What are Carbohydrates?
• Food nutrient
• Converted by the body into sugar (glucose)
• Unhealthy carbs are converted quickly by the body and spike sugar levels (high glycemic index) – a fast route to weight gain, diabetes and heart disease

White Kidney Bean and Carbohydrates
• Multiple studies have shown that white kidney bean contains a compound (alpha amylase) which prevents carbohydrates in the intestines from being digested
• How does it work?
– The enzyme amylase breaks carbohydrates down into glucose, which passes the intestinal wall and enters the bloodstream
– Alpha amylase blocks this enzyme
