Like most Italian families in that era, Mike and Mary Colacci enjoyed the traditional Sunday afternoon meal of homemade spaghetti, with a red sauce Mary made from scratch. Making the paste was a communal affair; family and friends gathered, bushels of tomatoes were blanched, peeled, and laid on screens to dry in the Colorado sun. Mike and Mary fed family, friends, and occasionally strangers roaming through town, and word of the spaghetti delicioso began to spread. More and more people began showing up for Sunday dinner at the Colacci’s until someone politely suggested that it was too expensive to keep feeding people for free and convinced Mary to start charging a small fee. And that is how The Blue Parrot Restaurant began. The original menu consisted of pepper sandwiches, chili, hamburgers, and sandwiches. On Sundays, of course, spaghetti was served. In the following years, Mike continued to work in the coal mines to supplement the family income until the restaurant could support them. The couple had two sons, Joe and Anthony. In time, Joe and his family ran The Blue Parrot, while Anthony and his family went down the street in 1955 and opened Colacci’s. Now, the third, fourth, and fifth generations of the Colacci family can be found working here. Founded in 1919, The Blue Parrot is Colorado’s oldest Italian restaurant.
