Develop your skills at ZBC in Denmark

We would like to welcome you to a learning full study in Denmark with focus on wine, spi-rit, and beer.

Being a Sommelier is more than just a title. Today the Sommelier is one of most trusted employees in the restaurant. As a Sommelier you will be the connecti-on between the Chef, the chef of the restaurant, the guests, and the owner, making sure the guests recei-ve the best service by understanding their needs. You are responsible for the wine cellar, buying and selling wine, making the wine list, and introducing the other employees to the wines.

At ZBC you will get a skill course as Sommelier, through a lot of exciting theory and tasting of

different wines. You will also learn about which wine/beer/juice that match the food. You will be taught the basic knowledge of the most important wine and beer countries and regions. You will also learn about the different grape varieties and their characteristics.

Another very important part of working as a Sommeli-er is to manage the role of being a host for the guests in the restaurant. For that part, you will be taught psy-chology, sales, service, and other parts of the work as a Sommelier.

You will live on the student hostel at ZBC. Here you will meet some other Danish and International stu-dents, where you will experience different cultures during your stay.

Day 1 – 27 June Arrival and check in at the student hostel in Slagelse

Day 2 – 28 June History of wine and spirit

Day 3 – 29 June European wines – An introduction to major wine areas – France (Bordeaux, Bourgogne)

Day 4 – 30 June European wines – Major wines areas – France (Loir, Rhone, Alsace, Champagne)

Day 5 – 1 July European wines – Italy, Spain, and Portugal

Day 6 – 2 July Practice and repeating the learnings of the week

Day 7 – 3 July Time off and relaxation – opportunity for sightseeing

Day 8 – 4 July European wines – Germany, Austria, and Denmark

Day 9 – 5 July World of wine – Australia, South Africa, and New Zealand

Day 10 – 6 July World of wine – Chile, Argentina, introducti-on to spirit

Day 11 – 7 July World of spirits

Day 12 – 8 July World of spirits

Day 13 – 9 July Practice and repeating the learnings of the week

Day 14 – 10 July Time off and relaxation – opportunity for sightseeing

Day 15 – 11 July Beer production

Day 16 – 12 July Beer of the world

Day 17 – 13 July Food Parring and beer

Day 18 – 14 July Preparation for exam

Day 19 – 15 July Exam

Day 20 – 16 July Departure

Teaching timeTeaching starts all days at 8.30 am and ends at 4 pm, with lunch in the middle of the day.

Arrival and departureYou are responsible for booking flights and transport from and to Copenhagen Airport - www.cph.dk/en

If an entire team arrives from the same school, ZBC can arrange a combined transfer to and from the airport. However, this is at an additional cost.

You cannot stay at the hostel after the last day of the

program, so you must book your own accommodati-on and travel, if you wish to travel further.

Price for the courseThe price for the course is 1700 € including accom-modation, breakfast, lunch and dinner and educatio-nal material.

You will only need to bring pocket money.

You are responsible for your insurance, Visa (approxi-mately 60 USD) and plane tickets. This is not included in the price.

Currency in DenmarkIn Denmark, Danish kroner is used as currency. An example 100 € is 743 DKK.

BadgeAfter ending the course in Denmark, you will receive an electronic badge.

The badge will show what you have been working with during your participation in the course. You can share the badge on the social medias and use it on your CV for your further working life. If you participa-te in both areas, you will receive a badge for each of them.

Presentation of the professional lectures

Sommelier Martin Castillo will be in charge of the sommelier course. Martin is educated waiter and is certificated sommelier. Martin is a famous person within the business of sommeliers. He has worked for high profiled restaurants in Denmark as Sommelier.

Martin has also worked with wine around the world, as winemaker in Sicilia and wine culture in Rhone. Martin is also member of the tasting panel of the Association of Danish Winemakers, which each year is making the ranking for Danish wines.

Value-addedThe course awards you a certificate documenting the skills you have learned during your visit to Denmark. You get specialist knowledge that you can put in your future job overview. If you are either striving for a career in a 5-star hotel, in an upscale restaurant or want to start alone, you will be able to add profits to this business.

The number of participants in the course.There must be a minimum of 15 participants for the course to take place and there is a maximum of 25 participants. If the course is fully booked and there are participants on the waiting list, another course will be offered with the possibility of participating there.
