The BreadTraditional Breads Brioche Lobster Rolls (Metro NY# 340352) are pretty much the only way to go. They’re sliced just right so you can stuff them with lots of chunky lobster meat. And, the sides are sliced so you can spread them with butter and grill to toasty, buttery perfection.

The Wild Caught in the U.S.A. logo is used to identify species that are naturally wild, and live on a wild diet in the waters of the United States, and caught using long-line, trawling, purse-seining, or gillnetting methods. Lobster, oysters, shrimp, scallops, crab, salmon, clams, and other species are typically wild-caught.

The Farm Raised in the U.S.A. logo is used to identify species that are raised on aquaculture farms throughout the United States. Generally this process starts in a hatchery and the seafood is later released into contained, quality environments. These fish are commonly fed grain diets. Channel catfish, trout, clams, salmon, and mussels are species typically farm raised in the United States.

In 2013, Performance Foodservice launched a Species Verification program utilizing DNA testing to validate commonly mislabeled species such as grouper, red snapper, and others.

SCALLOPSOne of the most popular menu items in the United States is scallops. Sea and bay scallops have a sweet, rich, but mild taste. In 2014, we will introduce into the Bay Winds line, all-natural, sashimi grade, wild-caught Japanese Hokkaido sea scallops, harvested off the most northern coast of Japan.

COLD WATER LOBSTERFor elegant and casual dining, Canadian and Maine cold water lobster tails and lobster meat offer something for everyone. Lobster tails enhances the white linen dining, while lobster meat proves invaluable for quick and delicious menu applications.

ALASKAN KING AND SNOW CRABWild-caught Alaskan king and snow crab is extremely versatile and lends prestige to any menu. Soon Performance will be introducing all-natural king and snow crab harvested in the deep, icy cold waters of the Bering Sea. Caught, processed, and packed by native Alaskans in St. Paul, Alaska.

HARD-SHELL CLAMSSteamed clams are a popular appetizer and entrée item. They are mild-flavored, sweet, and briny. Our clams are conveniently packaged by the dozen in microwavable and boil-in-the-bag packaging. We also carry hard-shell clams imported from Asia packed in one pound packages.

OYSTERS ON THE HALF SHELLU.S. wild-caught Gulf oysters on the half shell offer convenience and freshness unlike any other frozen oyster. Utilizing a state of the art patented “Frozen Live”™ process, 100% of the oyster’s natural shape and juices are retained. Simply thaw and serve. No shucking required.

MUSSELSOur convenient to use, whole-shell mussels are rope cultured in the cold Antarctic waters of southern Chile. They are immediately cooked and vacuum packed before being quick frozen to lock in the freshness and purity of the sea. Simply heat and serve!

CATFISHU.S. farm-raised channel catfish is not only a Southern staple, but popular on menus across the country. This grain-fed, farmed fish has a consistently sweet, mild taste. The moist, dense meat is firm and has less flake than the typical whitefish. A new offering showcased during the 2013 Executive Conference is Delacata® Style Catfish Fillets which is different than the traditional catfish fillet. The mild flavor and thick, meaty flake of Delacata Style Catfish Fillets are similar to snapper or grouper, and hand-trimmed, leaving a fantastic and incredibly consistent prime cut of fish. This product will be available in early 2014.

ALASKAN HALIBUTWild-caught Alaskan halibut is wild and pure; and the largest of all flatfish. Its mild, slightly sweet flavor and unique firm texture have made Alaska Halibut a favorite of chefs and consumers alike. FLOUNDER The delicate flavor, flaky white meat, and fine texture of the flounder are very versatile for all menu applications. Flounder is very popular in the regions east of the Mississippi.

PANGASIUSPangasius, commonly farm-raised in Vietnam, is an economical white fish that is very popular in the United States due to its year-round availability and very mild flavor that accepts sauces and breading very well. While it is one of the 300 species of the catfish family, it is not the same species as the American Channel Catfish.

TILAPIA Americans ate 475 million pounds of tilapia last year. Historically, tilapia have been of major importance in artisan fishing in Africa. Now it is the most popular farm-raised fish imported into the United States. Tilapia accepts sauces and breading very well, and has become a staple on restaurant menus across the country.

MAHI MAHIThis beautiful, exotic fish with bluish-green and gold coloring performs perfectly on the grill. The meat is firm but fork-tender, with large moist flakes. Popular on menus nationwide, Performance’s Mahi Mahi is sourced from the prime fishing grounds of South America.

TUNA Yellowfin tuna is an excellent source of healthy, extra lean protein, and is a preferred species for sashimi. Firm and moist, yellowfin tuna’s steak-like consistency is excellent for grilling and for seared or blackened fish preparations.

CHILEAN SEA BASS The Patagonian Toothfish, otherwise known as Chilean sea bass is one of the most premium finfish available. Coming in 2014, sustainable and certified Chilean sea bass harvested off the coast of Antarctica will be available through Performance. With its rich, melt-in-your-mouth flavor, moderately oily meat that is tender, moist, and snow white, sea bass is a must for any premium seafood menu.

SMOKED TROUT AND SMOKED SALMONFarm-raised hot smoked trout and cold smoked Atlantic salmon are an excellent way to preserve the delicate flavors of each finfish, with each filet trimmed by hand with superior craftsmanship. In 2014, our branded seafood portfolio will expand with the genuine Scottish Smoked Salmon. For this premium product, Atlantic salmon is harvested from the waters around Scotland’s Hebrides Islands and smoked with hardwoods native to Scotland.

ATLANTIC SALMON“Ocean Raised”™ Atlantic salmon will also be available soon through Performance Foodservice. Harvested from the waters of southern Chile in South America, Atlantic salmon have a delicate flavor and light orange flesh. Atlantic salmon is one of the most widely consumed finfish in the United States.

ALASKAN SALMONThe clean, icy waters and abundance of natural food give Alaska wild-caught salmon unparalleled flavor and deep, beautiful colors. Performance will be introducing several species of all-natural, premium Alaskan salmon that is wild-caught, processed and packed by native Alaskans in Alaska. Wild Alaskan salmon comes from an extremely well-managed, environmentally responsible and sustainable fishery, resulting in superior quality, taste and eye appeal.

COD, HADDOCK AND POLLOCK These very similar, yet different, groundfish all offer a lean, tender texture and abundant flaky, white meat with a mild taste. They are each delicious either baked, broiled, or sautéed, and extremely popular when breaded or battered as part of a traditional fish and chips offering.

SQUID AND CALAMARI Squid is the second mostly widely consumed shellfish in the world. The squid’s tubes and tentacles offer a mild, somewhat sweet flavor, and are very popular breaded and sold as calamari. Performance Foodservice offers various species of squid, imported or wild-caught in the U.S.

SURIMI Wild-caught Alaskan pollock from the Bering Sea and wild-caught Pacific whiting from the coasts of Washington and Oregon are used to create imitation crabmeat which simulates the taste and appearance of natural chunks of crab at a value price.

Slaw:In a medium bowl, add Japanese Wasabi Citrus Dressing (517928.....6/60 oz) to shredded cabbage. Toss until it is well coated.

• The International Commission for the Conservation of AtlanticTunas (ICCAT) evaluates and provides management recommen-dations regarding the sustainability of current and proposedharvest practices of over 30 species including Swordfish, withinthe Atlantic Ocean. The fishery is sustainable.

Currently some of the most popular seafood consumed by Americans includes shrimp, salmon, tuna, cod, and crab. The lot goes far beyond that and if it’s in the ocean, Samuel’s can get it for you.

Flavors of the Sea: If you are new to seafood, you may be curious about what the sea tastes like. Seafood is very diverse and has unique tasts and texture qualities compared to meat products.

Fish – There are many different species with a range of flavors. Some are fattier, oilier fish with dark meat and a strong sea flavor. Others are leaner with snow white or pink, flakey meat, with a mild flavor. Most fish are excellent for cooking, but many are of the highestgrade of fish, fit for crudo dishes like sashimi. Flavors and textures vary, but raw fish is most often described as smooth, buttery, and rich.

Crustaceans – Common crustaceans include shrimp, lobster, crabs, and crawfish. Unique by species, they have firm, smooth, white meat with a mild sweet flavor.

Shellfish – Shellfish include mussels, oysters, clams, and scallops. They have a briny flavor and firm, tender texture with a creamy center.

Squid and Octopus – When cooked properly, they have a luxurious meaty texture with a mild flavor.

Pushing product through the streets of Philadelphia, Guiseppe was a young fish monger with a dream. Moving from Sicily, Italy, Guiseppe envisioned owning and growing his seafood business to provide for his family in America. Working day and night, he devoted his life to catering to his

customer’s seafood needs. Slowly but surely his business grew and so did his family. Guiseppe, his wife Concetta, and their four children all worked hard together to establish Ippolito’s, Philadelphia’s corner seafood retailer. Guiseppe was a hardworking man and he was my grandfather.

At the age of 13, my mother Rose, my grandfather’s eldest child, managed the store on 13th and Dickinson. She soon became immersed in the seafood business, buying and selling with her father. She eventually ran the whole business. As business was booming, our growth increased and so did our family. Everybody in our family worked in the business; my uncles, aunts, cousins, and myself. No one was exempt, and we soon found seafood to be our entire family’s way of life. We worked, ate, and loved seafood.

As I was a young boy in the 60’s, seafood was more than a part time job, it was a passion. Unlike most kids, I didn’t play with toys, I played with the fish. When my mom was at work, I would try to guess what fish were on display. With all the different colors and shapes, “Fisher Price” had nothing on Ippolito’s! I loved being in the store, and my grandfather knew it. He developed a relationship with me as he did his seafood, with love and patience. After losing his only son, I would become the heir of Ippolito’s.

School didn’t interest me; only the fish business did. With fish consumption growing in the U.S., I knew I was in the right place to be, so I followed my dream. We began to see many different species into our little corner store in South Philadelphia. As our selection grew, so did our customer base. We soon had local chefs coming to us for their seafood needs.

In 1974, Guiseppe retired and moved back home to Sicily. I then graduated from Central High School and started the manage Ippolito’s with my mother. By 1989, business had grown so much that we had to find a new location. We decided to start a separate company ‘Samuel’s and Son Seafood’. This new company would concentrate on the wholesale business and Ippolito’s would continue its success in the retail trade.

There were some struggles along the way, but we always made it out strong. My wife Donna was always by my side, sacrificing a lot to make it work. Raising a family of four children, we are still ever growing our family business in the seafood industry.
