Ham and Sausage Jambalaya Ingredients:• 1 tbsp. vegetable oil• 20 oz. smoked sausage cut up• 2 large onions, chopped• 1 green pepper, chopped• 3 pieces of celery, chopped• 2 cloves of garlic, finely chopped• 3 cups of chicken broth• 1 can (16 oz.) of whole peeled tomatoes in juice• 1/2 lb. cooked ham, chopped• 1 1/4 tsp. hot pepper sauce• 1 1/2 cups uncooked rice• Spices: bay leaves, thyme, sage, mustard powder,• black pepper, white pepper, cayenne pepper, salt.

( continue) Directions1. Using a cast-iron pot, heat up the oil and add the smoked

sausage, onions, green pepper, celery and garlic. Sauté until vegetables are tender.

2. Add chicken broth, tomatoes, ham, hot sauce, and spices and then season to taste.

3. Simmer uncovered for 15 minutes.4. Bring it to a boil and then add the rice. Cover and reduce heat

to a simmer.5. After 15 minutes, uncover to see if more water is needed. Add

water if necessary. You may want to use a large spoon to bring the rice from the bottom to the top but avoid stirring. Cover and continue simmering for another 15 minutes.

6. When the rice is cooked, remove from heat and leave covered until served.

This recipe will serve about 4 to 6 people.
