ELIXER OF THE GODS In addition to its strong bond with the Mexican people, tequila also has a rich history. The origins of this drink can be traced back to the Aztecs, who had already been making pulque for thousands of years. Pulque is a fermented drink made of agave plants. Many Aztec myths describe how a bolt of lightning split open an agave plant and boiled its juices which then started seeping out of the plant and dubbed it: ‘the elixer of the gods’. The history of modern-day tequila can be traced back to the Spanish conquistadores who conquered Mexico. Nowadays, over 300 million agaves are harvested each year and used for the production of tequila. It is important to know that tequila is made from agave. Contrary to what it’s spiky appearance may suggest, agaves are not cacti. In fact, the plant is actually a member of the lily family. An agave plant can reach a height of up to 2.5 meters tall and can grow up to 3.5 meters in diameter. The production process of tequila starts with the planting of the agave seeds. After the planting, it takes another six to twelve years for the plant to grow to its desired size, after which it is harvested. What is the difference between tequila and mezcal? The main difference between these two drinks can be attributed to the type of agave which is used and the area from which the agave originates. Tequila is made with blue agave from Jalisco. Therefore, tequila is made with a specific type of agave from a specific area. Mezcal on the other hand, is made with the juices extracted from different types of agaves and is therefore not bound to a specific region. In addition, the way mezcal is actually made is different. To give mezcal its distinct taste, the agave is roasted in a pit, which gives the drink a slightly smoky flavor.
