As you know, sushi usually refers to fish served on rice; but did you also know that the term “sushi” actually refers to the rice? It is special sticky rice that holds together as the sushi chef molds it. The Japanese have spent centuries perfecting sushi, and TONO hires sushi chefs who have studied with the best.
