Finally, the alternatives for enjoying free time at the congress are numerous. Cantabria is a region with an extremely wide range of activities just one hour away by car (golf, watersports, skiing, spa tourism, natural caves and cave painting, hiking, visiting the Liébana area, cable railway in the Europa Peaks, the Cabárceno Park, Artesantander…). All these good reasons and many more besides, such as its exceptionally attractive countryside, beaches and walks rank Santander as one of the towns most preferred by organizers and participants. Over 500 events held each year back this statement. Santander currently has some 15,000 rooms shared out among some 15 hotel establishments, for congresses being held at the same time. Tradition and culture, words that blend and live

together. Out of tradition grows culture, and from that,

a people’s idiosyncrasy. The richer their tradition, the

richer their culture. This gave rise to man’s artistic

expression, some 15,000 years ago, in the Altamira Cave.

Although art has evolved, its principles are found

restrained yet brilliant people, calm but decided,

cautious although tenacious.

Delicious. It certainly is a delight to enjoy the texture

and taste of a Pas Valley sponge cake made with real

butter, a delicacy as well known as it has been

imitated. We could call this a fantastic trip to

the gourmet’s paradise. While some regions

compete to rank in the place of honour on the

Olympus of culinary skill, for decades endowed

with the best meats and fish, and milk to make

its savoury desserts and cheeses. Cantabria has

been an authentic larder, and now is a kitchen, an

interesting, imaginative cuisine which, day by day,

is made ready by its master chefs on the ovens spread

out across its coastal and rural dominions.
