The Broncos came into the week three matchup with a record of 1-1, while the Pirates were looking to get their first win as they were 0-2. The Broncos defense was impres- sive once again, holding the Galena Pirate’s offense to just 127 yards on the day. Kleckler was the lead- ing tackler with eight total tackles. The League of Women Voters of Freeport is hosting a public program, “Narratives from the Border,” on Tuesday, Sept. 24, at 6:30 p.m. at St. John’s United Church of Christ, 1010 S Park Boulevard in Freeport.

The presenter for the evening is Rockford Attorney Linda Zuba. At-torney Zuba is a human rights ad-vocate who has been working and advocating for immigrants for de-cades. She has volunteered her time at an immigration center for women and children in Dilley, Texas and has

worked with asylum seekers stranded in Tijuana and other areas of Mexico as they wait to request asylum.

At the Dilley, Texas immigration center, Attorney Zuba helped women and children seeking asylum prepare for their “credible fear” interviews. She also helped them prepare materi-als for review by immigration judges. She has volunteered on three separate occasions in Tijuana, Mexico where she found thousands of asylum seek-ers in danger and desperate for help.

Attorney Zuba explains, “I have

promised asylum seekers I would share their stories about why they flee their home country and what happens to them once they request help.” In addition to sharing asylum-seeker stories, she will discuss what people in her audience can do to be of assis-tance to people seeking asylum at the southern border.

All voters and interested members of the public are invited to attend At-torney Zuba’s presentation and the following question and answer peri-od.

Last Saturday, the Orangeville Broncos football team hosted the Ga-lena Pirates in what would turn out to be a defensive battle through the fin-ish. The Broncos came into the week three matchup with a record of 1-1, while the Pirates were looking to get their first win as they were 0-2.

The Broncos got the first score of the game when none other than Gar-ret Rodebaugh plunged into the end-zone for a two yard touchdown run. Orangeville would miss the two-point conversion. That would not matter, however, as that first quarter score turned out to be the only touch-down of the game. The score would remain a 6-0 Broncos lead until the fourth quarter when they managed to extend the margin to a two score game when Zach Baker nailed a 33 yard field goal. The Field goal gave the Broncos a 9-0 lead that they held onto until the very end.

The Broncos tried to air it out a little more in this one but weren’t always successful. Quarterback, Jack Doyle completed four of ten passes for a total of 28 yards. The ground game proved to be the team’s strength once again in week three. Carter Kleckler led the team with 88 rushing yards on 22 carries, he also had three receptions for 29 yards putting him over the 100 yard mark for total yards. The Northwest Illinois Forestry Association (NIFA) will sponsor two Chain Saw Safety and Woods Worker (SAWW) courses in 2019: Tuesday, Sept. 24, Level 1 and Wednesday, Sept. 25, Level 2. This training is designed to teach novice and seasoned saw operators safe op-eration of gas-powered chain saws. All participants will be instructed in cutting and felling methods using the open-face directional notch and the bore-cutting techniques. Cours-es consist of classroom instruction and outside hands-on saw opera-tion. Level 2 Session is open only to those who have completed Level 1 any time previously. Level 2 will feature advanced tree felling tech-niques and more hands-on time in the timber. Topics to be covered

• safety and personal protective equipment (PPE)

• saw operation, starting, safety features, and body mechanics

• cutter tooth parts, basic saw maintenance, and chain filing

• saw reactive forces (push, pull, kickback, and attack)

• the 5-step felling plan • the safe cutting of spring poles

and limbing and bucking techniques. Cost and Registration

Mr. Hayek has received over 144 hours of advanced professional chainsaw training through the fol-lowing nationally recognized pro-grams: Safety and Wood Workers (SAWW) Training, Game of Log-ging™, and NWCG’s S-212 Wild-land Fire Chainsaws. Jay is also the lead chainsaw instructor for NRES 285 – Chainsaw Safety & Direc-tional Felling, a 2-hr undergraduate field course offered at the University of Illinois. Jay received his B.S. in forestry from the University of Illi-nois and his M.S. in forest resources (silviculture) from the University of Idaho.

A successful Fall Festival was held, and now everyone is cleaning up and resting up. The weather was perfect, and dare I comment on the fact that there were not a lot of bees. It was good for the Festival, but I wonder if it is bad for our environ-ment. The parade was really great; there were many wonderful bands, a lot of floats, tractors, and commercial vehicles. You could hardly get into town. Tony had a lot of great pic-tures in this past week’s paper and on the Shopper’s Guide Facebook page; I guess Fall has officially started.

This week’s recipes have a combi-nation of seasonal recipes and some good ones for all year round.

This salad is a combination of late summer vegetables. You can use fro-zen corn if fresh is not available, and you can substitute cherry tomatoes for the grape tomatoes. If you don’t have rice vinegar, you can use apple cider vinegar.

Lime Confetti Salad2 orange peppers, chopped2 medium ripe avocados, peeled

and cubed1 container (about 1¼ C.) grape

tomatoes, halved1 C. fresh corn½ medium red onion, finely

choppedDressing:¼ C. rice vinegar3 T. lime juice2 T. olive oil½ C. fresh cilantro leaves2 garlic cloves, halved2 t. sugar½ t. salt¼ t. pepper

FROM LENA’S KITCHENPlace the first 5 ingredients in a

large bowl. Place the dressing ingre-dients in a blender; cover and process until creamy and light in color. Pour over vegetable mixture; toss to coat and refrigerate, covered for 1 to 3 hours.

This fruit salad is really pretty with the different fruits. I especially like the fresh pineapple. The hardest part of the salad is cutting the grapes in half!

together vinegar, honey, orange zest, and juice, salt, and mustard until smooth. Whisking constantly, add oil in a slow, steady stream until combined. Stir in poppy seeds.

Salad: in a large serving bowl, combine pineapple, oranges, grapes, and strawberries. Serve with poppy seed dressing.

If you are tired of coleslaw and would like a use for a lot of cabbage, this unique roasted cabbage is a great side to roast pork or roast beef. It is very easy to make. Enjoy this differ-ent side for a fall dinner.

Roasted Cabbage2/3 medium head green cabbage,

cut into 4 wedges1 T. extra virgin olive oil1 t. garlic powder½ t. pepper¼ t. salt¼ t. crushed red pepper2 T. fresh lemon juicePreheat the oven to 450. Spray

a baking sheet with cooking spray. Place cabbage wedges cut side up

on prepared pan. Drizzle with oil. In a small bowl, stir together garlic powder, pepper, salt, and crushed red pepper; sprinkle onto cabbage. Bake for 15 minutes. Turn wedges, and bake until tender, about 15 min-utes more. Drizzle lemon juice.

I had a stuffed pepper recipe sev-eral weeks ago, and someone sent me this one that is just a little different. It uses Italian sausage. If you are a brave soul who likes spicy, you can use the hot Italian sausage. If you want a little spicier pepper, use green peppers. I don’t think they are as mild as the yellow and red ones.

Italian Roasted Peppers4 large red bell peppers1 T. olive oil1 lb. ground mild Italian sausage1 small onion, chopped1 C. chopped mushrooms3 cloves, garlic, minced¾ t. salt½ t. black pepper¼ t. crushed red pepper2 C. pasta sauce2 T. chopped fresh oregano or 2 t.

dried oregano1 C. shredded mozzarella cheesePreheat oven to 350. Cut ½ inch

off top of stem end of each pepper; discard seeds and membranes. If the peppers are not flat on the bottom, thinly slice the bottom to make it flat. Place peppers in an 8 inch square baking dish that has been sprayed with cooking spray. Thinly slice pepper tops.

In a large saucepan, heat oil over medium-high heat. Add sausage; cook, breaking up the meat into small pieces, until browned, about 8 min-utes. Add sliced bell pepper, onion, mushrooms, garlic, salt, black pepper and crushed red pepper; cook, stir-ring occasionally, until tender, about 5 minutes. Stir in pasta sauce and oregano. Divide sausage mixture among bell peppers. Sprinkle with cheese. Cover with foil. Bake for 30 minutes. Uncover and bake un-til lightly browned, about 5 minutes more.

This recipe is a good one for a Sunday dinner or a main dish at night. It is easy to make, and it is de-licious. A rotisserie chicken is about 4 cups of meat. You can substitute regular macaroni for the large elbow

macaroni; I like to use the large mac-aroni because it has big holes in the tubes to catch the sauce. You can get the large macaroni in larger grocery stores.

Chicken Bacon Ranch Casserole

1 pkg. (16 oz.) thick cut bacon, cut into 1-inch pieces

3 cloves of garlic, minced4 C. heavy whipping cream1 C. shredded Parmesan cheese2 (1 oz.) envelopes ranch dressing

mix2 t. salt1 t. pepper4 C. shredded cooked chicken1 pkg. (16 oz.) large elbow mac-

aroni, cooked according to package directions

1 C. chopped fresh parsley1 C. shredded mozzarella cheese½ C. shredded sharp Cheddar

cheesePreheat oven to 375. In a large

Dutch oven, cook bacon over me-dium high heat until crisp, about 20 minutes. Remove bacon using a slotted spoon, and let drain on pa-per towels, reserving 2 T. drippings in skillet. Add garlic to skillet, and cook until fragrant, about 1 minute. Gradually whisk in cream; bring to a low boil, and cook until slightly thickened, about 6 minutes. Add parmesan cheese, ranch mix, salt and pepper, whisking until cheese is melted. Remove from heat and sir in chicken, pasta, half of the bacon, and parsley. Spoon mixture into a 9 x 13 baking dish sprayed with cook-ing spray. Sprinkle with mozzarella, cheddar, and remaining bacon.

Bake until golden brown and bub-bly, about 25 minutes. Let stand for 10 minutes before serving.

If you are a fan of Rice Krispy treats, you will like this different ver-sion with the white chocolate. This version is just as easy as the regular one.

White Chocolate Cereal Bars

4 C. miniature marshmallows8 oz. (about 1 1/3 cups) white bak-

ing chips¼ C. butter, cubed6 C. Rice KrispiesUsing a Dutch oven, combine the

marshmallows, baking chips and but-ter. Cook and stir over medium-low heat until melted. Remove from the heat. Add the Rice Krispies; stir to coat. Transfer to a greased 9 x 13 pan; gently press mixture evenly into pan. Cut into bars. Hint: grease your fingers before pressing because it is much easier to spread.

The original recipe calls for one cup each of walnuts and pecans; I have an allergy to walnuts, so I use all pecans. I often have trouble find-ing espresso powder, so I use instant coffee. Senior Citizens Services Golden Meals Program

NICAA Golden Meals Program serves senior citizens in Stephenson, JoDaviess, Carroll, and Whiteside Counties.

NICAA Golden Meals delivers hot mid-day meals to persons 60 years of age and older who are homebound and are unable to make their own meals or are unable to attend a congregate site. Hot meals are delivered Monday through Thursday with a cold tray for Friday and frozen meals for the weekend.

The Golden Meals menus provide one-third of the USDA recommended daily allowances for senior citizens and are approved by a registered dietitian. Each meal included 3 ounces of protein, two ½ cup servings of fruits or vegetables, bread, and milk.

Congregate meal sites are located at:

• 524 West Stephenson St. in Freeport,

• Mest Manor at 525 3rd St. in Savanna,

• Dew Drop Inn at 104 Main St. in Rock City.

Meals are served from 11:00 a.m. to 12:45 p.m. Monday through Friday.

A confidential donation of $3.00 per meal is requested. No one will be denied service due to their inability to donate.

Wernicke, 75, of Lena passed away on Friday Sept. 13, 2019 at St. Mary’s Hospital in Madison, WI. He was born on Feb. 23, 1944 to Louis and Marie (Breed) Wernicke in Freeport, IL. He married Anita Rood in Monroe, WI in 1970. He graduated from Lena-Winslow High School in 1962. He was a third generation farmer and raised purebred shorthorn cattle and exhibited all over North America. Dale loved the cattle business in all aspects. He was a member of the American Shorthorn Association and served on the board of directors. He was a past Builder of the Breed award recipient in 1986 and received numerous National and State awards showing his cattle. He is leaving his legacy to the fourth generation, his son Ryan. He also enjoyed watching his grandchildren show cattle and pigs.

He is survived by his son Ryan (Mary) Wernicke of Lena, grandchildren; Laci, Ty and Isabella, Siblings-Alan Wernicke of NY and Lynda (Reggie) Greeley of CO and, numerous friends that he considered family.

He was preceded in death by his parents and wife Anita in 2012.

Funeral service will be held at 11 a.m. on Thursday Sept. 19, at the Leamon Funeral Home in Lena, IL.

Visitation will be from 4 till 8 p.m. on Wednesday Sept. 18, at the Leamon Funeral Home.

Burial will be in Lena Burial Park.A memorial has been established

DORIS GOFFDoris Goff, age 95, of Hanover,

Illinois, passed away Sept. 9, 2019 at the Elizabeth Nursing Home, Elizabeth, Illinois. A funeral service was held Saturday, Sept. 14, at the Hanover United Presbyterian Church. Burial will take place in Evergreen Cemetery, Hanover. Visitation was prior to the service at the church. Family and friends are invited to share in Doris’ life at www.lawjonesfuneralhome.com.

Doris was born Dec. 20, 1923, in Hanover, Illinois, the daughter of Charles and Iva (Shaw) Rall. She was raised on a farm during the depression, where they grew much of their own food. She often remembered picking rhubarb in the spring, then strawberries, then raspberries, and finally blackberries toward fall. They always had plenty to eat. She graduated from Hanover High School with the Class of 1941. On April 27, 1947, Doris married William Schaible. They celebrated

Nature awaits camp in Oct.The University of Illinois Extension will be hosting a mini nature camp

on Monday, Oct. 14, 8 a.m.-noon. Your child will be immersed in nature and fun during this event! Each activity will be fun for the participants and will include a nature hike, migration games, and nature arts and crafts. Participants will also learn about monarchs and their migration, stormwater movement, and outdoor recreation/fishing skills like how to cast and tie fishing knots, in a hands-on, interactive way. All youth who are currently in K-12th grade are invited to attend and 4-H membership is not required. This event will take place at the Horseshoe Mound Preserve located at 1679 N. Blackjack Rd, Galena, IL. Horseshoe Mound is a remarkable place to explore. With 40-acres, there are plenty of opportunities to enjoy one of the most scenic properties in all of northern Illinois. Horseshoe Mound features a central gathering area, viewing scopes, and scenic outlooks with views across three states. According to Jackie de Batista, Extension Educator-4-H Youth Development, “We’ve planned a fantastic day full of hands-on activities and nature games for your children to enjoy out at Horseshoe Mound, at peak Fall color time. I can’t think of a better place to spend this Columbus Day morning out of school!”

Obituaries18 years of marriage until William’s passing in 1965. Doris then focused on raising her three sons. She even convinced the factory she was working for to allow her to setup an assembly line in her garage in Hanover, so that she did not have to move her family when the factory left Hanover. Doris later married Doty Goff on Sept. 1, 1979. They celebrated 34 years of marriage. Doty passed away in 2014.

Doris worked for the US Post Office in Hanover until her retirement in the late 90s. She also worked for the Savanna Army Depot during WWII, and factory work, including Safeway Safety Products in Hanover, and the Savanna Garment Factory. Doris was a member of the Hanover United Presbyterian Church. Doris enjoyed crocheting, crossword puzzles and gardening.

Doris will be dearly missed by her three sons, Kenneth Schaible of Alpine, Wyoming, Wayne (Beth) Schaible of Warrenville, Illinois, and James (Mary Lou) Schaible of Elizabeth, Illinois; four grandchildren, Wayne Schaible, Katelyn (Andrew) Raine, Olivia (Shawn) Ozdinet, and Jeremy (Mary Beth) Schaible; three great-grandchildren, Norman, Quinn, and Elliott; one brother, Marshall (Donna) Rall of Independence, Missouri; and a sister-in-law, Betty Rall of Denver, Colorado. Doris is preceded in death by her parents; both husbands, William and Doty; two brothers, William and Raymond, and two daughters in infancy.

Doris Lee Jones-Redington, age 74, of Lena, IL went home to her Lord on Friday Sept. 13, 2019 at FHN Memorial Hospital. She was born on June 11, 1945 in Racine, WI to Albert and Florence (Pleiser) Jones. She married Gerald “Jerry” Redington on Feb. 27, 1965 in Bellevue, IA. Alongside her husband of 54 years they raised four children. Doris was a singer, songwriter

and country music legend at local karaoke bars. She was an avid Jeopardy watcher, even establishing a club with her friends. Her faith was strong and she was a part of prayer groups and a member of St. Joseph Catholic Church in Lena.

She is survived by her husband Jerry of Lena IL, children; Tony Redington of Lena IL, Tina (Robert) Wahler of Monroe, WI, Tonja Redington of Freeport IL, Troy (Joanna) Redington of CA, grandchildren; Steve Ellefson, Derek Wahler, Dylan Wahler, Mica Redington, and Rinoa Redington, sisters; Colleen, Valerie and LouAnn, many nieces and nephews and her prayer friends and Jeopardy opponent.

She is preceded in death by her parents, and brothers; Verlon and Lowell.

Per Doris’s request there will be no services held. There will be a private family burial at St. Joseph’s Catholic Cemetery in Bellevue, IA at a later date.

Cremation Rites have accorded. A memorial has been established

in her name. Doris touched many hearts with

her beautiful voice and ability to make people smile. On earth she was physically limited, but in Heaven she can dance with Angels.

Ecclesiastes 3:1-4; There is an appointed time for everything, and a time for every affair under the heavens. A time to be born, and a time to die; a time to plant, and a time to uproot the plant. A time to kill, and a time to heal; a time to tear down, and a time to build. A time to weep, and a time to laugh; a time to mourn, and a time to dance.

Area volunteers aim to pack more than 14,350 Operation Christmas Child shoebox gifts this year in the Northern Illinois area.

The community is invited to cele-brate this project during the Sunday afternoon motorcycle from Elburn to Aurora beginning at 3 p.m. Residents can join the journey by bringing their own motorcycle to 44W320 Kesling-er Rd. Elburn, Ill. 60119 on Sept. 29 at 3 p.m.

Special guest Vladimir Prokhnevs-kiy will ride side-care on the 15-mile journey then share his first-hand story of how the shoebox gift he received while growing up in Ukraine changed his life. The shoebox represented to Prokhnevskiy unconditional love that heals everything, and allowed him to forget his struggles for a moment and just feel loved.

For many years, Northern Illinio-is area residents have been a part of Operation Christmas Child, a global project that shares the true meaning of Christmas with millions of boys and girls around the world. Each shoebox, filled with fun toys, school supplies and hygiene items is a tangible ex-

great. I have seen the espresso pow-der once at Woodman’s in Rockford, but find that the substitutions do not take away from the great flavored cookie for the chocoholics like me. If you love chocolate, you will love this cookie.

Chocolate Chubby Cookies

2 C. pecans, chopped8 oz. Bittersweet bar chocolate,

finely chopped1 T. unsalted butter1/3 C. flour1 T. unsweetened cocoa powder1 T. instant coffee or 1 T. instant

espresso powder

½ t. baking soda½ t. salt2 eggs1/3 C. sugar1/3 C. packed brown sugar1 t. vanilla1 t. almond extract1 C. semisweet chocolate chipsToast pecans in a large nonstick

skillet over medium heat until fra-grant 5 to 7 minutes. Melt bitter-sweet chocolate and butter in a saucepan over low heat until nearly smooth; cool slightly. In a bowl, whisk together flour, cocoa, coffee, baking soda, and salt. In a large bowl, beat eggs, sugar, brown sug-ar, vanilla, and almond extract with

a hand mixer until thickened. Beat in chocolate mixture, then flour mixture. Stir in nuts and chocolate chips. Cover dough and chill at least 2 hour or up to 1 day. Preheat oven to 350. Line baking sheet with sheets of parchment paper. Drop ½ oz. dough balls (3 t.) onto prepared baking sheets, spacing 2 inches apart. Bake cookies until slightly soft, 10 to 11 minutes. Cool cook-ies on baking sheets for 5 minutes, then transfer to a rack to cool com-pletely.

We are charging through Septem-ber, and we still are having some humid weather. This past week has been giving us a lot of rain. If you

haven’t noticed the beautiful flower pots (they are a lot bigger than your usual pots) around town, be sure you look at them. The beautiful canna lilies that are yellow are very visible from the street. Thank you Lena Business and Professional As-sociation for buying, planting, and keeping them beautiful all summer long. It is a lot of work, and I some-times think we take things for grant-ed (like beautiful flowers). Thank you for your dedication to the beau-tification of our streets. I stopped at the Farmer’s Market this week and bought some beautiful green beans, broccoli, and onions. I had to get my weekly cookie fix, and bought

some jelly for the winter. There were beautiful tomatoes, breads, freshly canned green beans for the winter, and pickles. Remember to support our local Farmer’s Mar-ket; they will be back this week on Wednesday evening between 4 and 7. We continue to look for some recipes that feature vegetables from the garden and some peaches, rasp-berries, pumpkin, and apples.

To reach Johnson Creek Hard-woods, from Mount Carroll, go south on IL Route 78 for 2.6 miles, then (turn left) east on Timber Lake Road for 1 mile, then (turn right) south on Daggert Road for 1.5 miles to Johnson Creek Hardwoods at 6480 Daggert.

This tour is open to the public; there is no charge to attend.
