Thank you for joining us at Spark Chicago’s Sugar Rush sweet and savory tasting benefit. In our fourth year, we are honored to have your support as well as the support of our event host City Winery, the top Chicago chefs who make this event such a delicious success, our corporate sponsors, in-kind, and silent auction donors, mentors, school partners, and last but not least our Chicago Executive and Advisory Board members.

Spark is the leading organization partnering with schools, families, great companies like our Sugar Rush sponsors to pair 7th and 8th grade youth with mentors to empower learning and inspire big dreams. Our mission is to get our students - who are at a critical time in their lives and in their education as middle schoolers - engaged, on-track, and ready for success in high school and beyond.

Together, we are helping Chicago youth discover what’s out there and achieve what’s possible - and it’s working. Here in Chicago, 95% of Spark students complete 8th grade on-track for high school compared to 71% district wide.

Lawrence Letrero of Sable Kitchen & Bar is originally from Windsor, Ontario Canada and moved to Chicago IL in 2006 to attend culinary school at Kendall College. Charles Calloway currently practices law at Chapman and Cutler LLP where he represents financial institutions and other businesses in connection with domestic and international direct placements of senior and subordinated debt in secured and unsecured financings including real estate, public utilities, sports finance, and general corporate financings. Charles has been a Spark mentor since 2009, first in San Francisco, and helped launch a partnership between Spark Chicago and Chapman and Cutler LLP in 2013. Chapman and Cutler LLP recognized Charles as the recipient of the national 2013 Pro Bono and Volunteer Achievement Award for organizing and leading Chapman attorneys and staff who have dedicated 500+ pro bono and volunteer hours to mentoring over 30 students. He also serves as a leader on the Spark Chicago Advisory Board as 2015 Sugar Rush Event Chair and was the 2014 Mentor of the Year award recipient.

Representing the musical talents of Chicago Jazz Philharmonic’s “Jazz Alive” program in CPS schools, these students (grades 5-8) receive free weekly band instruction and mentorship from orchestra musicians. Jazz Alive targets schools with little to no music programs to establish a sequential learning program that tracks students from grades K – 12 for continued participation in music and band programs. Many Jazz Alive students continue their music learning over the summer at the two-week intensive summer Jazz Academy, one of the city’s most accessible full-day music camps, serving students from under-resourced communities.

Alison Cates of Green Zebra enjoyed global experiences that have gifted her with a unique understanding of the various foods available around the world, as well as an appreciation for not so aggressive, yet sweet, dessert offerings. Kym DeLost of Acanto criss-crossed the globe growing up in a Navy family. Now the sweets she puts on the plate tell the tale of her adventures: elderflower jellies, pea and olive oil cake, and buttermilk mousse. Her Instagram feed is bliss for dessert lovers. Kelly Helgesen of Lula Cafe is a Houston native who has been cooking and baking since she could read the recipes on the back of cans and chocolate chip packages. Joseph Heppe of Oak + Char is a chef to watch who puts the influences of previous experience together to create an exciting modern Midwestern melting-pot cuisine grounded in Asian, Spanish and American ingredients and technique.Honed skills at Vermilion, Mercat a la Planxa, Untitled

Kang Kuan of Tyson Foods was born in Taipei, Taiwan and immigrated to Los Angeles when he was 12 years old. He spent much of his teenage years helping on the family farm in Napa Valley, California. Following years of experience in restaurant kitchens from California to DC and New York, Kang now leads flavor and product development as well as education and culinary events as Executive Research Chef for Tyson Foods where he works closely with Spark mentors and students. Leigh Omilinsky of Café des Architectes oversees Sofitel Chicago’s entire pastry program including private dining, amenities and the plated desserts. Angels & Cowboys Proprietary Red is richly concentrated, juicy and dense with woodland berries, ripe dark cherry, bergamot and fig, accentuated by nuances of warm spice and dark chocolate. Supple and beautifully complex, offering a lengthy, generous, decadent finish. Pairs well with duck confit, Asian BBQ, skirt steak, hamburgers, grilled vegetables, charcuterie, harder cheeses like cheddar and gouda, hearty pizzas and rich pastas.

Angels & Cowboys Rosé has bright, mineral and ethereal aromas with hints of pink grapefruit, white peach and spicy floral notes.This lively, racy, dry Rosé with flavors of citrus blossoms, pink grapefruit, and mineral is one of the few wines that works well with vegetable dishes and spicy ethnic foods. Enjoy it with curry rice, Tandoori meats, seared tuna, any sushi from vegetables to strong fish, Yakitori kabobs, baked tofu, crab cakes, shrimp cocktails and ceviche.

Cannonball Cabernet features aromatic tiers of ripe mulberry, spiced black tea and purple floral notes. Ample at its core with flavors of cherry flambé, Oaxacan chocolate and roasted hazelnut, all contributing to tremendous depth, leading to a long and unstinting finish. Pairs beautifully with lamb chops, roasted duck, cassoulet, black and bleu burger, grilled eggplant, Stilton and dark chocolate chip cookies!

Cannonball Chardonnay has heady notes of orchard apple, lemon curd, nectarine and wild honeysuckle veiled with hints of almond. Striking yet expansive, it develops over the palate with sophisticated creaminess and racy acidity. Captivating flavors of white peach, brioche and quince compote, layered with exotic hints of vanilla and saffron, leading to an enigmatic, enduring finish.

312 Urban Wheat Ale was inspired by the city of Chicago and densely populated with flavor, 312’s spicy aroma of Cascade hops is followed by a crisp, fruity ale flavor delivered in a smooth, creamy body that’s immensely refreshing.

Goose IPA recalls a time when ales shipped from England to India were highly hopped to preserve their distinct taste during the long journey. The result is a hop lover’s dream with a fruity aroma, set off by a dry malt middle, and long hop finish.

Matilda was inspired by great Trappist ales, our complex Belgian Style Pale Ale is fermented with the wild yeast Brettanomyces. Matilda pours a golden sunrise color with dried fruit and clove aromas, a spicy yeast flavor, and a satisfying dry finish. According to legend, a grateful Countess Matilda founded a monastery where, over centuries, monks have been brewing ale unique in character. While in Belgium, we were inspired by the story and the monks’ beer. We returned to Chicago and brewed our homage – a Belgian Style Pale Ale named Matilda.

Sofie is a sparkling Belgian Style Farmhouse Ale is wine barrel-aged with an abundance of hand-zested orange peel. Spicy white pepper notes contrast the citrus tartness. The light, refreshing, creamy vanilla finish will excite those fond of Champagne. Originally brewed by Belgian farmers to attract the best farm hands, we were inspired to brew an exceptional ale as inviting as the original Belgian Farmhouse ales. Light and effervescent, we named it for our founder’s granddaughter Sofie.
