Insulin is produced by the pancreas and is used by the body to take glucose from the blood for
use as fuel. A deficiency results in high blood levels and low tissue of glucose.
There are two types of diabetes. The first type appears early in life and is the result of
abnormal cells in the pancreas so that little or no insulin is made. This is juvenile diabetes. Thestandard treatment for juvenile diabetes is insulin therapy. The second type of diabetes occurs
later in life, usually during a persons fifties or sixties. In this type of diabetes the pancreatic
beta cells are normal and produce normal amounts of insulin. However, for some unexplainedreason the tissues in the body have become resistant to the action of insulin. This second type of
diabetes is more common in obese people that in lean people.
Diet is very important in the treatment of both forms of diabetes. High levels of fat in the
blood, which interfere with the absorption of insulin, are often associated with diabetes. A
person who has either form of diabetes should reduce the total amount of fat by 20-25percent ofthe total calories consumed and increase the amount of carbohydrates to approximately 40
percent. Simple sugars should be kept to 10-15 percent of all calories, and protein should notexceed 24 percent.
