the novelistic form,” she tells a recentgathering of journalists in Pasadena,Calif. “There’s a lot of dialogue in there.And she had the girls speaking in a veryopen, frank, modern sort of way. Andthere were times when the slang and thecolloquialisms that she used feel verydated, which is almost the reverse ofwhat she was intending to achieve. ...But what I was trying to achieve wassort of a style of dialogue that reflectedLouisa May Alcott’s modernism andflare without sounding dated, so that wasa delicate balancing act.”

As Aunt March, the 92-year-old Lans-bury brings a delicious gruffness to arole that she admits she wasn’t all thatcomfortable with at first.

MeredithVieira previews the royal weddingnightly on PBS

“Today” coverage of Prince William’swedding, and that experience is sure tocome in handy for her duty as hisbrother walks down the aisle.

The veteran, multiple-Emmy-win-ning journalist and television personal-ity co-hosts “Royal Wedding Watch,”clearly a specifically timed series thatPBS is co-producing with England’sBBC. Airing nightly Monday throughFriday, May 14 through 18 (check locallistings), it teams the very AmericanVieira with British television presenterMatt Baker ... with numerous guestshelping them offer both countries’ per-spectives on the nuptials of PrinceHarry and “Suits” actress MeghanMarkle, scheduled for Windsor Castle’sSt. George’s Chapel on Saturday, May19.

“It’s all things Harry and Meghan,”the pleasant Vieira confirms, “and Ilove this couple. You can go into thisjaded, but they’re both so down-to-earth and so incredibly charming. And,most importantly, they seem to be verykind and to care greatly about others.They’re both extremely dedicated tocauses.”

Vieira enjoys citing the story aboutthe tone of a dishwashing-liquid com-mercial upsetting a young Markle:“The tag line was something like,‘Women all over the country are fight-ing greasy pots and pans.’ She was fu-rious, and her father said, ‘Write someletters.’ So she sent one to Hillary Clin-ton — who was first lady at the time —and one to (then-‘Nick News’ host)Linda Ellerbee, and one to (attorney)Gloria Allred. And sure enough, amonth later, they changed the commer-cial. Even at that point in her life, shewas driven to stand up for things shebelieved in.

“And Harry has done so much formental health and veterans and variousother causes,” adds Vieira. “They walk

the walk, and I think they’re going tobe a really dynamic and positive cou-ple for that country, and for the worldas well. They really are reaching outand trying to make a difference.”

Vieira — who also hosts PBS’snew series “The Great AmericanRead” starting Tuesday, May 22 — isglad “Royal Wedding Watch” givesher five hours over five nights to digdeep, but she allows, “I’m as curiousas anybody about what the cake lookslike, or who’s making (Markle’s)dress. Statues Installed On Broadway AsPart of Beautification Program

Mayor Jimmy Davis announced that the City of Bayonnehas begun installing ten statues on Broadway as part of itsshopping district beautification program. That same programalso includes utility box paintings, banners, and flower boxes.Mayor Davis said, “The goal of this program is to makeBroadway a more attractive, fun place for shopping and din-ing. Promoting Broadway as an interesting destination forconsumers is good for our local small businesses.”These improvements are made possible by funding from the

Bayonne Enterprise Zone/Special Improvement District andsponsorships from the Hudson County Office of Cultural andHeritage Affairs. None of the art was paid for by municipalproperty taxes.After all installations are completed, there will be ten statues

spread throughout Broadway. Five of them will be in the Spe-cial Improvement District (SID) from 17th Street to 30thStreet. The other five will be in various locations on Broad-way outside of the SID. During the first week of May, fourinstallations were completed: at 7th Street (in front of theBergen Point Post Office); at 8th Street (Douglas O’Neill

Point); 26th Street (in front of the main postoffice); and at 39th Street (by Horace MannSchool). City officials expect the others to beinstalled during the next few weeks. The stat-ues were made by the Randolph Rose Collec-tion, a Yonkers-based company that specializesin bronze statues and fountains. The statues represent a mixture of different

types of characters: a mother; a man on abench reading; a young girl releasing a bird; a sports coach; aboy with his paint brush and bucket; a panther on the prowl;a boy and girl sitting on a bench; a battlefield cross; a girl read-ing; and a celebrating cheerleader. The statues of humans donot represent historical figures. Rather, they portray peopledoing everyday things. Any resemblance to specific, actualpeople by any of the statues is purely coincidental.The City Administration hopes to do a second phase of art

installations on Broadway in the future. The current phase ofinstallations resulted from a purchase order approved in spring2017. The statues were received in autumn 2017. The instal-lations were delayed by the prolonged wintry weather thatcontinued into spring 2018. The installations began as a resultof the break in the weather in early May 2018.

Salad By Wolfgang PuckSay the words “seafood and avocado salad”

and you can bet money on the picture that willform in the minds of most people: half of apitted avocado sitting in a bowl or teetering ona plate, its hollow filled with a big scoop ofshrimp or crabmeat, or maybe smoked fish orcanned tuna, mixed with some chopped celeryand maybe a little onion and herbs, all boundtogether with lots of mayonnaise.Isn’t that something you’ve seen, and maybe

eaten, so many times that you’re likely to passit over in favor of something lighter andfresher?So, I’m happy to offer you a lighter and

fresher approach to this classic combination.And it may also give you an insight into howto create and cook like a professional chef bylooking closely at a recipe, taking it apart, andthen putting it back together in a way that re-flects your own tastes and how people like toeat today.Let’s begin with the seafood mixture itself.

Who says that a seafood salad mixture has tocontain great big dollops of mayonnaise? Or,for a change of pace, that it has to be drenchedin that old standby, mayo-based Thousand Is-land dressing? Don’t get me wrong, though. Ilove mayonnaise. But sometimes it can maskflavors. And when it comes to sweet, delicatefresh seafood, many people now prefer to ex-perience those natural flavors and textures.That’s why in this recipe I mix the fresh crab-meat with a light lemon vinaigrette, whichalso works well with other kinds of seafoodsuch as shrimp, bay scallops, or any flakedleftover fish fillet you might have in your re-frigerator.Using a pitted avocado half as a vessel for

serving the crabmeat mixture is now a time-honored trick. But, especially for an appetizer,that can be a lot of avocado. So, for my rein-vention, I literally turn things upside-down,mounding the crabmeat on a chilled plate andthen draping a generous but not overwhelm-

ing portion of avocado slices over the seafood.Fresh herbs are a natural garnish for seafood

salads. But, in the past, that all too often meanta sprig of curly parsley placed on top. For thisrecipe, however, I use a mixture of herbs:fresh, broad-leafed Italian parsley, more fla-vorful than the curly variety; mildly onionychives; and brisk-tasting basil. For a final burstof flavor, I also drizzle the finished salad withsome Pistou, the southern French cousin topesto sauce, a quick puree of fresh basilleaves, garlic, and olive oil.Though simply and quickly put together, it

all adds up to a presentation that seems at oncefamiliar and refreshingly new. Seafood andavocado salad, anyone?

cRABMEAT SALAD WITH PISTOuAND LEMON VINAIGRETTE IN

AVOcADO HALVES Serves 6Lemon Vinaigrette (recipe follows)Pistou (recipe follows)12 ounces fresh cooked lump crabmeat1 tablespoon minced fresh chives1 tablespoon julienned fresh basil leaves1 tablespoon minced fresh Italian parsleySalt3 ripe Hass avocadosPrepare the Lemon Vinaigrette in advance

and refrigerate until ready to serve.Shortly before serving, prepare the Pistou

and set aside.With clean hands, carefully sort through the

crabmeat, feeling with your fingertips to re-move any pieces of shell or cartilage whileseparating the crabmeat into large flakes andplacing it in a mixing bowl. Add half each ofthe chives, basil, and parsley, along with 4 ta-blespoons of the Lemon Vinaigrette. Toss

lightly but thoroughly, adding a little salt totaste, if necessary. Cover and set aside.Halve and pit the avocados. Using a table-

spoon inserted between the peel and flesh,carefully scoop out each half in one piece fromits peel. Place cut side down on a clean cuttingboard and, with a sharp knife, cut lengthwiseinto thin slices. With your palm, gently pressdown to separate and spread out the slices.Mound equal portions of the crab salad in

the centers of 6 chilled appetizer plates. Care-fully lifting the avocado slices with a spatula,drape an equal portion of them over eachmound of crab salad.Lightly drizzle a little Lemon Vinaigrette

over and around each serving, refrigerating therest for another use. Drizzle 1 tablespoon ofPistou over and around each serving, refrig-erating the rest for another use. Garnish withthe remaining fresh herbs and serve immedi-ately.

LEMON VINAIGRETTEMakes about 1 cup1/4 cup freshly squeezed lemon juice1 teaspoon grated lemon zest1 teaspoon sugarPinch saltPinch ground white pepper3/4 cup extra-virgin olive oilPut the lemon juice, lemon zest, sugar, salt,

and pepper in a sealable airtight jar or othercontainer. Cover tightly and shake until thesugar and salt have dissolved. Open the jar,add the oil, close again, and shake well. Re-frigerate until ready to use.

PISTOuMakes about 2/3 cup1/2 cup extra-virgin olive oil1 garlic clove, peeled1/2 cup packed fresh basil leavesPinch saltPut the olive oil and garlic clove in a blender.
