Gareth gives Sarah Wiener her second challenge: Cheddar Fritters as a starter, and forthe main dish, a tall order, and a legendary British dish on the other side of the Channel -lamb in honey with mint sauce and algae balls. In his restaurant the "Three Chimneys", Michael has put together a high-performanceexercise for Sarah: she has to prepare a Kedgeree, a dish based on three different typesof salmon. She also has to make a dessert from raspberries, honey, cream and whisky -Scottish whisky, of course! The dessert, called "Cranachan" is as unpronounceable as itis difficult to make. On the Isle of Skye, peat is collected for heating, and people are onlyallowed to fish if they don't each what they catch. Which doesn't exactly fill them up!

Sarah Wiener has to learn how to make a dish with a layer of stewed apple, coveredwith a slice of that not-so-sweet pudding, Black Pudding, topped with tender scallops. Tosource the seafood, she has no choice but to get wet, as scallops don't exactly jump outof the water and onto the plate all by themselves! Unfortunately, the weather forecast isnot at its best, the water is a chilly 12 degrees, and not only are the scallops 20 metresunderwater, they are not always entirely cooperative. Sarah could happily deal with allof that, if only it weren't for the black pudding! She already had rather an eventful blackpudding experience in Germany.

07 - THE PERFECT PICNICIn the pretty seaside resort of Weymouth, on the south coast ofEngland in the county of Dorset, Sarah Wiener's going to have to getstuck in once again - she's been asked to put together the perfectEnglish picnic.

The biscuits must be crunchy, the pasta plentiful, the china beautifully thin, and thechampagne (which is absolutely essential!) perfectly chilled. And of course there mustbe tea to drink, which the English take very seriously! But the content of the hampers isless important than the actual location of the picnic, which has to be chosen with greatcare. One venue malfunction and the day will be a disaster! The weather should do bedoing its bit too, but sadly, a storm has been forecast! There is one silver lining though.Sarah will be meeting some real druids (who are bakers in real life). 08 - THE HUNT IS ON !For the eighth leg of her culinary adventures, Sarah Wiener travels toNorthern Ireland, where she visits the Duke of Abercorn, the ownerof the Belle Isle estate.

The Duke of Abercorn owns the whole region, or nearly - the moors, the fields, thesurrounding lakes, and the forests where Sika deer hide. Leg of Sika deer, served witha potato and nettle purée is a local speciality, from the venison right down to themashed potato. The potato is omnipresent in Irish cooking. The great famine that struckthe country more than a century ago (partly due to mildew which rotted the tuber)traumatised the country and remains etched in people's memories. Sarah Wiener meetsorganic farmers who grow a variety of potato that is resistant to disease. She also meetshunters who take a keen interest in the region's deer.

It starts off with a bowl of porridge - oats cooked in salted water - followed bysausages and bacon with scrambled eggs, served up with hot tomatoes, mushrooms andmarmalade. Where did the custom for having such a large meal early in the morningcome from? One thing is certain - a pot of tea must always grace the table. For a fewyears now, tea plantations have existed in England. Originally, tea came from China, justas Black Pigs, with their large-ears, came from Cornwall. To make the challenge a littlemore complex, Sarah also has to look for some forgotten gardens. But none of that reallymatters compared to the most important issue of all: should the bacon be sliced ultra-thinly, or just very thinly?

10 - FINAL ON THE THAMESThe final leg of her culinary journey takes Sarah Wiener to WalthamAbbey, about thirty kilometres outside London, to the heart ofworking-class gastronomy.

In Tony Lane's Pie and Mash Shop, the chef himself serves the house speciality, whichis also the speciality of East London - jellied eels, accompanied with a meat and potatopie with parsley sauce. David Beckham loves it, Tony Lane loves it, and Sarah Wiener...well, she's still not quite sure what to make of it! The eels in question are still caught inthe Thames, despite the fact that the river earned the nickname "The Great Stink" over150 years ago. On a cheerier note, only a few kilometres away, the world's best salt isgathered! Sarah Wiener ends up putting more vegetables and vitamins in the dish thatshe should have - she just can't help herself! Be warned Sarah, the jury is no pushover.It's made up of four football fans!
