decided to make mouth-watering and delectable Stuffed Amritsari
Kulcha. Being a food lover I always wanted to eat this amazing North
Indian brunch. My first memories of Kulcha are from avenues of Delhi
that is the place I had it first with my mother when I was a child. But I
wanted to eat and relish this food in the city of the Golden Temple –
Amritsar, the place of its birth.
When it comes to food, I am crazy and nobody can stop me. Therefore, I
went alone to this city to relish the Amritsari Kulcha. While making this
recipe those wonderful memories and feeling passed through my heart.
Here I bring to your doorstep the hearty food of Amritsar: The Amritsari
Kulcha.
INGREDIENTS FOR STUFFED AMRITSARI KULCHA

1 Refined flour (Maida) 200 gms
2 Carom seeds 1tsp
3 Baking powder 1 tsp
4 Ghee 2 tsp
5 Salt 1/2 tsp
6 Sugar 1/4tsp
7 Fresh Green Coriander 2-3 bundles
Ingredients for Stuffed Amritsari Kulcha.
Ingredients for filling Stuffed Amritsari Kulcha

1 Boiled Potato 3-4 medium sized
2 Cottage cheese 2-3 ounces
3 Pepper powder 1/2 tsp
4 Green Chili 2-3
5 Dried Fenugreek leaves 1tsp
6 Dried Pomegranate seeds 1 tsp
7 Cashew Nuts 6
8 Chopped Raisins 8
9 Chopped Green chilies As per taste
10 Salt 1/2 tsp
DIRECTIONS TO FORM SOFT DOUGH
To make this recipe we will first prepare the dough and then the stuffing.
In order to make dough, take refined flour, baking powder, carom seeds, chopped green coriander leaves, ghee, salt, sugar in a bowl and blend them well using water.
Use all your muscle power to convert this mixture into soft dough. Cover dough with a lid and keep it aside for almost an hour.
DIRECTIONS TO BE USED IN STUFFED AMRITSARI KULCHA
Squash dried fenugreek leaves and grind pomegranate seeds to a coarse powder.
Take the mashed potato and cottage cheese (paneer) in a bowl and add all the spics
(Cashew Nuts, chopped raisins, chopped Green chilies, and pepper powder).
Mix all the ingredients and make small balls of dough to form the filling.
Now make small balls of dough just the same way as we do to make chapattis.
Roll the balls and straighten them out and place the filling ball in the center.
Enfold all the sides to make ball once again. Dust will flour and roll these balls to make medium
size thick oval disc.
Gently place Kulcha over the pan.
Apply oil or ghee on the kulcha and cook both sides till they turn brown.
