Polish food at this year’s Show Kitchen.
The Abu Dhabi International Book Fair has declared Poland as this year’s Country of Honour, and the book fair’s Show Kitchen will focus on Polish cuisine. Famous chefs from Poland will share their mouthwatering recipes, and food lovers can watch, meet, taste, and cook along with them at live cooking demonstrations. Indulge yourself in the unique aromas and flavours and take a journey that brings together the quality and passion of Polish cooking.

ChefMaciej Nowicki
Maciej Nowicki is the head chef at Wilanów in Warsaw’s King Jan III’s Palace museum. The chef started his career abroad, including high-profile kitchens in London, Paris and Lyon. After 10 years practicing modern European cuisine, he changed directions and decided to study historiography and the general history of cooking.
Maciej also organises culinary events to promote Polish modern cuisine; he has cooked Polish historical dishes for many well-known figures and personalities including former Polish president Lech Wałsa, Barack Obama, Talal bin Al Saud, Albert II, Willem Alexander, and Harald V.

ChefNorbert Sokolowski
Since 2015, Norbert Sokolowski has worked at Wilanów in Warsaw’s King Jan IIIs Palace museum. He is now the sous chef under the supervision of Chef Maciej Nowicki and works on historical culinary reconstructions based on the oldest Polish cookbooks, published by the museum, which date back to the 16th-18th centuries.
He is a laureate of several Polish culinary competitions, including: “Culinary Talent”, “Polish Cuisine Yesterday and Today”, and “Ale Pasztet.”
Norbert is a member of the National Association of Chefs and Confectioners, the only Polish gastronomic association that is part of the World Association of Chefs’ Societies.

Prof.Jarosław Dumanowski
Jarosław Dumanowski is professor of history and a specialist in food history and old culinary texts. He is the head of the Centre for Culinary Heritage at the Nicolaus Copernicus University in Toru and a member of the research council of the European Institute for the History and Culture of Food.
After graduating from university in Toru he studied at the University of Angers in France. He then worked as a visiting professor at the University of Bordeaux, the European Institute for the History and Culture of Food and the École des Hautes Études en Sciences Sociales in Marseilles Dumanowski collaborates with various chefs, culinary teachers and food producers to revive forgotten food traditions. He is the originator of the Monumenta Poloniae Culinaria series published by the King Jan III’s Palace museum in Warsaw and is a member of Chefs’ Club, a culinary academy with the most famous chefs in Poland.

ChefPawel Kazanowski
Pawel Kazanowski began his culinary adventure at a young age watching chefs at work where his mother was a restaurant manager at a traditional Polish restaurant. Fourteen years ago he moved to London, where his professional career started at the popular Japanese restaurant Yoshino. After gaining experience across Europe and Asia, he moved to the UAE in 2008 and joined Zuma, a high-end restaurant located in Dubai International Finance Centre. In spring of 2014 he moved to Abu Dhabi to lead Zuma. He is now responsible for all Zumas in the region and is based in Dubai. Kazanowski’s culinary skills, passion, and dedication have helped him win many awards including the Best New Restaurant in Abu Dhabi 2014. Although Pawel specializes in Japanese food, his passion for Polish cuisine and culture is very much alive and he is proud to represent Poland in the United Arab Emirates.

ChefPawel Wiktorek
Paweł Wiktorek inherited a passion for cooking from his mother. As a child he used to spend most of his time with his mum in the kitchen, where he began to learn the basics of cooking.
After graduating from culinary school in Poland, Wiktorek moved to London, where he discovered Japanese cuisine and became fascinated by it. His ambition and desire to produce the highest quality cuisine led him in 2013 to Zuma in Dubai.
He is currently the head chef of the Zuma in Bangkok, where he creates high-quality, innovative dishes. On his day off, he cooks Polish food, which reminds him of the tastes from his childhood.

ChefMario Fico
Mario Fico comes from Castellaneta, a small town in the south of Italy where passion for food and dining plays an essential part in daily living. From a young age Fico decided to turn his natural love of food into a professional career; his ambition has always been to share his knowledge and the joy he gets from cooking with others.
After receiving his culinary diploma in Italy, he continued his education in England at Thames Valley University in London. With this strong foundation he decided to explore the restaurant business in the United States, Australia, and Europe; he worked in everything from fine dining to brasseries and small local bars. In 2006, Fico joined Zuma in London. After a few years he moved to a newly opened branch in Dubai, and in 2016 he became head chef of Zuma in Abu Dhabi. Along the way he met many Polish chefs who helped him develop a love of Polish cuisine and he’s honored to share his experience and joy of cooking, combining his Italian finesse and Polish taste.

ChefKamil Matlok
The kitchen was Kamil Matlok’s natural environment since he was a boy. After school he would spend his time with his grandmother, who was an amazing cook specializing in traditional Polish home cooking. After gaining his culinary diploma in Debica, his hometown in southeast Poland, Matlok moved to Munich in 2003 then to the United Kingdom in 2005 to explore international cuisines. He worked in hotels and fine-dining restaurants and explored Italian, French, and Japanese styles of cooking. These experiences influenced him and helped enrich his Polish style of cooking with foreign flavors and techniques, though he remains sentimental about traditional Polish cuisine. In August, 2016, (Matlok) joined Zuma restaurant in Dubai and has become an important pillar of the kitchen, sharing his knowledge and work ethic with young chefs.

ChefMaria Goretti
Maria Goretti won the Gourmand award for the Best Cookbook in the World in 2017. She has hosted several TV shows including Do It Sweet on the NDTV Good Times channel and I Love Cooking on Living Foodz. Maria went to London’s Tante Marie, the highly regarded institute run by Michelin-starred chef, Gordon Ramsay, and earned a Cordon Bleu Certificate in culinary skills and bakery.

ChefKhawla Aissane
Chef Khawla Aissane hails from Morocco, where she earned her diploma in international cooking. After graduation, she explored different types of cuisines and trained in many kitchens and restaurants. She was the head of the first exposition of traditional Moroccan cakes in Rabat and for the first festival of Moroccan gastronomy in Agadir.
She is currently a kitchen and pastry correspondent for Al Akhbar newspaper and writes about cooking, pastry and health for Chehiwate magazine.

ChefRitu Chaturvedi
Chef Ritu Chaturvedi is a food blogger and food stylist who creates magic by using the colours of fruits and herbs. She views cooking as an art form and her kitchen as her studio.
She believes in simple, healthy cooking because what we eat reflects from our health; since food controls our mood and energy level, when we eat better we feel better. She wants to promote healthy cooking option for better life.
Her passion came from watching her mom in the kitchen, and she still prefers simple, home-cooked yet healthy food. She cooks healthy vegetarian food with natural ingredients: whole grains, good fats and local produce fruits and vegetables.

ChefIrfana Waheed
Irfana Waheed started cooking with her mother and grandmother when she was 8 and turned this love into a career. She offered cooking classes on a weekly basis with a menu featuring a starter, a main course and a dessert. Her recipes were inspired mainly by Western cuisine and she tried to use seasonal and organic products to prepare food of the highest caliber. Irfana currently owns a small restaurant in California called Anaya’s Kitchen.

ChefNisreen Al Marzooqi
Chef Nisreen Al Marzooqi is an Emirati chef who specializes in creative yet simple dishes that are a fusion of Persian and Arabic.She comes from a family that loves cooking; her main inspiration is her mum and her passion is cooking for her husband.

ChefMaimoona
Chef Maimoona is a food blogger and event organiser from India who is an expert in all kinds of Mughlai dishes. Since early childhood she has learned the secrets of authentic cookery from her mother, and she now runs her family’s catering business, which provides food for big marriages and functions.Using a creative yet simple approach, she improvises many dishes, and her curiosity and love of learning helps her make recipes she has only seen, heard or tasted.

ChefNoura Al-Amri
Noura Al-Amri is a teacher of culinary arts at the Mohammed Bin Khalid Al Nahyan Future Generation Society, where she trains future chefs in the art of Emirati cuisine. She offers Ramadan cooking classes and cooks special desserts during Eid.

ChefHasnaa Kebouri
Chef Hasnaa, a mother of three, is a specialist in Moroccan cuisine. She makes delicious traditional Arabic food but adds a twist to make them look and taste different. The art of cooking has been passed on from one generation of her family to another, and Chef Hasnaa learned to cook from her mother. She loves to feed people and food has always been an important aspect of her life. “Let food be your medicine” is her motto, and she insists on using natural and organic ingredients for their healing power. She then cooks them with love and positive energy.

ChefHaiya
Chef Haiya is a food blogger that left the world of marketing and finance for a world of eating, critiquing, cooking, and feeding friends and family. She grew up in Saudi Arabia and now lives in the UAE. If you›re looking for someone who lives for good food and hospitality, she is the person for you!
She writes a blog called “Pass Me the Dim Sum,” which nods to her love of Far East cuisine. “I leave more and more of my heart in the Far East every time I visit,” she says.

ChefMazheruddin
Mohammed Mazheruddin hails from Hyderabad and is an expert in all kinds of Mughlai dishes. His cooking is creative yet simple and involves much improvisation. His catering company, Anmoal, manages requests for large events back in Hyderabad. Mazheruddin has participated in numerous cooking challenges and hosted cooking shows for book fairs.

Chef Marika Johansson
A certified trainer and nutrition expert from Sweden, has worked in the US, UK, Australia and Scandinavia as an athletic instructor and a transformation specialist. She is a Master Trainer and certifies trainers all over the world. She has been a part of the fitness industry for over 20 years as an athlete and professional bodybuilder within the International Federation of Bodybuilding and Fitness. She helps her clients achieve their goals without succumbing to unhealthy cravings by combining functionality, agility, and resistance training with healthy but tasty recipes. She has worked with Bollywood stars such as Alia Bhatt, Shahid Kapoor, Siddharth Malholtra, Ranbir Kapoor, and Kareena Kapoor as well as Ranveer Singh, Alia Bhatt, Ranbir Kapoor, Siddharth Malhotra, and Arjun Kapoor.

Chef Shazia Khan
Is a homemaker and businesswoman from Bangalore who has become a national celebrity after her appearance on Master Chef showcased her skills and creativity in the kitchen to millions of homes. She won the hearts of the audience with her calm demeanour and pleasant attitude even under pressure. She always had dreams of pursuing her personal passion — food! She says that cooking for her is a stress reliever and a very spiritual experience. Although she has no formal training, she has developed her culinary skills by cooking for her family and friends through trial and error.
