, who is twelve years old, is my best friend. She is the apple of her family’s eyes. She loves eating cakes and cookies. Her favourite dessert is Baked Tapioca Cake or “Kuih Bingka Ubi” made by her mother, Puan Leela. Encik Abu, her father, has a small tapioca plantation behind their house in Taman Seri Melor. One sunny afternoon, out of the blue, Aminah had the urged to eat her favourite dessert. She told her parents to make her favourite dessert for tea. Her parents agreed and the three of them went behind the house to find some tapioca. Encik Abu was pulling the tapioca plant to find the best tapioca. Aminah was standing beside her father and her mother was squatting opposite her and cutting the tapioca. Later,alone in the kitchen,Puan Leela washed the tapioca clean. After washing the tapioca, Puan Leela was busy grating the tapioca on the table. The hardest part of the preparation is grating the tapioca but Puan Leela made it look as easy as ABC. After finished grating the tapioca, she mixed the grated tapioca with sugar and some coconut milk. She mixed the ingredients together in a large bowl. Then she poured them into a baking pan and baked them for about an hour in the oven until the sides turned into golden brown. Puan Leela allowed it to cool before cutting the cake. Then, Puan Leela cut and served the cake to Encik Abu and Aminah with some tea. They were sitting and enjoying eating the tapioca cake at the cement- table, at the porch of their house. Puan Leela, who has a heart of gold, also gave some of the dessert to her friendly neighbour. They thanked her for her kindness and also for her delicious cake.
