I’ve been developing the menus for DoubleTree

by Hilton Dunblane Hydro for ten years, ever

since I launched my flagship restaurant The

Kailyard by Nick Nairn here in the hotel. In that

time the food we produce has become tastier

and more personal.

I’m lucky to have a great team of chefs, under

the watchful eye of Executive Head Chef, Steven

Campbell. Together we have developed dishes

that utilise the very best of Scottish produce

and are cooked in a way that makes the most of

these wonderful raw materials. Some tried and

ADOBE RESERVA PINOT NOIR, EMILIANA, CHILE (Vegan)Packed with strawberry fruit flavour. Hints of mocha and spice from French oak barrel ageing with a smooth and silky mouthfeel. £33.00

CHATEAU PONTET BAYARD, MONTAGNE-SAINT-EMILION, BORDEAUX, FRANCEA blend of 85% Merlot and 15% Cabernet Franc; the vines are about 40 years old and grow on clay and limestone soils. All grapes are harvested by hand and are then sorted and de-stemmed before fermentation in thermo-regulated, cement tanks, each parcel vinified separately. The wine is aged for about a year and is concentrated, with firm, chewy tannins, plump fruit and shows a typical right-bank profile. £35.00

GLENMORANGIE “THE ORIGINAL” £5.00Rich and flowery with spicy hints and vanilla wood notes on the nose. A delicate honey wood taste with a subtle hint of nuttiness on the palate. The finish is smooth and long.

DALWHINNIE 15 YEAR OLD £6.00Wholemeal and honey with a slight smokiness on the nose. Smooth and soft with lasting flavours of heather, honey sweetness and vanilla on the palate, followed by deeper citrus fruit and hints of malted bread. A sweet finish that gives way to smoke, peat and malt.

THE MACALLAN DOUBLE CASK GOLD £5.00Complex with hints of fruit and heather honey on the nose. Soft maltiness balanced with oak and fruit on the palate. A lingering finish with oak and fruit.

GLENFIDDICH 12 YEAR OLD £5.50The nose is fresh and fragrant with a touch of peat. Distinctive, well-balanced flavour of rich fruit, subtle pine and a hint of peatiness on the palate. A satisfyingly long, lingering and rounded finish.

BALVENIE DOUBLEWOOD 12 YEAR OLD £6.00Sweet fruit and oloroso sherry notes, layered with honey and vanilla on the nose. Smooth and mellow with beautifully combined flavours- nutty sweetness, cinnamon spiciness and a delicately proportioned layer of sherry on the palate. The finish is long and warming.

TALISKER 10 YEAR OLD £5.00Powerful peat-smoke with sea-water saltiness on the nose. A rich dried fruit sweetness with smoke and strong barley-malt flavours on the palate. The finish is huge, long, warming and peppery.

HIGHLAND PARK 12 YEAR OLD £5.50Aromas of heather-honey sweetness and peaty smokiness on the nose. Rounded smoky sweetness and full malt on the palate. A teasing, heathery and delicious finish.

Lowland Malts 25ml

AUCHENTOSHAN AMERICAN OAK £5.50Bourbon vanilla and coconut with layers of zesty fruit on the nose. The palate is refreshingly smooth yet lively with vanilla cream, coconut and white peach. A crisp finish with sugared grapefruit and a hint of spice.

AUCHENTOSHAN THREE WOOD £6.50The nose has elements of blackcurrant, brown sugar, orange, plum and raisin. Fruit and syrup on the palate, hazelnut with hints of cinnamon and lemon. A butterscotch sweetness adds to the overall complexity. The finish is fresh and fruity, with long lasting oaky sweetness.

BUNNAHANHAIN 12 YEAR OLD £5.00Fresh and sweet with hints of seaweed and malt on the nose. Soft and supple on the palate with sherry, a hint of sweetness, malt and juicy sultana. A sherried, herbal finish with a balanced, salty tang.

LAPHROAIG 10 YEAR OLD £5.00Huge smoke, seaweed and a hint of sweetness on the nose. Surprisingly sweet with hints of salt and layers of peatiness on the palate with a lingering finish.

LAGAVUILIN 16 YEAR OLD £6.50Very concentrated with iodine, sweet spices, mature sherry and creamy spices on the nose. The palate is very thick and rich with rich fruity sweetness and powerful peat and oak. The finish is long, with spice, figs, dates, peat smoke and vanilla.

BOWMORE 12 YEAR OLD £5.50Coastal smoke and ash soon make way for bergamot, orange zest, lemon slices and some hay before becoming rather floral on the nose. The palate is lovely and rounded and honeyed initially. Vanilla, perfumed smoke and coastal elements develop along with dark peat, blossom and an oily sweetness. The finish is smoky and long with sea spray, dry grass and a touch of ash and citrus.
