Mixthezucchini,carrots,spicesandeggsinalargebowlandsetaside.Greasea9x13bakingpanwithbutterandpourtheeggmixtureintothepan.Foraswirledeffect,useaforktocreateacircularpattern.

Bakefor45minutesoruntiltheedgesarebrown.Thequichewillpuffupwhilebakingandthendeflatewhenremovedfromtheoven.Thiscanbemadeintomuffinsbydecreasingbakingtimeto15minutes.

Inalargebowl,combinebeets,beans,apples,walnuts,oilandvinegar.Tossgentlytomixandchill.Spoonmixtureontoabedofgreens.

Inasmallbowlormeasuringcup,whisktogetherthedressingingredients. Inabowl,combinethesaladingredientsandtosswiththedressing.

Cleananddrythekale.Then,rolltheleaveslikeacigaranduseaknifetoshreditintosmallpieces.Discardthebottomtoughendsofthekale,andsprinkleitwithseasaltandstir.Addthelemonjuiceandstiragain.*Addoliveoil,avocado,tomatoes,beansandcayennepepper.
