Our wine list is a bespoke collection of wines from across the world, we strive to bring you the new, the unusual and the very best. We work closely with suppliers from across the country to take you on a

journey, from the far reaches of South America, India, Australia and many more. Whilst not forgetting England.

The array of wines selected is designed to complement and enhance extraordinary cuisine produced by

Peter Neville and his award winning team, who select only the best seasonal produce from local suppliers.

Something New

We are passionate about our wine selection and feel it is important to be able to offer a great selection of wines from across the world and from places people do not get to visit. This month we are happy and excited to be working with Sula Wines of India. After Liam visited the vineyard at the end of March he could not wait to bring the wines back for The Pheasant’s guests to enjoy. In 1996, Rajeev Samant planted the first wine grapes in Nashik and today this region is not only India's premier wine-growing region but also 80% of India's wine is produced here. Spread over a total of over 3000 acres, Sula's owned and contracted vineyards are home to some of India's finest grapes and the site of the latest in viticulture innovation and technology. Farmers are partners in there journey to produce excellent wines and they work hand-in-hand to secure supply, provide on-ground training and support, and share the latest in sustainable winegrowing practices.

A full flavoured Shiraz, which is deep inky purple in colour and has pronounced aromas of sun-ripened red cherries, sweet spice and a hint of pepper. Rich dark fruits follow through on the full bodied palate, with a touch of eucalyptus and a rich finish.

Our more premium wines are also available by 125ml glass size. These are poured using the Coravin wine preservation system, without pulling the cork, thus ensuring that the wine inside the bottle is kept in good

These crisp, easy sipping and moreish whites make for the perfect aperitif wines. However, they also make for perfect partners with lighter flavoured dishes, seafood and salads.

The Estate Riesling comes mainly from vineyards around Kues, on the left bank of the Mosel. Flinty on the nose, although with darting hints of opulence. The palate is, by contrast, more expansively fruited, with plump white stone-fruit kept in check by a wet-stone mineral bite. This finishes very clean, in Sofia’s words, “cleansing the palate”.

Saint Clair Family Estate is owned by Neal and Judy Ibbotson, viticulture pioneers in Marlborough since 1978. Grapes were originally supplied to local wine companies; however a desire to extend the quality achieved in the vineyard through to the finished wine led to the establishment of Saint Clair Family Estate in 1994.

The Saint Clair name originates from the vineyard property, first settled by the Sinclair family. Pioneer James Sinclair built one of the first homes in Blenheim and was closely associated with the early development of the town. Over time the name of the property reverted to the original Saint Clair.

The company’s mission is to create world-class wines that exceed their customers’ every expectation. Neal Ibbotson combines his extensive viticultural expertise plus Marlborough’s mix of climate and soils with the talent of one of New Zealand’s leading winemaking teams. Stephanie Jacobs Winemaker at Cakebread Cellars Stephanie Jacobs was appointed Cakebread Cellars’ Winemaker in 2017, becoming only the fourth winemaker in the winery’s 40+ year history. Stephanie leads all winemaking operations at Cakebread Cellars, creating consistent, balanced, age-worthy wines that pair nicely with good food and good friends. Stephanie joined Cakebread Cellars in 2004 as the Enologist and was promoted to Assistant Winemaker in 2008. In 2012, she was promoted to the Pinot Noir Project Leader, which coincidentally, is her favorite varietal of Cakebread Cellars wines. Stephanie first became interested in wine while participating in an exchange program in France. She decided to turn this passion into a profession while studying at the University of California at Davis. While she first enrolled in the school’s Fermentation Science program to pursue a career in brewing, she realized in her required winemaking classes that this is the path she wanted to pursue. Upon graduation, Stephanie began her winemaking career working at a small winery in the Sierra Foothills, learning about cellar operations and lab analysis. In 2001, she went to work for Bogle Vineyards as their Enologist. Stephanie is active in the Napa Valley Wine Technical Group, and in her spare time, can be found cooking or in her vegetable garden with her daughter, Mae.
