Nothing says “summertime” like firing up the grill and gathering friends and family to enjoy dining alfresco. The secret to effortless summer entertaining is to use tried and trusted ingredients that complement the flavors of your favorite seasonal foods. Try these tips to prepare tasty meals outdoors for the whole family.

Prepare Always clean the grill with a wire brush and heat it for at least 20 minutes before cooking. Keep food in the refrigerator until the grill is ready. Marinate fish and meat before cooking to add flavor and zing. Try a zesty cocktail sauce to complement succulent seafood like fresh shrimp, crab and lobster. It can also be used to lend a lively accent to salad dressings and pasta dishes.

Cook Use a meat thermometer. The U.S. Department of Agriculture advises cooking red meat to a minimum internal temperature of 145° F. Ground meats should be cooked to 160° F and poultry to 165° F. Always place cooked food on a clean plate so it doesn’t come in contact with uncooked meat juices. Wrap leftovers and refrigerate within two hours of cooking.

Remember, the grill isn’t just for meat. Experiment

with vegetables to add a delicious and colorful punch to the plate. Slice zucchini, eggplant, squash, onions and peppers, then coat with a tablespoon of olive oil and seasonings before cooking. Skewer vegetables with meat to make kebabs or add them to salads and side dishes. Fruits make great grill mates, too. The caramelized flavors of grilled apples, peaches, pineapple and bananas are delicious served with fresh cream or a scoop of gelato.

Chutney is fruity and full bodied, combining choice herbs, spices and luscious tropical fruits and vegetables. The summer months provide ample opportunity for fun-seeking families to scope out some exciting new adventures. Whether your crew loves a taste of nature or if they’re hooked on cultural exploration, it’s easy to create a special “daycation.”

Optimize family-fun time by making sure you have everything you need before heading out the door — sunscreen, umbrellas and bug-spray will ensure you will fully enjoy your day. When it comes to being nutritionally prepared, registered dietitian and author Patricia Bannan suggests these tips to keep your family properly fueled throughout the day.

Munch in the morning. If your day of adventure starts early, have easy breakfast options on hand. To keep your metabolism revved and hunger at bay, it’s best to eat something small with protein and fiber within two hours of waking up. Greek yogurt with fruit or a slice of whole-grain toast with nut butter are easy options that provide a kick-start to your morning.

Pack healthy snacks. Avoid costly and unhealthy food temptations at concession stands and rest-stops by bringing along snacks, such as all-natural granola or nutrition bars. They are a great on-the-go snack option.

Museums. Give the kids an adventure into the past — history, outer space or the fine arts with a visit to one of many regional museums. Many museums offer special rates and programs for children to get involved. You may even find you have the makings of a mini Picasso or historian in your family.

n The summer sun is shining; don’t forget your sunscreen. Skin cancer is the most common type of cancer in the United States, according to the U.S. Department of Health and Human Services. More than 61,000 people were diagnosed with melanomas of the skin in 2009 (the last year statistics were available), and more than 9,100 Americans died from melanomas. According to the HHS, try to stay out of the sun between 10 a.m. and 4 p.m. Use sunscreen with SPF of 15 or higher and apply 30 minutes before going outside. If possible, cover up with long sleeves and a hat and check your skin once a month for changes.

n As the temperature rises, make sure Fido stays cool with plenty of shade and water. According to the ASPCA, no statistics are available about how many dogs die each year of heat-related illnesses, but the organization estimates the number at several hundred each summer. The ASPCA advises taking walks in the early mornings or evenings when the heat is less intense. Never leave your dog in the car, where the temperature can rise to more than 100 degrees in just a few minutes.

n Summertime means backyard barbecues and picnics in the park. Keep the good times rolling by avoiding food poisoning.

Each year 48 million people get sick from something they eat and 3,000 die, according to the Department of Health and Human Services. Food left out longer than two hours is unsafe to eat.

n Alcohol is the No. 1 youth drug problem and kills six times more people younger than 21 than all other illicit drugs combined, according to the Center for Substance Abuse Prevention. July is the month that most first-time underage drinking occurrences happen. Parents should be aware and take the opportunity to talk with their children about the dangers of drinking. Statistics show that 75 percent of kids who drink get alcohol from their own homes.

n Your chances of getting in an auto accident are higher in the summer than any other time of year, according to the U.S. Department of Transportation. Most at risk? People between ages 15 and 20. To keep your young driver from becoming a statistic, set ground rules for when they can drive. Minimize the number of friends allowed in the car. No night driving until experienced.

Travel EssentialsAlways travel with the essentials, such as your passport, driver’s license, itinerary, maps, membership cards, insurance information and travel confirmations.

A guidebook or two is also helpful. Purchase a pocket-sized edition with a good map to take on your trip. Look less like a tourist by flagging important pages in advance.

Everyone needs one good suitcase, but also bring along a backpack or crossbody bag for daytime touring and collapsible tote bag for souvenir shopping.
