Serve half as an accompaniment to salad, or both halves as a quick but filling snack lunch. The stuffing is wonderfully light and flavoursome, and will leave you satiated. 1/4 cup (25g) goji berries 1/4 cup (10g) coconut flakes 1 stick celery 1/2” (1 cm) ginger root 1/2 cup cauliflower 1/2 tsp herb salt or ¼ tsp rock salt 1 tbsp tahini 2 avocados 25g alfalfa sprouts Start by grinding up the gojis and coconut together, either in a grinder or high power blender. Then transfer them to your food processor, or continue in your high power blender. Add in the celery, ginger, Herbamare, and cauliflower, and process until it’s as smooth as it will go. Finally, add the tahini, and process one last time. Take your avocados, slice them in half lengthways, and remove the stones. Take big spoonfuls of your mixture, and use it to fill the wholes where the stones were. You should have enough to spread a thin layer of stuffing over the top of the avocado. Sprinkle some alfalfa sprouts over the top, and you’re done. Eat immediately. How long they keep is dependent entirely on the quality of your avocados, but most avocados don’t do so well once they have been cut open.
