Armor Up Your Snack StationThank you for leading Knights of the North Castle! As Snack Leader, get

off to a great start by following these simple pro tips:

Attend all Knights of the North Castle VBS leader trainings to learn about the program and how your station �ts into the overall message!

Equip your Snack Station for potential spills! Stock your area with:• the “Snack Station” sign from the Activity Center Signs and Publicity Pak (Post your menu for the day next to your

station sign!)• Knights of the North Castle! Tablecloths and/or Wall Coverings to protect surfaces• plenty of paper towels and non-toxic cleaners• easy access to a sink/water supply• an atmosphere of adventure!

Easy Shopping ListsLet our online Snack Calculator Tool help you with your shopping list! Go to CokesburyVBS.com, select the Tools option, and click on the Snack Calculator tab. Simply select the snack you would like to make, enter the number of Knights, and click Calculate. Easy!

Serve water or 100% juice with each snack to help Knights stay hydrated, cool, and energized.

Food Safety AlertsEach snack option in this guide lists potential allergen alerts and safe substitutions you can make for your food-sensitive Knights.

Some children can have severe reactions to foods even without ingesting them. If one of your Knights has such a sensitivity, it’s best to ban that food item entirely from your VBS program. Avoid cross-contamination by designating tools, containers, and prep areas for allergen-free foods only. Clearly label your utensils and make sure all your helpers are properly trained in their usage. If you have multiple children with similar needs, consider serving safe snacks to the whole class or group. Buying supplies for larger numbers can simplify your prep processes.

Allergen Alerts• Check your roster to ensure you choose fruits to which there are no sensitive or allergic Knights.• Gluten: substitute gluten-free crackers, pretzels, cereals, and cookies• Dairy/casein: substitute coconut oil for butter• Dairy/casein: substitute casein-free candies• Marshmallow and marshmallow �uff may contain hidden allergens; substitute allergen-free or homemade versions.• Commercial gummies and decorations may contain hidden allergens; substitute allergen-free or homemade versions.

Throughout the Bible, food is about more than just nourishing the body. Sharing a meal is a sacred act, and every person is welcome around the table. This welcoming shows acceptance and love to all who come to your VBS program,and these sessions will become sacred in the hearts of your Knights.

What to Expect in Your Snack Time SessionsEach session of this book provides the following tools to help structure your Snack Station. Feel free to adapt this material to �t the size, needs, and demographics of your group. We know that every program, team, and gift set is unique, so make each session your own— and have fun with it!

PreparationSet your station up for success with steps which not only get you ready to lead and serve, but they also create an atmosphere of welcome that your Knights will feel right away.

WelcomeGreet your Knights as they arrive with a few words of welcome and a group question to help them settle in and focus.

BlessingEach session provides a pre-written blessing for you to speak over your food and group before eating. Feel free to invite volunteers to read these blessings for each group, or to say their own original prayers instead!

Snack TimeAlong with your helpers, guide Knights as they eat to learn and practice good manners and share space. Once all your Knights are settled and eating, lead them in a discussion of the Bible Tie-In (below).

Bible Tie-In (See pages 6, 10, 14, 18, and 22)These discussion questions connect your snacks with the Bible story, Banner Verse, and/or Castle Callout for each session.

Optional: Kids in the KitchenMore and more kids are getting involved in prepping and serving food—a trend that is expanding their palates to include healthier foods, as well as reinforcing values of manners and servant leadership!

If your time and setting allow, consider some of these ideas for getting your kids into the VBS kitchen:• Reserve some age-appropriate food prep steps for your Knights to do before the blessing.• Encourage Knights to prepare and serve plates to their leaders before serving themselves.• Assign one group of Knights at each session to prepare snacks for all the rest.• Create a rotation within each group so that everyone has a turn to serve, help, and clean upduring VBS.

strawberry-�avored toaster pastries crystal sugar or sanding sugar: red, yellow, and orange white frosting Teddy Grahams® snacks

Directions Give each Knight a paper plate. Have Knight place the toaster pastry on the plate. Allow Knight to spread toaster pastry with thin layer of frosting. Give each Knight a small amount of crystal sugars or sanding sugars in a bathroom-sized paper cup and a plastic spoon. (Use colors such as red, yellow, and orange to represent the �re from the Bible lesson.) Have each Knight sprinkle or spoon the sugars over the frosting. Place a dab of frosting on back of teddy bears and place them “in the �re.”

1 box orange gelatin whipped cream (optional) orange crystal sugar (optional)

Directions Using templates on page 27 and 28, copy wing pattern onto orange cardstock, and eye pattern onto white cardstock. Cut out pieces for each Knight. Assemble cup according to picture. Make gelatin according to package directions. Pour into prepared cups. Place in refrigerator. Let Knights add whipped cream and crystal sugar.

tall, thin microwavable glass knife or kitchen scissors (adult use only) large sheets of paper cookie sheet/pan (optional)

Pretzel Power SticksArmor of God SnackIngredients

pretzel rods vanilla candy melts large marshmallows

Directions Melt candy melts in microwave (according to directions on package) using a tall, thin glass. Dip pretzel rod into melted candy leaving about 1⁄3 of pretzel undipped. Dip one at a time, letting excess candy drip off. Place on parchment paper to let fully harden. Placing in the refrigerator will speed up this step. Cut marshmallows into 3 layers. Use one layer per pretzel. Cut hole in middle of marshmallow layer and slide onto pretzel up to the hardened candy. Cover large area with paper to prepare for spraying. Wrap the 1⁄3 of the pretzel that is not candy-coated with parchment paper. Stones of OatsBible Story SnackIngredients

1¼ cups oats (rolled or quick, not instant) ½ cup sun nut butter (made from sun�ower seeds) or use nut butters such as almond or cashew (if children do not have any nut allergies) 1⁄3 cup honey 1 teaspoon vanilla extract ¼ teaspoon salt ½ cup mix-ins (combine different choices to make ½ cup; for example, ¼ cup white chocolate chips and ¼ cup dried cranberries) chocolate chips, various �avors coconut �akes chopped nuts (almond, cashew, hazelnut); do not use nuts if any of the children have nut allergies. (optional) ¼ teaspoon cinnamon (optional) 2 tablespoons cocoa powder (to make the snack chocolaty)

Directions Put all ingredients in a large bowl and mix together. If mixture is too wet, add more oats. If too dry, add more nut butter. Place bowl in the refrigerator for 30 minutes. Remove bowl and roll mixture into 1½-inch balls. Store the “stones” in an airtight container in the refrigerator. To serve, place �ve “stones” in brown paper bag and tie with twine, as shown.

Materials paper plates jumbo craft sticks or other child-safe spreaders knife (adult use only)

Castle CrackerTheme SnackIngredients

graham crackers stick pretzels marshmallows and marshmallow �uff sun nut butter (made from sun�ower seeds) clear or blue crystal sugar or sanding sugar

Directions Give each child a paper plate and a jumbo craft stick or other child-safe spreader. Using 2 sheets of graham crackers, make a sandwich with the marshmallow �uff. Take ¼ of another graham cracker and break into 3 equal pieces. These will be the turrets for the castle. Cut off one side of a marshmallow (about 1⁄3). Form a �ag with the cut off piece and attach to the middle turret with a stick pretzel. The remaining part of the marshmallow will be the castle’s front door. Spread a thin layer of marshmallow �uff on top of graham cracker. Sprinkle with blue crystal sugar or blue sanding sugar.

1 cup unsalted butter, softened 1 cup granulated sugar 1 teaspoon vanilla extract 1 egg 2 teaspoons baking powder 3 cups all-purpose �our variety of frostings, sprinkles, and crystal sugar or sanding sugar (optional) 1/2 teaspoon almond extract (If any child in your group is allergic to any nuts, simply omit this extract. Leaving out the almond extract will not affect the quality of the cookies.)

Directions Preheat oven to 350 degrees Fahrenheit. Cream butter and sugar until smooth. Mix in egg. Beat in vanilla extract. In a separate bowl, combine baking powder with �our. Add �our mixture, a little at a time, to the wet mixture. Dough will be stiff. If it becomes too stiff for your mixer, turn it out on a covered counter top. Wet your hands, then knead by hand until mixed. Roll out dough 1/4 inch thick. Cut cookies into desired shapes. Bake at 350 degrees for 6-8 minutes, until lightly golden around the edges. Decorate with frosting and sugars.

Bible Tie-InIn our Bible story, we discover how Jesus calmed the fears of the disciples by walking toward them on water. One of the disciples named Peter tried to walk on water. Peter ran into trouble as he tried walking on water because he took his eyes off of Jesus. When we have a lot coming at us, it can be hard to have faith and stay on our feet. Jesus is our shield and protector, and provides the faith we need to stay upright.

1 cup semi-sweet chocolate chips ½ cup sun nut butter (made from sun�ower seeds) or use nut butters such as almond or cashew if children do not have any nut allergies. ¼ cup butter 1 teaspoon vanilla extract 1½ cups powdered sugar 3 cups stick pretzels

Directions Measure Chex® cereals and place into mixing bowl. Set aside. Place chocolate chips, sun nut (sun�ower) butter, and regular butter in a 1-quart microwavable bowl. Microwave uncovered for 30 seconds. Stir microwaved ingredients. If contents do not stir smoothly, microwave 30 more seconds. Stir in vanilla extract. Pour mixture over Chex® cereal, stirring until evenly coated. Pour mixture into resealable, food storage bag. Add powdered sugar. Seal bag and shake until coated.
