Our free range eggs are sourced from hens farmed in Waterbeck, Lockerbie in Dumfriesshire, located in the borders of Scotland.

Cullisse Highland rapeseed oil is cold pressed from oilseed rape grown on the fertile farmland surrounding the Dornoch Firth.

Award winning Stornoway black pudding made by Charles MacLeod on the Isle of Lewis.

Shetland mussels, the open seas and strong tidal currents result in crystal clear waters – an ideal environment for shellfish to thrive.

Venison chorizo and venison salami, both award winning products, are made by Great Glen Game from Roy Bridge (near Fort William).

Our venison is supplied by Ardgay Game, a family company, who source deer from estates located throughout the highlands.

Rich grasslands in the south of the island are excellent grazing for dairy cattle which produce milk for Arran Dairy ice cream.

Our beef is born and raised in Scotland on farms which meet Quality Meat Scotland assurance standards. The meat is carefully selected, then hung for 21-28 days.

Shetland, the leader in providing top quality fresh salmon has the perfect condition for lean, fit fish. The current here allows the salmon to grow both pure and naturally.

We source our smoked salmon from the oldest continuously running smokehouse (since 1888), Ritchie’s of Rothesay, on the Isle of Bute in the Firth of Clyde.

Strathdon Blue is a rich creamy cheese made from the milk of Ayrshire and Holstein-Friesian cows at Blarliath Farm in Tain. This cheese is suitable for vegetarians.

We use award winning Rooster potatoes from Albert Bartlett’s modern and environmentally friendly facility in Airdrie.

Our milk and butter is provided by the award winning Graham’s Family Daries, who have been producing milk in Stirlingshire since 1939.

As Scotland’s diverse landscapes and climate affect Scotch whisky so they also create the perfect conditions for some of our most renowned products. Scotland’s larder is its mountains and glens, rivers and sea. Estate bred beef and lamb, prime game, salmon and the freshest vegetables are all sourced with a real eye for quality. Our menus change with the seasons and all of our food reflects the

the very best of what Scotland has to offer.

Clava brie is an organic, vegetarian, pasteurised, soft cows cheese from Connage Highland Dairy near Inverness. A smooth, creamy, strong and earthy brie.
