INGREDIENTS4 to 4-1/2 cups bread flour or all-purpose flour2 teaspoons grated orange zest2 teaspoons grated lemon zest1/2 teaspoon ground cardamom, optional1 package rapid-rise yeast 3/4 cup milk1/2 cup water1/3 cup granulated sugar1/4 cup (1/2 stick) butter1/2 teaspoon salt7 oz. bag Sun-Maid Fruit Bits1/2 cup unsalted almonds, rough chopped1 package (7 oz.) marzipan, cut into small chunks2 tablespoons butter, meltedPowdered sugar

DIRECTIONS

1. BLEND 2 cups flour, cardamom, yeast and zests in a separate bowl.

2. HEAT milk, water, sugar, butter and salt to 120-130°F. Pour into a large mixing bowl or an electric mixer bowl.

3. ADD beaten egg, mix to blend.

4. ADD flour mixture to milk and egg mixture.

5. MIX with wooden spoon, or dough hook until well blended. Add bag of Fruit Bits and almonds. Gradually add enough additional flour to make a soft dough, about 4 cups flour total.

6. TURN dough out onto a floured surface. Knead with hands until smooth and no longer sticky. Place in a lightly floured bowl. Cover and let rise in a draft-free place until doubled, 45-60 minutes.

7. PUNCH dough down and knead in half the marzipan. Divide dough into two. Place on a lightly floured surface and pat each piece into a 10 x 8-inch oval. Scatter remaining marzipan lengthwise on center of dough. Fold long edge over to 1-inch from opposite edge. Place on a parchment-lined baking sheet, using one baking sheet per loaf. Cover with a towel and let rise until double, 30-45 minutes.

8. HEAT oven to 350°F. Place pans on separate racks if needed, switching pans half-way through bake time. Bake 30-35 minutes until golden brown and loaf sounds hollow when tapped.

9. BRUSH hot loaves with melted butter. Dust generously with powdered sugar. Cool completely.

INGREDIENTS8 oz. dry orzo (about 1-1/4 cups) pasta cooked and cooled1 cup cherry tomatoes, halved1 cup thinly sliced cucumber1/2 cup Sun-Maid Natural California Raisins1/2 cup pitted Kalamata olives, quartered1/4 cup thinly sliced red onion4 oz. feta cheese, crumbled or diced1/4 cup toasted pine nuts3 tablespoons chopped fresh mint1 lemon

1/4 cup olive oil2 tablespoons red wine vinegar1/4 teaspoon each salt and pepperBaby spinach leaves

DIRECTIONS

1. COMBINE pasta and next 8 ingredients (tomatoes through mint) in a large bowl.

2. GRATE zest of lemon over ingredients in bowl. Squeeze lemon juice to measure 2 tablespoons.

3. WHISK together lemon juice, olive oil, vinegar, salt and pepper in a small bowl. Pour over salad and stir gently to

combine. Let stand for 30 minutes for flavors to blend.

4. SERVE over spinach leaves for a vegetarian entree, or top with grilled chicken or sausage.

NOTE: Leftover salad keeps well refrigerated for up to 2 days.

Savory Apricot Chicken KabobsMAKES 8 KABOBS (4 SERVINGS)

INGREDIENTS4 boned and skinned chicken breast halves1 6 oz. bag Sun-Maid California or Mediterranean Apricots*1 large red or green bell pepper1/2 medium red onion1/4 teaspoon salt

MARINADE1 cup white wine (use a fruity wine such as Riesling)

1/4 cup lemon juice3 tablespoons olive oil2 tablespoons white wine vinegar2 cloves minced garlic1-1/2 teaspoons thyme leaves

1-1/2 teaspoons rosemary leaves

1/2 teaspoon grated lemon peel

DIRECTIONS

1. COMBINE marinade ingredients; divide in half and place in 2 medium bowls (or 2 large plastic zip-top bags).

2. CUT each chicken breast lengthwise into 4 strips to make a total of 16 strips.

3. PLACE chicken in one bowl of marinade and apricots in the other.

4. COVER and refrigerate for 24 hours, turning occasionally.

5. DRAIN chicken and apricots; discard marinade. Sprinkle salt on chicken.

6. CUT bell pepper and onion into 1-inch squares.

7. THREAD each skewer in the following order: 1 pepper, 1 onion, 1 chicken strip, loosely wrapped ”s” fashion around 2 apricot halves; repeat; finish with 1 pepper and 1 onion.

8. GRILL OR BROIL 5 inches from heat for 8 minutes or until chicken is cooked through, turning every 2 to 3 minutes.

*Or use one 7 oz. bag Sun-Maid Mixed Fruit. Cut pears in half and fold large apple pieces in half to skewer.

INGREDIENTS3/4 cup softened butter or margarine1 cup packed brown sugar1/2 cup sugar1/4 cup milk1 large egg1 teaspoon vanilla extract1 cup all-purpose flour1 teaspoon ground cinnamon1/2 teaspoon baking soda1/4 teaspoon salt

3 cups quick or old-fashioned oats1 cup Sun-Maid Natural California Raisins

1 cup coarsely chopped nuts (optional)

DIRECTIONS

1. HEAT oven to 350°F.

2. BEAT butter, brown sugar, granulated sugar, milk, egg and vanilla until light and fluffy.

3. COMBINE flour, cinnamon, baking soda and salt.

4. ADD to butter mixture and mix well.

5. STIR in oats, raisins and nuts, if using. Drop by tablespoonfuls onto greased cookie sheets.

6. BAKE 12 to 15 minutes. Remove from cookie sheets.

7. COOL on wire racks.
